제안 방법
CCD에 의해 독립 변수들을 5단계(−1.682, −1, 0, 1, 1.682)로 부호화(Table 1)하여 실험설계를 하였고 설정된 17개의 실험조건에 맞춰 실험을 수행하였다(Table 2).

C와 LC의 HMF함량을 측정한 결과, C에서는 HMF가 검출되지 않았고(data not shown) LC의 HMF 함량은 323.5±9.5 ppb였기 때문에 HMF 함량을 분유모델시스템에서 생성된 MRPs 함량의 지표로 적합하다고 판단하였다(Fig. 3).
L-Carnitine와 pyridoxine hydro-chloride의 농도가 높을 때 DL-α-tocopheryl acetate의 농도는 HMF함량에 크게 영향을 미치지 않았지만 L-carnitine의 농도가낮을 때는 DL-α-tocopheryl acetate의 농도가 감소할수록 HMF 함량이 급격히 감소했다.

조제분유는 영유아들이 모유를 먹을 수 없는 경우 또는 영양 보충의 목적을 위해 우유를 바탕으로 영유아가 필요로 하는 각종 영양소를 첨가하여 만든 식품으로 미생물학적 안전성과 제품의 보존성을 높이기 위해 살균, 농축 및 분무건조와 같은 열처리 제조공정을 거쳐 생산된다(1). 초고온 단시간 가열법(UHT, Ultrahigh temperature sterilization, 130-135oC, 2-3초) 또는 멸균(110oC이상, 10-30분)처리를 하면 유통기한이 수개월로 연장될 수 있지만(2) 이러한 고온의 열처리와 분무건조, 긴 저장기간은 조제분 유의 조성 간 화학적 반응을 야기 시킬 수 있다(3).
