감의 가을 동상해 발생 시기별 과실품질 및 수체 생육특성에 미치는 영향 구명결과 과실의 외부에 나타나는 증상보다 내부의 생리적인 피해를 더 크게 받았을 가능성이 있다. 과실 생체중이 서리피해 후 감소한 것은 세포가 죽은 후 수분증발로 탈수되고 가지로부터 수분공급을 제대로 받지 못했기 때문이다. 성숙기에도 건물중이 꾸준하게 증가하였는데, 이들 물질의 증가가 서리피해 후 중단된 것은 동화물질의 공급이 중단되었음을 의미한다. 서리로 인해 잎이 고사한 후에 가지의 저장양분은 영향을 받지 않은 것은 서리피해 후 과실 생장이 정지되었기 때문으로 판단된다. 따라서 저장양분 부족으로 인해 월동기에 발생하기 쉬운 고사지나 이듬해 수체 생장도 차이가 없었던 것으로 판단된다. 동상해가 많은 과실이 저장 중 경도가 급속이 낮아지고 연화, 흑변 등 생리장해과 발생이 많아서 동상해를 받으면 수확한 과실을 장기 저장하지 말고 출하하는 것이 농가 경영상 유리한 방법이라 판단된다. 또한 동상해를 받았더라도 수확 후 저장양분은 큰 차이가 없는 것으로 나타났으며 관리가 양호하게 이루어진다면 이듬해 착과 및 수량에 지장이 없음을 알 수 있다.
감의 봄 동상해 발생 시기별 과실품질 및 수체 생육특성에 미치는 영향 구명 결과 발아기에 인위적 저온처리에 의해 1년생 가지에서 발생하는 신초수, 신초 중 결과지수, 그리고 정단부 3개의 눈에서 발생한 신초의 평균 길이, 총엽수, 총착과수 등이 모두 감소하였다. 특히, 발아기 저온에 의해 착과 신초수(결과지수)가 1년생 가지 당 1.5개(38.5%) 감소하였고, 평균 착과수는 감소하여 봄철 동상해가 과원 지형, 지점별 차이에 따라 그 피해가 크게 차이를 보여 수체 내 고른 착과가 아닌 한 부분에 집중된 착과는 당년 과실 비대뿐만 아니라 다음해 착과에 큰 영향을 미치는 것으로 판단되었다.
떫은감의 봄 동상해 정도에 따른 수체 생육 및 과실특성 조사를 위해 감나무 과원의 상하부간 동상해 및 생육 차이를 분석한 결과 동상해 과원의 상부와 하부 간 3월 하순의 기온을 조사한 결과, 일평균기온의 차이는 크지 않았으나, 하부 지점에서 일최고기온이 높고 일최저기온이 낮아 일교가 일평균 3.1℃ 정도 컸다. 동상해 정도를 알아본 결과, 본 과원 및 인근 과원 모두에서 미발아율은 상부보다 하부에서 각각 7.4%와 12.1% 정도 높았다. 1년생 가지당 꽃수는 하부에서 상부의 40% 수준으로 아주 낮았고, 7월 착과 조사 시 착과수는 본 동상해 과원에서 인근 과원보다 착과 및 과실 상태가 아주 저조하였다. 감나무 과원의 일조량에 따른 동상해 및 생육 차이 조사 결과 품종에 관계없이 경사지 방향에 따라서는 주간단면적(TCA, cm2) 당 발생한 신초수는 서사면에서 3.1개로 동사면의 1.9개보다 1.6배 많았다. 이후 TCA 당 착화된 신초수는 서사면에서 1.4개로 동사면의 0.3개보다 4.6배가 많았고, 그 비율도 큰 차이를 나타내었다. 품종별로는 서사면의 ‘상서조생’과 ‘스나미’에서 각각 TCA 당 1.9개와 1.5개로 많았고, 동사면의 ‘갑주백목’과 ‘부유’에서 0.2개와 0.4개로 적었다. 또한 ‘부유’는 경사지 방향에 따라 서사면에서 0.9개로 동사면의 0.4개보다 2배 정도 많았다. 동일한 경사면의 ‘갑주백목’은 전정 정도에 따라 TCA 당 발생한 신초수 대비 착화수는 차이를 나타내지 않았다. 하지만 강전정된 수체에서는 2차 생장한 강한 도장지가 많이 발생하여 착과수 부족뿐만 아니라 수관크기 및 착과수 대비 과실 비대가 저조하였다. 따라서 감나무의 재식 경사면에 따른 동상해 차이는 뚜렷하여 본 포장에서는 서사면보다 동사면의 감나무 동상해가 2배 정도 심한 것으로 생각된다. 또한 동일한 동상해를 입은 동일 품종 간에도 너무 강전정(동상해 가지 제거)을 하면 당해 수확량이 급격히 감소하고, 발생된 신초(결과지) 특성을 고려할 때 다음해 동계전정 및 도장지 활용 정도에 따른 수확량 차이는 추후 검토할 필요가 있었다. 떫은감나무 ‘갑주백목’의 봄철 영하온도 처리에 따른 신초 발생 및 착과 특성조사결과 겨울철 동상해보다 월동 후 봄철 발아기에 영하의 온도에 따라 동상해 피해를 입은 ‘갑주백목’은 신초 생장량이 감소하고 눈고사율 차이에 따른 착과량 감소가 더욱 크게 나타날 것으로 판단되었다.
동상해 정도가 단감나무 수체 생육, 과실 품질 및 저장성에 미치는 영향을 조사 결과 단감 ‘부유’의 발아기 봄 동상해 유발 시험 및 현지 과원의 자연발생 동상해 시험을 통해 비슷한 결론을 도출할 수 있었다. 꽃눈이 동상해를 받았을 때 꽃눈 피해율이 증가할수록 화뢰수가 감소하나, 적정 착과량 유지를 위하여 적과를 하기 때문에 착과수는 70%까지는 완만하게 감소하였다. 수량은 꽃눈피해율 75% 이상에서 뚜렷하게 감소하는 경향이었다. 동상해를 받은 나무는 기형과 발생이 증가할 수 있으나 과실 품질은 동상해 정도에 따른 차이가 뚜렷하지 않았다. 착과수가 부족한 나무는 수세가 강해져 도장지 발생이 많아질 수 있다. 또한 동상해를 받았더라도 수확 후 저장양분은 큰 차이가 없는 것으로 나타났다. 착과수 부족으로 동상해로 가지가 고사하지 않았다면 이듬해에 수량 확보에는 큰 어려움이 없을 것으로 나타났다. 따라서 발아기에 꽃눈 동상해를 받았을 때는 이러한 수체 생장 반응을 이해하여 수세관리 및 경영 계획을 세워야 할 것이다. 봄 동상해를 해피하기 위해서는 냉기류가 정체하는 평지 또는 곡간지이거나 지온 상승이 빠른 양지바른 남향 과원, 도로개설로 냉기류가 정체된 지역은 단감과원으로 부적합한 것으로 나타났다. 봄 동상해로 착과수가 부족한 나무에서는 수량 확보와 수세 안정을 위해 적과 때에 결과모지 기준보다는 이웃한 가지의 착과 정도를 감안하여 과실을 많이 남길 수 있음을 알 수 있었다.
단감 과실의 가을 동상해 발생의 생리ㆍ생태학적 연구 결과 건전과는 7일차에서는 과육이 연화되지 않았고 14일차에서는 부드럽게 연화되었다. 표피의 변화는 14일차에도 크게 나타나지 않았다. 동해 피해과는 7일차에 이미 과육은 연화되었고 표피에서 열과와 유사한 변화를 관찰할 수 있었으며 14일차에서는 과피의 단순한 열과가 아닌 코르크층과 유사한 조직을 관찰할 수 있었으며 균의 발아도 관찰 되었다. 동해로 인한 열과가 단순한 용적의 변화에 의한 열과가 아닌 세포 내부의 단백질의 변성 또는 세포 분화를 유도, 그 결과 다른 여러 변화를 초래한 것으로 판단되었다.
가을 동상해 정도가 떫은감의 과실품질, 저장 및 가공에 미치는 영향을 조사 결과 기온에 따라 과실의 온도도 변화하는 경향이나 기온에 비해 변화폭이 적었다. 과실 기부의 온도가 가장 낮았고 적도부의 온도가 가장 높았으며 정부는 기부보다 적도부 온도와 비슷한 경향을 보였다. 잎의 가을 동상해 피해 증상은 과실 기부의 꽃받침 주위 조직이 흑변되는 현상으로 나타났으며, 기부에 심각한 증상을 보이는 과실도 적도부나 정부에서는 피해 증상이 관찰되지 않았다. 재현성은 낮으나 피해가 심한 과실에서는 꽃받침에서 변색, 뒤틀림, 건조 증상이 관찰되었다. 상온에서는 저온처리 강도에 관계없이 피해과는 발생하지 않았으며 연화과가 다소 증가하고 경도가 약간 감소하는 경향을 보였으나 연시 가공에는 문제가 없었다. 저장 후 연시 가공에서는 처리 강도가 강하고 저장 기간이 길수록 정상적으로 연화되는 과실이 감소하였다.

Several experiments were conducted to determine influence of the cold damage of buds containing flower buds on shoot and fruit growth of 'Fuyu' persimmon the current and the next season. The bud damage included the complete death of all, complete death of main buds only, or the late and deformed shoot growth in the spring. Number of flower buds in early May linearly decreased as the damage ratio increased. Since the thinning of flower buds in mid-May and fruitlets in early July was done in no or slightly damaged trees, the yield did not decrease compared with the non-damaged control when the bud damage increased by 70%, respectively. However, the yield significantly decreased when the buds were cold-damaged more than 75%. Severe cold damage of the buds tended to cause vigorous shoot growth the current season but not the next season. The bud damage did not consistently affected average fruit weight, skin coloration, flesh firmness, and soluble solids the current and the next season. Shoot growth and the yield may depend on the number of flower buds and percent fruit set after the cold damage.
Management to reduce cold damage before or after spring frost
Spring frost damage occurred mainly at lowlands and mountain stream sites, indicating that persimmon orchards should be established at proper sites without danger of frost damage. It has been common practice to remove “delayed flowers” (DFs), since DF bloomed later than 10 days, compared with normal flowers (NFs). Growth and characteristics of the fruits developed from DFs of ‘Fuyu’ persimmon were investigated to determine their usefulness to supplement the frost-damaged NFs. At harvest in autumn skin color, firmness, and soluble solids of fruits were not different between both DF and NF. DF decreased fruit drop under open pollination but produced more deformed fruits. In trees with insufficient NFs due to spring-frost, DFs could yield marketable fruits with no delay in maturity although their size is slightly smaller. Even though some bearing mother branches were fruit-thinned to more than the conventional fruit set in a trees severely damaged at flower buds, the fruit quality was not significantly reduced. When fruit thinning need in trees damaged with spring frost, therefore, the thinning degrees should be adjusted depending on the fruit set of different branches in the same tree.
Fruit growth and storage reserve accumulation after autumn frost damage
Autumn frost firstly damaged leaves and then fruits on 2 Nov. 2012 and 12 Nov. 2013. Some trees were harvested on 12 Nov. 2012 and 15 Nov. 2013, whereas the others were left unharvested. In the unharvested trees, fruit dry weight and contents of soluble sugars, starch, nitrogen, and potassium stopped to increase after the frost damage. There were no significant differences in carbohydrates and the inorganic nutrients in dormant shoots between harvested and unharvested trees. Unharvested trees were not adversely affected in the shoot mortality during winter, number of flower buds as well as the growth of shoots, leaves, and fruits the next season. On the other hand, even though 'Fuyu' leaves were damaged by frost at different times in November with frost, storage reserves of dormant shoots were not affected by different frost damage times
Influence of autumn frost on storability of fruits
Frost damage of leaves and 'Fuyu' fruits was faster and severer at lower site than upper site in a slope orchard, because of different temperatures of the sites. When fruits were harvested after frost damaged, their marketability decreased and physiological disorder increased during winter storage. The result indicated that fruit quality could be unfavorably changed with leaf or fruit damage by autumn frost.
In the present work, we investigated the correlation of the degree of freeze damage of the fruits on the trees with that of the leaves, reability and processability of non-astringent persimmon ‘Hachiya’. We also studied the freezing temperature and the physiological characteristics of the persimmon ‘Hachiya’.

A. Freezing temperature of persimmon ‘Hachiya’
We classified the degree of ripeness into three categories of Green, Yellow, and Red. The freezing points were monitored to be –1.99℃, –2.14℃, –2.23℃ for Green, Yellow, and Red, respectively, which shows that the degree of ripeness is porportional to the freezing temperature lowering. The freezing points for calyx end, style end were monitored to be –2.14℃, and –3.12℃, respectively. The difference of the freezing temperature can be attributed to the fact that the concentration of soluble solid contents and the dry weight are higher in the style end than those in the calyx end.
B. Physiological characteristics of persimmon ‘Hachiya’
Respiration rate of the flesh is proportional to the degree of the freeze damage in the leaves, and the damaged tissues showed the higher respiration rate when compared to the undamaged tissues.
In general, damaged flesh tissues show higher electrolyte leakage rate compared to the undamaged the tissues. ‘Hachiya’ showed the opposite result of the lower electrolyte leakage rate for the damaged tissues. This result is very interesting and conjectured to be due to the effect of eluted tannin from the tannin cell on the electrolytes.
Relation of the freezing damage of the fruits on the tree to the freezing damage of the leaves
Upto 30% of the freezing damage of the leaves, no noticeable damage was found in the fruits. For the trees with the freezing damages of the leaves in the range of 31-60%, 61%-90%, and 91-100%, damages in the fruits were 18.2%, 37.4%, and 83.6%, respectively. Main symptom was the blackening of the tissues near calyx end. The tissues in the equatorial region and style end region did not show damages even those in the calyx end regions of the fruits was blackened.
Relation of the storeability of the fruits to the degree of the freezing damage of the leaves
Upto 30% of the freezing damage of the leaves, the fruits did not develop the damages during 110 days of storage. At 55th day of storage, the trees with the freezing damages of the leaves in the range of 31-60%, 61%-90%, and 91-100%, developed damages of 4.3%, 17.7%, and 24.0%, respectively. At 110th day of storage, the trees with the freezing damages of the leaves in the range of 31-60%, 61%-90%, and 91-100%, developed damages of 18.3%, 65.0%, and 76.9%, respectively.
Relation of the processibility of the fruits to the degree of the freezing treatment
Regardless of the degree of the freezing treatment on the fruit, damages were not found for the fruits with room temperature storage. The fruits showed a little deterioration in the firmness. The softened fruits did not show any problem in the making of ‘Hongsi’. However, it was not possible to make the dried fruit due to the problem in the peeling process with the machine.
Damages developed during store period for the fruits with cold storage. However, the undamaged fruits did not show problems in the processing.
Freezing-and-frost damage and growth of persimmon tree by orchard position (top and bottom)
In last part days of March, daily mean temperature between the top and bottom of orchard was not different, but daily temperature range at the bottom was more 3.1℃ higher than the top of orchard. Freezing-and-frost damage (non-budding) at the bottom of two nearby orchards was 7.4% and 12.1% higher than the top, respectively. Flower number per one-year-old branch at the bottom was 40% compared to that of the top. In July, fruiting number of freezing-and-frost damaged orchard was seriously lower than that of control.

Shoot number and bearing-shoot number per trunk cross-section area (TCA) of west-slope and east-slope land averaged 3.1 and 1.4 ea/cm2 and 1.9 and 0.3 ea/cm2, respectively. Bearing shoot number per TCA of ‘Uenishiwase’, ‘Sunami’, and 'Fuyu' on west-slope orchard was 1.9, 1.5, 0.9 ea/cm2 and 'Hachiya' and 'Fuyu' on the east-slope was 0.2, 0.4 ea/cm2, respectively.
Shooting and fruiting characteristics according to treating sub-zero temperature, -2℃ for 3 hours, at early budding stage of ‘Hachiya’ persimmon tree
Number of shoot and bearing shoot, shoot growth and fruiting number of one-year-old branch (OYOB) were decreased by treating sub-zero temperature. Bearing shoot number of the OYOB by treating sub-zero temperature was decreased 47.2%. Shoot and bearing shoot number of OYOB above 50% non-budding were decreased. Especially, fruiting number at three terminal buds of OYOB was clearly decreased by treating sub-zero temperature and the non-budding percentage. There was a negative correlation (y = 12.950 - 0.1445x, r2 = 0.4672**) of non-budding percentage and fruiting number of one-year-old branch treated sub-zero temperature. Therefore, sub-zero temperature (-2℃ for 3 hours) occurred at early budding stage of persimmon is decreasing shoot growth and is decreasing 1.4 ea fruiting number by increasing 10% non-budding percentage.
Lately, there is a damage of cold and frost frequently on the persimmon tree by weather accident as a result of global warming at spring season. 1 year old branches of 'fuyu‘ and 'koshuhyakume‘ persimmon tree, which were sampled by germinating period at spring season were tested to identify temperature of damage of cold and frost. As a result, the temperature of damage of cold and frost is -11℃ in the Feb., -8℃ in the early and middle Mar., -5℃ in the late Mar. and -3℃ in the early Apr. respectively on 'fuyu' persimmon, and -17∼ -14℃ in the early and middle Feb., -14∼-11℃ in the late Feb. and early Mar., -8∼-5℃ in the middle Mar., -5∼-3℃ in the late Mar., and -2℃ in the early Apr. respectively on 'koshuhyakume‘ persimmon. The effects of damage of cold and frost at germination period on tree growth and fruit characteristic were that the number of shoots was decreased, the average length of shoots was increased and the number of fruits was dramatically decreased when the flower buds were damaged heavily. But the tree growth was settled down and the number of fruits was recovered at the 2nd year. There was no tendency in fruit weight, but there was high soluble solid content significantly in the treatment of the early and middle Mar. that was damaged heavily at the flower bud, and the tendency was disappeared after 2, 3 years of the treatment. The result of investigation of tree growth by rate of flower buds, the rate of fruiting shoots dramatically was decreased, the length of shoots and water sprout branch was increased when the rate of damaged flower buds was over 50% on 'koshuhyakume‘ persimmon. The fruit weight was much bigger, and Hunter a value tended to be high when the flower buds were more heavily damaged.
