아스파라거스 부위별 활용방안 개선을 위한 연구자료를 제시하게된 배경은 무엇인가? | 뿌리를 포함한 아스파라거스의 모든 부분에서 생리활성 화학물질(Chitrakar 등, 2019)이 풍부하며, 미국과 중국 등에서는 뿌리로 차 또는 약제로 활용(Thomson Healthcare, 2007)되고 있으며, 씨앗과 뿌리 추출물은 알코올 음료나 식이보충제로 이용(Natural medicines, 2019)되고 있다. 그러나 국내에서는 순을 제외하고는 다른 부위에 대한 활용 및 성분에 관한 연구조차도 미비한 실정이다. 따라서 본 연구에서는 아스파라거스의 총 폴리페놀 함량, 루틴, 아스파라긴, 비타민 C, 글루타티온의 함량을 부위별로 비교하였고, DPPH ABTS radical 소거능, 항염, α-amylase 저해활성을 분석하여 아스파라거스 부위별 활용방안 개선을 위한 기초자료를 제시하고자 하였다. |
