본 연구는 정상대조군(N-control), 당뇨대조군(STZ-control) 및 삼채를 처리한 당뇨군(STZ-AH 5%와 STZ-AH 10%)의 신장, 폐 및 뇌에서 항산화 효소활성도에 미치는 영향을 살펴보았다. SOD 활성도는 모든 조직에서 N-control과 STZ-control에서 유의적인 차이는 없었으나, 폐와 뇌의 경우 STZ-control에 비해 STZ-AH 10%에서 유의적으로 낮아졌다. CAT 활성도는 신장과 뇌에서 N-control과 STZ-control에서 유의적인 차이를 보였으며, STZ-control과 비교하여 신장에서 STZ-AH 10%에서 유의적으로 높은 활성도를 보였다. GPx 활성도는 STZ-control에 비해 신장과 뇌에서 STZ-AH 5%에서 유의적인 차이를 보였다. GR 활성도는 신장과 뇌에서 N-control과 STZ-control에서 유의적인 차이를 보였으며, STZ-control에 비해 신장에서는 STZ-AH 5%에서, 폐에서는 STZ-AH 10%에서 유의적인 차이를 보였다. GST 활성도는 폐에서 N-control과 STZ-control은 유의적인 차이를 보였고, 신장에서 STZ-control보다 STZ-AH 5%에서 유의적으로 낮은 활성도를 보였으나 폐에서는 STZ-control보다 STZ-10%에서 유의적으로 높은 활성도를 보였다. XOD 활성도는 신장과 뇌에서 N-control에 비해 STZ-control에서 증가하였으나 유의적인 차이를 보이지 않았으나, 신장과 뇌에서 STZ-control보다 STZ-AH 10%에서 유의적으로 낮은 활성도를 보였다. 이상의 연구결과, 삼채뿌리는 당뇨의 병리적 상태일 때 SOD와 GST 활성도를 변화시켜 과생성된 ROS의 무독화를 촉진시키는 것으로 사료된다. 또한 XOD의 활성도를 억제함으로써 당뇨에서 나타나는 ROS의 생성을 감소시킴으로써 산화적 손상을 예방하는 것으로 사료된다. 당뇨쥐에서 삼채 뿌리 섭취에 의한 항산화효소의 활성도 변화는 장기의 종류나 효소의 종류에 따라서 차이가 있음을 알 수 있는데, 항산화효소 활성도 변화가 신장에서 가장 크게 나타났다.
