◎ 고추의 수확 후 생리장해 방지 및 저장기술유통개발에 관한 연구

(2)의 경우 고추의 카로티노이드 성분이 환경적인 스트레스에 대해 항산화제로 작용함으로써 색소 분해가 일어난다. 태양건조 전 후숙을 통해 색소성분 함량을 증대시키고 수분함량을 10%정도 감소시킨 후 건조를 하면 희나리 발생을 억제시킬 수 있다.
◎ 마늘의 수확 후 생리장해 방지 및 저장기술유통개발에 관한 연구

◎ 국내산 버섯류의 품종별 수확 후 고품질 유지를 위한 저장유통기술 확립
○ 연구결과
표고버섯의 수확 후 품질유지를 위해서는 품온을 최대한 낮추어 0℃의 저온에 저장하고 산소투과율이 높은 EVA film을 이용하여 MA저장하는 것이 가장 적합하였다. 양송이버섯의 경우, 현재 유통되는 형태인 대조구에서는 수분증발로 인해 외관이 심하게 외축되었고 곰팡이 발생으로 인해 상품성이 떨어졌으나, MA 포장구의 경우, 평균적으로 20℃에서는 3일 동안, 0℃에서는 약 14일동안 그 상품성을 유지한 것으로 조사되었다.
포장재별로는 표고와 마찬가지로 각 저장 온도에서 EVA가 가장 우수했다. 느타리버섯에서는 현재 유통되는 형태인 대조구에서는 골판지 박스를 사용하여 통기성이 좋아, off-flavor (이취)가 발생하지 않았으나 수분이 증발되면서 버섯의 형태가 심하게 위축되었고, 곰팡이의 발생이 심하여 상품성이 떨어진 반면, MA 포장구에서는 20℃에서는 2일 0℃에서는 약 10일의 저장수명을 보였다. 또한, 저장 중 발생하는 이취를 최소화하고 고품질 유지를 위한 저장 방법을 확립하기 위한 실험을 실시한 결과 약쑥 (Astemisia princeps), 인진쑥 (Astemisia capillaris) 처리구는 그 자체의 강한 향으로 저장 중 발생하는 이취를 masking하는 것으로 조사되었다.
특히 느타리버섯의 경우, 미생물생장 억제에도 유의적으로 큰 효과를 나타내었다. 품질 특성조사에서는 처리구에 의한 영향보다는 온도에 의한 영향을 더 받는 것으로 조사되었다. 국내산 버섯류의 MA 저장 시 포장재에 따른 수확 시기별 저장 수명을 조사한 결과, 여름에 비해 가을에 수확한 버섯의 저장력이 우수하였으며, 필름 처리구중에서는 PE, EVA 처리구의 저장력이 다소 우수하였다.
품목별 MA 포장 기술 확립 및 실용화를 위하여 1차▪2차년도 연구에 의해 가장 좋은 결과를 보인 EVA film, 약쑥, 인진쑥을 이용하여 버섯에 대한 저장실험을 실시한 결과 현재 시중에 유통중인 골판지 box에 비해 그 저장수명이 2∼3배 정도 증진되는 결과를 보였다. 품목별 예냉 기술확립을 위해 버섯을 품목별로 예냉 후 실험을 실시한 결과 종래의 저장방법보다 예냉 후 PE film(약 10 ㎛) 저장시 우수한 저장력을 나타내었다. 또한, 최적 CA 저장 조건 확립을 위하여 CO2농도를 달리하여 CA 저장실험을 실시한 결과, 표고, 양송이 및 느타리버섯을 CO2 10%∼20%, O22% 조건하에서 저장한 처리구에서 가장 좋은 품질보존 효과를 보여주었다.
◎ 후지’ 사과의 CA 장해 원인 구명 및 저장 유통기술 개발
○ 연구결과
1. ‘후지’ 사과 주산단지를 대상으로 조사한 저장고 운영실태 및 내부갈변 장해 발생 요인 조사 국내 ‘후지’ 사과는 수확시기가 지연되고 수확후-저장전 관리과정에서 동결온도까지의 기온이 떨어지는 기상조건에 조우될 경우 저장장해가 발생될 소지가 큰 것으로 추정되었다.
2. CA 저장장해 예측기술 및 장해 방지기술
본 과제를 통해 조사한 인위적 유기처리에 의한 장해발생률 및 수확 시 밀증상 지수는 실제 CA 장해 발생률과 밀접한 연관성을 보여주었고 모든 경우에 적용할 수 있는 ‘후지’ 사과의 적정 CA 환경은 이산화탄소 0.1% 수준으로 밝혀졌다. 그러나 실제 CA 저장기술 적용시 0% 수준의 이산화탄소 농도 조절이 어려울 경우, 예측기술을 이용하여 지역과 수확연도에 따른 장해 감수성을 진단하고 과실품질 변화를 예측하여 delay-CA 프로그램을 적용할 수 있다.
3. CA 저장 대체 기술
저온저장고 내 에틸렌 농도 저하에 따른 ‘후지’ 사과의 품질유지 효과를 볼 때, 적정 수확시기와 충분한 에틸렌 분해 용량 조건이 충족된다면 에틸렌 분해기기 기술 적용 효과가 기대된다. 다만 과실의 수확시기 및 저장기간에 따라 에틸렌 분해용량 요구도가 달라지므로 본 과제에서 제시한 에틸렌 발생 및 축적 자료를 기초로 에틸렌 분해기기 개발을 담당하는 제조업체에 기술이 이전되어야 한다.
4. 유통 상품화 기술
다른 원예생산물의 수확후 관리 프로그램에서 이미 제시된 저온유통의 효과가 ‘후지’ 사과에도 적용될 수 있음이 확인되었으므로 포장센터의 품질관리 프로그램에 활용한다. 그러나 포장센터에서의 세척 및 포장 처리의 경우, 품질유지 및 안전성에 대한 신뢰도를 고려할 때 다소 미흡한 것으로 조사되었으므로 이에 대한 보완 연구가 지속되어야 할 것으로 생각된다.
◎ 단감의 저장 장해 방지 기술 개발
○ 연구결과
1. 과육의 연화
단감 과실의 과육 연화 현상은 에틸렌에 의한 각종 세포벽 분해 효소의 활성화와 밀접한 관련이 있었으며, 에틸렌의 작용 억제는 과육 연화 지연에 효과적이다.
2. 과육의 갈변과 흑변
과육의 갈변은 적정 농도 범위를 벗어난 저산소 및 고이산화탄소 농도 조건에서 발생이 심하게 나타나며 과피 흑변 현상은 과피 조직의 페놀 화합물의 산화와 관련이 있을 것으로 추측되는데 과육의 갈변 현상과는 달리 저장 중 산소 농도가 높고 이산화탄소 농도가 낮은 조건에서 심하게 발생한다.
3. 저장 장해 발생의 예측
정상 과실의 경우 조직내 에탄올 및 아세트알데하이드 농도는 각각 200ppm 및 10ppm 이하이며 이를 초과할 경우 향후 저장 장해의 발생을 예측할 수 있다.
4. 단감의 호흡 특성
다양한 산소와 이산화탄소 농도 조건에서의 과실의 호흡량은 enzyme kinetics에 적용되는 비경쟁적 저해의 Michaelis-Menten 방정식에 의해 표현될 수 있다.
5. 저장 전처리
단감의 최적 예냉 처리 조건은 0C에서 20일 내외이다.
6. MA 저장 방법의 개선
포장 내의 산소 및 이산화탄소 농도는 과실의 호흡량, 과실의 중량, 포장 film의 재질 및 두께에 따른 가스 투과도, 포장 film의 표면적, 포장 초기의 포장 내 공기량(free volume), 포장의 밀봉 방법 등에 의해 결정되므로 단감 과실의 MA 포장 조건은 이 들 요인을 고려하여 설정하여야 한다.
7. 간이 CA 저장 방법
간이 CA 저장 방법에 의해 단감의 저장 중 저장 장해 및 병해의 발생을 감소시킬 수 있다.

Response mechanism and control scheme to physiological and pathological disorder in hot pepper after harvest.
Storage quality was surveyed in green hot pepper cultivated from different growth condition of field and greenhouse. There was no significant difference in $CO_{2}$ concentration, weight loss and color during storage at 8℃. However, capsaicinoids and vitamin C of green hot pepper grown in field were higher than in greenhouse. 'Nok-Kwang' green hot pepper (Capsicum annuum L.) fruits were sealed with 0.025 mm PE film or PVC wrap film and stored at 18℃ or 8℃. At both temperature, use of 0.025 mm PE film reduced weight loss below 1.0% and increased $CO_{2}$ concentration to 2.0∼5.0% which is beneficial to storage of green hot pepper. However, green hot pepper stored at 18℃ completely lost a marketability due to severe weight loss and decay incidence after 10days. In order to control decay and seed browning of green hot pepper, in this work methyl jasmonic acid (MeJA) was treated. The occurrence of decay and seed browning at 8℃ was more effectively reduced by low concentration of 50 and 100 μL·12 $L^{-1}$ MeJA than high concentration of 300 and 600 μL·12 $L^{-1}$$L^{-1}$. Fruit quality during storage was maintained in low concentration of MeJA.
Red hot pepper (Capsicum annuum L. cv. Nok-Kwang) fruits packed in polyethylene (PE) film bags of 20 or 30 μm thickness were stored at low temperature of 2 or 4oC. The fruits in the PE film bag were placed in vertical position of their fruit stalks to the upper side. The fruit weights did not change during storage at any conditions examined. Red hot pepper fruits decayed at a rate of 40% after 35 and 45 days storage at 4 or 2oC, respectively. The decay incidence rates were almost the same in the PE film bags of different thickness. Setting fruit stalks to the upper direction was found to be effective to prevent the decay. Seed browning was retained below 20% during storage.
Discoloration in dried red hot peppers was classified into six different types based on the appearance of discolored parts and discoloration factor. Type A and D were commonly named 'Hinari'. In type A mainly caused by the infection of fungi, epidermis and hypodermis cells were destructed and did not show pigments. In type D by intense sun light and high humidity carotenoids acted as antioxidants that protect biological systems against the potentially harmful effects of processes or reactions that can cause excessive oxidation such as lipid peroxidation and then lost color. Color loss was largely reduced in pepper fruits with low levels of moisture. Carotenoid biosynthesis continued to produce more carotenoids, and moisture contents decreased about 10% during curing processes. Therefore it is advisable to have curing processes before sun drying.
Establishment of Postharvest Technology on Quality Maintenance in Garlic Crop during Storage and Distribution
1. Improving storage life of peeled-garlic with edible coating materials and films
Recently, there has been a surge of interest on part of both industry and consumer in conveniently packaged fresh produce. For the most part, this included peeled, trimmed, cored, or otherwise lightly processed fruits and vegetables. Prepeeled garlics are perishable products that need to be preserved from enzymatic browning and microbial growth prior to further processing.
Since these products are still metabolically active, minimal processing increases their perishability by causing cellular disruption, increased respiration, increased ethylene production, and synthesis of the secondary metabolites.
Use of edible coatings or various films to minimize undesirable changes due to minimal processing has been reported for several commodities. The objective of this work was to explore the benefit of a polysaccharide/protein based edible coating and various functional films for extending shelf life of peeled-garlics.
In this study, cellulose-based edible coating (CMC), as carrier of antioxidant, acidulants and preservatives prolonged the storage life of peeled garlics. CMC coating solutions are easily spread on the peeled-garlic surfaces.
Storage of coated garlic reduced weight loss and browning compared to non-coated produce. Potassium sorbate (0.15%) delayed browning and marketability more effectively when applied in CMC than any other coating formulations.
Packaging with PP and AF-OPP improved storage life for 10 days at 20℃, compared to 4 days with commercially used net-packaging, and did not give any negative effect on the physical and chemical qualities of peeled garlics.
But the anti-microbial ceramic films were not effective to reduce weight loss and discoloration resulted in significantly higher microbial activities.
2. Surveys on greening and its causal factors as related to storage During the preparation of commercial garlic condiments such as purees, juice, garlic powder, and oils, the formation of green pigment ('greening') in macerated garlic has often rendered the products unsaleable. Although the mechanism of greening has not yet been well elucidated, this phenomenon only occurred in mechanically bruised or finely cut tissues but not in carefully sliced garlics. The objective of this study was 1) to determine the ACSOs involved with greening and the postharvest factors influencing the development of green color in crushed garlic, 2) to purify and identify, and the structural elucidation of the unknown green color pigment extracted from crushed garlic cloves in order to see what class of compounds it belonged, and 3) to development postharvest technology for the inhibition of greening.
Green pigment formation (greening) after complete maceration of garlic (Allium sativum) cloves was investigated using five cultivars stored at 0, 10, and 20℃. Greening was only observed in garlic cloves stored at both 0 and 10℃. Garlics stored at 20℃ did not develop greening under all experimental conditions. Longer low-temperature storage increased the green color intensity, and less time required for green color development after homogenization.
Contents of S-alk(en)yl-L-cysteine sulfoxides (ACSOs) were quantified by high performance liquid chromatography, and three major flavor precursors, S-methyl-L-cysteine sulfoxide (MeCSO), S-2-propenyl (or allyl)-L-cysteine sulfoxide (2-PeCSO), and S-1-propenyl-L-cysteine sulfoxide (1-PeCSO), were detected. The flavor precursors gradually increased with storage time at all temperatures, whereas 1-PeCSO was detected only in garlic cloves which developed greening. The possible role of 1-PeCSO in inducing greening was confirmed with a high significance (r2=0.89) by the addition of synthetic 1-PeCSO into crushed garlic. At 100 mM, hydroxylamine, an alliinase inhibitor, completely inhibited greening. These results suggest that greening is induced by increased contents of ACSOs below 10℃, particularly 1-PeCSO on which alliinase acted when garlic cells were finely disrupted. The amino acid 1-PeCSO was necessary for the development of the green color.
Expected mechanism of greening as follows. The colorless ether soluble precursor reacted with certain amino acid (maybe glycine) in garlics to form a second compound insoluble in ether. The latter compound then reacted with formaldehyde of naturally occurring carbonyls to form the green pigment. The isolation and identification of green pigment were carried out by solvent extraction, chromatographic separation on column, HPLC, MS and NMR. The pigment was a new type of nitrogenous water-soluble pigment differing from previously investigated plant pigments.
Establishment of technology on quality maintenance in domestic mushrooms during storage and distribution
The purpose of this research was to establish technology of quality maintenance in domestic mushrooms during storage and distribution.
Mushrooms are very perishable produce which have 2∼3 days of storage life at room temperature. At the present time, mushrooms are packed with 2 kg unit of conventional cardboard box in which quality loss occurred remarkably at early of storage due to weight loss, shrinkage, browning, spore formation and so on. Therefore, various methods were attempted to keep quality of mushrooms at 0, 5, 10, 20℃ under modified atmosphere storage conditions.
To extend storage life of mushrooms, modified atmosphere packaging (MAP) was applied to Pleurotus ostreatus, lentinus edodes and Agaricus bisporus using different types of packaging materials such as polyethylene (PE), ceramic and EVA films. Storage life was extended about 1∼4, 1∼2, 3∼6 days at 0℃, 0.5∼2.5, 2∼4, 5∼6 days at 5℃, 0.5, 1∼2, 3∼6 days at 10℃ and 0.5, 0.5, 2∼3 days at 20℃ in Pleurotus ostreatus (oyster mushroom), Agaricus bisporus, and lentinus edodes (Shiitake mushrooms), respectively.
During storage, modified atmosphere packaging could prevent or retard the deterioration of the mushroom in the aspects of shape, discoloration, texture and flavor. Packaging materials showed different effectiveness of keeping quality with temperatures especially in oyster mushrooms. In general, modified atmosphere packaged Pleurotus ostreatus, lentinus edodes and Agaricus bisporus with EVA film made from polyethylene added 8% ethylene vinyl acetate showed the best condition of quality maintenance at various temperatures.
To minimize off-flavors occurrence during modified atmosphere packaging of mushrooms, various natural (Astemisia princeps, Astemisia capillaris, green tea, ginseng) and chemical compounds (KMnO4, SO2, 1% chitosan, 1% β
-cyclodextrin, active charcoal, sorbitol) were applied into packaged mushrooms.
In overall acceptability of sensory evaluation, mushrooms treated with natural compounds showed higher score than those treated with chemical compounds.
The PCA (principal component analysis) showed the difference of principal components between control and treatment groups at 5 and 10℃. Changes in respiratory rate showed significant difference within temperatures but not within treatments. Carbon dioxide contents in the PE film package were increased up to 10∼16% within 1 day storage and oxygen contents were sharply decreased from 20% to 1% within 1 day storage. Mushrooms treated with Astemisia princeps and Astemisia capillaris dough showed the effects on inhibiting microbial growth and masking the off-flavor. Green tea dough and active charcoal treatments were also observed to have a role in removing the off-flavor by absorbing ethanol and acetaldehyde in modified atmosphere packaged mushrooms. Mushrooms packaged with EVA film, and Astemisia princeps and Astemisia capillaris dough extended 2∼3 times of storage life with high quality maintenance at storage temperatures.
Mushrooms treated with precooling up to 0∼1℃ within 30 min after arriving in the laboratory from farm showed less changes in color, texture, weight loss and polyphenol oxidase activity than those in untreated samples.
In study of controlled atmosphere storage, the best conditions of keeping quality were 25% CO2 + 2% O2 in Pleurotus ostreatus, 10% CO2 + 2% O2 in lentinus edodes and 15% CO2 + 2% O2 in Agaricus bisporus at 0℃.
Prediction and Avoidance Program for CA-related Disorders in ‘Fuji’Apples and Development of Postharvest Handling Procedures
In Korea, controled atmosphere (CA) storage of ‘Fuji’ apples has been suspended because of severe incidence of CA-related internal browning disorders. Brown core and cavity symptoms are sometimes observed even in the refrigerated air storage. The study was conducted to elucidate causal factors as related to the incidence of the disorder, to develop a practical program forecasting the potential hazard from the incidence of the disorder, and to provide a secure CA procedure avoiding the disorder. At the same time, low-ethylene refrigerated air-storage and modified atmosphere (MA) storage were studied and requirements for practical application were provided as a possible alternative to CA storage. Finally, effects of post-storage packing house treatments and marketing temperature on the market quality and safety factors of ‘Fuji’ apples were examined considering consumers’ needs. The evaluation was focused on the effectiveness of washing treatment with ozonated water and cold-chain marketing system.
Surveys on ‘Fuji’ apple orchards and storage facilities suggested an idea that internal browning symptoms observed after air storage might be induced by exposure to near-freezing temperature at harvest and/or during pre-loading period and developed under improper storage environment, especially at the early period of storage. Simulation treatments of postharvest handling procedure at near-freezing temperature combined with semi-gas tightness of storage room resulted in high carbon dioxide accumulation and the incidence of internal browning. Early harvest before exposure to freezing temperature and carbon dioxide control through ventilation are highly recommended to avoid storage loss from the disorder.
Forecasting program for the CA-related disorder was developed through correlation analysis. Relationships were analyzed among watercore at harvest, short-term inductive incidence of internal browning (IB), and the incidence after controlled atmosphere (CA) storage of ‘Fuji’ apples. During two-year experiment, fruits of various maturity and watercore intensity were obtained by harvesting three times at six to seven day intervals from two orchards located in Andong and Yecheon areas. For the disorder induction, fruits were held at 20 ℃ in 20 kPa CO2 + 17 kPa O2 atmosphere for 3 to 12 days. CA storage was performed at 0℃ in 2.5 - 3.0 kPa CO2 + 2.5 - 3.0 kPa O2 for five months. Brown core and radial flesh breakdown were two major disordersafter inductive treatment or CA storage, which showed different incidence by harvest season. Observations from two storage seasons suggested an idea that inductive incidence of internal browning after 6-day high CO2 treatment seemed to be used as a reliable indicator to predict actual incidence of the disorder after CA storage. Inductive incidence, however, seemed not to be an absolute determinant but a relative indicator simply forecasting potential hazard of CA storage. Incidence of CA-related internal browning seemed to be closely associated with watercore severity at harvest in the first experimental year, while the relationship was not significant in the following year suggesting seasonal variation of the relationship between watercore and CA disorder. Influence of watercore on the incidence of the disorder seemed to vary also by orchard location. To develop a secure CA storage program, both the prediction test and estimation of watercore influence should be conducted on individual orchard basis.
CA storage over three years on ‘Fuji’ apples harvested at three harvest maturity from two orchards proved that the CA-related internal browning is caused by high carbon dioxide and ‘Fuji’ apple cultivar is very susceptible to the disorder. Maximum tolerance to carbon dioxide seemed to be 1.0% to avoid CA disorders. Zero level carbon dioxide may be required to escape from the potential hazard in apples harvested at commercial maturity or late.
Delay-CA seemed to be helpful to alleviate the incidence of CA disorders. CA effects on fruit quality, however, could be minimized or nullified as delay period extended, especially in late-harvested apples. Early-harvest seems to be a prerequisite condition for successful CA storage of ‘Fuji’ apples.
The experiments on low-ethylene refrigerated air storage were conducted on apples harvested at commercial maturity over two storage seasons: 2001-2002 and 2002-2003. In commercial-scale experiment, ethylene removal was achieved using a photo-catalytic ethylene converter. Complementary data of ethylene removal effects were obtained through modified atmosphere packaging treatments with or without an ethylene absorbent. Ethylene removal appeared to improve storability and shelf-life of ‘Fuji’ apples showing better maintenance of fruit firmness and titratable acidity although the effects might vary by harvest season and/or harvest maturity. Estimation of storage volume parameters and ethylene production rates during refrigerated storage suggests that ethylene concentration inside fully-loaded 576 m3 storage (12 m × 8 m× 6 m: L × W × H) may increase by 0.5 ppm/day at the early storage period and 0.7-1.0 ppm/day after four months of storage. Ethylene removal capacity required to offset the increase in ethylene concentration should be 14.1 mL․ h-1 for four month storage and 19.2 mL․h-1 for six month storage. MA storage in combination with ethylene removal provide high potential to maintain fruit quality. MA packaging, however, should not be completely sealed because chronic exposure to carbon dioxide over 4% regardless of oxygen concentration may induce internal browning disorder.
Studies of packaging house process, especially of washing treatment with ozonated water proposed that more accurately programmed procedure is required for satisfactory effects. Better market quality was obtained in CA-stored ‘Fuji’ apples plus simulated cold-chain system than in refrigerated air-stored apples plus marketing at ambient temperature.
Prevention of postharvest disorder in persimmon fruits
1. Flesh Sotening
The flesh softening of persimmon fruits is closely correlated with the activation of cell-wall degrading enzymes by ethylene action. The application of ethylene action inhibitor, 1-MCP, delayed effectively the flesh softening.
2. Flesh Browning
The dysfunction of cell membrane is thought to be the cause of flesh browning, an important postharvest disorder in persimmon fruit. When the fruits are stored at too low oxygen and/or too high carbon dioxide concentration, anaerobic metabolites accumulate in fruit tissue. As the cell membrane is damaged by these toxic metabolites, the vacuole-sequestered phenolic compounds are leaked and consequently oxidized in cytoplasm by PPO, resulting in the generation of browning pigments. Thus, flesh browning disorder appears particularly seriously in improperly modified atmosphere condition.
3. Prediction of disorder
The fundamental cause of flesh browing, the most important disorder in persimmon storage, is anaerobic respiration. The accumulation of ethanol and acetaldehyde, as anaerobic metabolites, is closely correlated with the development of browning disorder. Accordingly, the possibility of disorder development could be predictable by determining the ethanol and/or acetaldehyde concentration in fruit tissue. The critical concentration of ethanol and acetaldehyde, which induce disorder development, is 200ppm and 10ppm, respectively.
4. Respiration Rate
The respiration rate of fruits is increased by increasing oxygen concentration and reduced by increasing carbon dioxide concentration. This relationship is the same as enzyme kinetics, in which enzyme response velocity is affected by substrate and inhibitor concentration. Thus the respiration rate of fruits can be described by following equation, which is derived from Michaelis-Menten equation of uncompetitive inhibition.

5. Precooling
The MA packaging time and the temperature at which the fruit precooled before packaging are factors affecting on quality and disorder incident of poststorage fruits. But the time lag between fruit harvest and MA packaging is required inevitably because the large bulk of fruits cannot be practically packaged immediately after harvest in farm. The compromising time lag for delaying package was considered as about 20 days after harvest when the harvested fuits stored at 0℃.
6. Improvement of MA storage
In conventional MA storage, in which 5 fruits are packaged together in a 0.08mm LDPE film bag, the disorder incident rate is relatively high, reaching 40-50%. This high disorder incident is due to improper choose of packing film size and method. The film size and respiration rate of fruit are important factors determining gas composition in bag. Thus, to maintain optimal gas concentration in package during storage, the proper film sizes must be choosed in accordance with fruit size, which affects on respiration rate.
Besides, one-fruit packaging method is much advantageous in comparison with conventional 5-fruit packaging method. The optimal MA packaging condition for one-fruit packaging method is as following.
7. Simple CA storage
When the fruits are closed in a chamber, the CA condition is naturally formed in chamber by respiration of fruits. The gas concentration in chamber can be constantly maintained by introducing continuously air or mixed gas containing a certain amount of oxygen into the chamber, as the oxygen in chamber is consumed by fruits. When 100kg of fruits were closed in cold room with purging slowly with air, the gas concentration in room reached equilibrium state in 40 days. The oxygen and carbon dioxide concentrarion on storage room could be regulated by flow rate and oxygen concentration of purging gas.
Casual Factors of Fruit Skin Disorders during Cold Storage of Pear.
Causal factors related to the skin disorders such as black stain and peeling-off symptoms during cold storage of ‘Niitaka’ pear fruit are of great importance to solve the postharvest disorder problems. The morphological and biochemical changes observe of pear skin affected by different harvest times and storage environments. Photo-micrography revealed the morphology of the three distinct layers of ‘Niitaka’ pear fruit skin at harvest. Including the cork, cork cambium, and hypodermis in black stain fruit skin, the skin was more thickened about 10μm than the normal fruit. The thickened skin of the black stain fruit might be due to the formation of 2 or 3 fold cork layers. In contrast, the skin blackening fruit skin was thinner about 100μm than the normal fruit. Thinned skin of skin blackening fruit might be the result of the collapse of the hypodermal tissues, suggested that the three types of the skin disorders in ‘Niitaka’ pear fruit were developed from different parts of the skin each other. Peeling-off fruit was decork between the cork and the cork cambium caused by cell elongation, whereas the black stain fruit was caused by increased cork layers and the skin blackening bycollapsed the hypodermis.
When the temperatures was changed from 5 to 0℃ and 10 to 0℃ after 90 days storage at 0℃, peeling-off fruit
occurrence rates were 65∼77%. The first stage of the peeling-off process was cell elongation at the top and bottom parts in cork cambium which basically produced the cork cell. Then, the cork cell was separated from the cork cambium by collapsed and crumpled cell wall which might be due to the cell elongation in the cork cambium.
There was a new process between the cork cell and the cork cambium during peeling-off which was not described so far illustrating the pear fruit structure changes; therefore, it was termed as decorking for the time being.
Occurrence rate of black stain in ‘Niitaka’ pear fruit was the highest in newspaper bagging with 75% among various bagging materials at harvest time because of the high relative humidity within the double layer paper bags.
During cold storage, the rate was 54∼100% in 30μm polyethylene (PE) film packaging. As the harvest time was postponed, the rate increasedduring cold storage. The rate was 1.5 to 2.4 times higher in pears harvested in late September than in those harvested in early and mid October. There was no significant difference in occurrence of black stain fruit between the 30 and 50μm PE film bags. The causal fungus of the black stain pear was isolated and identified as Gloeodes pomigena (Schweintz, 1920). The treatment of 0.1∼0.5ppm ozone gas prevented the occurrence of the pear fruit black stain until 180 days after cold storage. The ozone treatment on the affected fruit was also effective in preventing the progress of the black stain.
