Higher storage temperatures and ethylene concentrations softened the kiwi fruit quickly and led to the rapid loss of acidity while soluble solid contents of fruit increased to a significant extent during the same storage period. Similarly, the firmness of ethylene-treated fruits stored at 20 and $15^{\circ}C$ dramatically decreased in the experiment while treated fruits stored at $10^{\circ}C$ decreased only slightly. Quality characteristics of kiwi fruits stored at 15 and $20^{\circ}C$ were better than those of fruits at $10^{\circ}C$. With regards to the effect of temperature, fruits stored at lower temperatures took a longer time to ripen and retained their quality longer. The newly developed ethylene generator maintained the ethylene concentration in the 5 kg box at $40-400{\mu}L{\cdot}L^{-1}$. The ethylene generator could also be used to soften persimmons.

박스 내 에틸렌 함량을 측정하기 위해 박스 상단 부에서 1 mL 가스를 취하여 분석하였다. 에틸렌 분석은 alumina 컬럼과 FID가 장착된 GC (GC, Hewlett-packard 5890. USA)를 이용하여, injection 110℃, oven 70℃로 조정하였으며, detector는 250℃로 설정하여 측정하였다. 이때 flow rate는 30 mL·min-1로 설정하였다.
에틸렌처리는 각 저장온도에 30 L 플라스틱 통에 과실을 넣고 과실의 품온이 각 저장온도와 일치할 때까지 저하한 것을 확인 후 5% 에틸렌을 주사기로 주입하여 10, 50, 100 μL·L-1 농도를 맞추었다.

성능/효과
그린키위 후숙을 위해 필요한 숯을 이용한 에틸렌 발생제를 시중에 유통되는 키위박스에 처리하여 내부 에틸렌을 분석한 결과 24시간 후 400 μL·L-1정도의 높은 에틸렌 농도를 나타냈으며 이후 최소 50 μL·L-1이상으로 높게 유지되었고(Fig. 6), 키위 후숙이 양호하게 나타났다.

무처리 과실의 후숙은 저장온도에 관계 없이 시험기간 동안 비슷한 경도를 유지하면서 후숙이 되지 않았다. 반면, 에틸렌 처리구는 경도가 빠르게 감소하였으며 특히, 온도가 높을 수록 경도 저하 속도가 빨랐다(Fig. 2). 또한, 에틸렌 농도가 높을수록 경도 저하 즉 키위과실의 후숙을 더욱 빠르게 진행시켰다.
수확 후 품질이 우수한 키위를 제조하기 위해서는 품질을 감안하여 에틸렌의 농도가 50 μL·L-1이상이 유지되도록 포장한 후 낮은 저온 보다는 비교적 높은 15℃ 이상의 온도에서 처리하는 것이 신맛 제거와 후숙 과일 제조에 효과적이었다.
에틸렌 처리에 의한 식미도를 조사한 결과 온도가 높고 에틸렌 농도가 높을수록 식미가 양호하였다(Table 1). 수확 후 품질이 우수한 키위를 제조하기 위해서는 품질을 감안하여 에틸렌의 농도가 50 μL·L-1이상이 유지되도록 포장한 후 낮은 저온 보다는 비교적 높은 15℃ 이상의 온도에서 처리하는 것이 신맛 제거와 후숙 과일 제조에 효과적이었다.
이러한 결과는 상기에서 적당한 후숙을 위해 50 μL·L-1이상의 에틸렌으로 24시간 처리가 필요하다는 결과(Table 1, Fig. 5)와 일치함으로써 숯을 이용한 에틸렌 발생제가 실용적으로 유용하다는 결과를 제시하였다.
