팜 기름원유의 성분은 어떠한가? 팜기름류는 세계 무역에서 중요한 위치를 차지하는데, 2015년 기준으로 세계 총 유지생산량 2억269만 톤의 약 31%를 차지하고, 그 뒤를 콩기름, 유채기름, 해바라기씨기름 등이 따르고 있다(3) (그림 2). 팜 기름원유(팜기름조유, crude palm oil, CPO)는 카로티노이드함량(500-700 ppm)이 높으며 바이타민E(600-1,000 ppm), 코엔자임 Q10(유비퀴논) (18-25 ppm), 스테롤(325-365 ppm)이 함유되어 있다(4). 팜기름의 약 90%는 식용 및 식품산업에 이용되며, 나머지 10%는 비누 및 유화학제품(oleochemical) 생산에 사용된다.
팜기름 추출에는 어떤 방법들이 있는가? 기름팜나무 열매의 중과피가 완전히 숙성되면 약 56-70%의 유지를 함유하는데, 유지는 몇 가지 방법으로 추출 할 수 있다(6,7). 추출방법은 처리량과 추출기계의 복잡성에 따라, 전통적인 방법, 소규모 기계장치,중간 규모 밀(mill) 및 대형 산업용 밀과 같이 네 가지로 나눌 수 있다. 팜기름 추출의 기본 단위공정은 열매멸균, 열매수거/스트리핑(stripping), 소화, 추출 및 정화공정 등이다(그림 3).
