$\circ$ 대표식품 (food list)의 선정
2007년 보건복지부에 의해 실시된 국가차원의 조사인 "2007년 국민건강 영양조사" 중 영양조사부문의 24시간 회상법에 의해 조사된 '식품섭취량' 자료를 기초로 하여 대표식품을 선정하였다. 이 때 다소비 다빈도 식품, 에너지 공급식품, 연령 지역 계절, 중금속 섭취 등을 고려하여 대한민국 대표식품 114종을 선정하였다.
$\circ$ 중금속 오염도 분석
2009년 봄, 여름, 가을, 겨울에 대표식품을 각각 114종씩을 구입하였으며 다시 대표조리법에 따라 추가로 분류하여 계절별 샘플 각각 143종에 대한 중금속 함량을 분석하였다. 이때 종당 계절별로 회사 및 원산지가 다른 식품 3가지씩을 구매하여 총 1300 샘플의 비소 (As), 납 (Pb), 수은 (Hg), 카드뮴 (Cd), 알루미늄 (A1), 크롬 (Cr) 농도를 측정하였다.
$\circ$ 중금속 섭취량 및 위해도 평가
대표식품을 통한 중금속 섭취량 산출을 위해 식품별 중량변화율을 고려한 다음, 계절별로 선정된 대표 식품의 성별, 연령층별, 지역별 섭취량을 조사한 후 중금속 노출량 평가 및 그에 따른 위해도를 분석하였다. 식품을 통한 중금속 섭취량 산출 후 JECFA(Joint FAO/WHO Expert Committee on Food Additive)의 PTWI(Provisional Tolerable Weekly Intake) 값과 비교하여 중금속에 대한 위해도를 평가하였다. 중금속의 사 계절 평균 1일 섭취량은 비소 0.0975, 카드뮴 0.0098, 남 0.0065, 수은 0.0022, 알루미늄 3.4948 mg/person/day 이었으며 크롬은 0.0899 mg/person/day으로 나타났다. PTWI와 비교한 상대 위해도는 비소 3.60%, 카드뮴 18.10%, 납 3.36%, 수은 5.69%, 알루미늄 45.18%로써 JECFA 권고기준이하로 나타났다.

Many countries over the world are monitoring hazard of heavy metal In food. In Korea, Korea Food & Drug Association has continued to study the effects of heavy metal on public health by evaluating intake and hazard of polluted materials contained in representative ordinary food of Korea every year since 2000. In the national level. it is necessary to know how much the people are exposed to heavy metal through food intake and to evaluate intake and harmfulness in our ordinary food. Thus, the study here re-selected a food list based on "2007 National Health and Nutrition Survey (NHNS)" data and then evaluated exposure and risk of heavy metals in food by analyzing heavy metal content in representative food by season based on the above data.

A food list was selected based on the data of 'nutrition data' surveyed by 24-hour recall method among NHNS, which are national surveys conducted by the Ministry of Health and Welfare in 2007. Here 114 types of representative food were selected under consideration of highly consumed and frequently taken food, energy supply food, age, region, season, etc.
$\circ$ Analysis of Heavy Metal Content from the Selected food list
In spring, summer and fall of 2009, the 114 types of representative food were purchased and then classified by recipe. Then, 143 types of food samples each for spring, summer and fall were analyzed for their heavy metal content. The foods were purchased from three different manufacturers and raw material foods were purchased from three different origins. The heavy metal analysis items were six, including As, Pb, Hg, Cd, Al and Cr.
$\circ$ Analysis of Heavy Metal Intake and Evaluation of risk from its Intake
The study considered weight-changing rate and researched intake of spring, summer and fall food by region, sex and age to analyze heavy metal exposure and its risk. After estimation of Probable Daily Intake, the hazard of heavy metals was evaluated through comparison with Provisional Tolerable Weekly Intake (PTWI) by Joint FAO/WHO Expert Committee on Food Additive(JECFA) in documents. In terms of daily intake of heavy metal, As was 0.0975, Cd 0.0098, Pb 0.0065, Hg 0.00:22 and Al 3.4948 mg/person/day, while in daily intake of inorganic matter, Cr was taken in as 0.0899 mg/person/day. Relative hazard compared to PTWI was below recommended standard of JECFA as As 3.60%, Cd 18.10%, Pb 3.36%, Hg 5.69% and Al 45.18%. Thus, the amount of heavy metal intake through consumption of Korean foods was found to be lower than PTWI value.
