국산 밀 품종 활용 식빵 가공 시, 단일 품종보다는 2~3개 품종을 혼합한 밀가루를 사용했을 때 식빵 품질을 향상시킬 수 있는 것으로 나타났다. 혼합밀가루를 위한 적합 비율은, 조경밀+금강밀+조품밀(각 33%) 혼합밀가루가 가장 우수하였고, 그 다음으로는 조경밀(33%)+금강밀(66%)가 우수한 결과를 보였다. 한편, 지역의 농가에서 수집한 밀 품종의 단백질함량이 각 농가의 재배 형태에 따라서 변이를 보였는데, 조경밀은 11~14%, 금강밀은 12~15% 정도로 품질의 균일도가 낮았다. 식빵용 혼합밀가루 품질 균일도를 위하여 단백질 함량이 낮은 조경밀(11~12%)에 단백질 함량이 높은 금강밀(13~15%)를 혼합밀가루 경우, 조경밀(11%)+금강밀(15%) 혼합밀가루의 식빵 부피가 850 ml로 가장 높았으며, 시판 강력분 식빵 830 ml보다 높았다. 한편, 조경밀(12%)에 금강밀(14%)와 금강밀(15%) 혼합밀가루 식빵 부피는 각각 825 ml와 840 ml로서 우수한 식빵적성을 보였다. 식빵 속결(bread crumb)의 경도 측정 결과로부터, 식빵부피가 클수록 경도는 상대적으로 낮아져 부드러운 물성을 보이는 것으로 나타났다. 국수용 혼합밀가루는 금강밀을 기본재료로 하고 백중밀, 적중밀, 연백밀, 고소밀을 10~50% 블랜딩 시, 면대 색도 및 삶은 후 물성이 향상되는 경향인 것으로 관찰되었다. 이상의 결과로부터, 국산밀 품종의 블랜딩으로 용도별 가공제품 품질 향상이 가능하여 밀 품질 균일도 저하 문제점을 개선할 수 있으며, 국산 밀 수요 확대에 기여할 수 있을 것으로 사료된다.
한편, 국산 밀 품종 및 수입밀 블랜딩 가공 특성에서, 국산 밀 품종 및 수입밀의 식빵부피는 조경밀 775 ㎤, 금강밀 837 ㎤, 조품밀 700 ㎤이고, HRS 900 ㎤, 시판 강력분은 875 ㎤ 로서 국산 밀보다 높은 경향을 보였다. 수입밀 HRS와 블랜딩한 혼합밀가루 식빵 가공 시, 발효 특성은 금강밀 및 조품밀이 다소 높았으나, 식빵 부피는 조경밀 혼합밀가루가 837~925 ㎤ 수준으로 가공적성이 우수한 것으로 관찰되었다. 한편, 수입밀 DNS에 조경밀과 금강밀을 블랜딩한 식빵 부피는 각각 825~863 ㎤및 800~838 ㎤로서 조경밀이 다소 높은 경향이었다. 이상의 결과에서, 수입밀 빵용 밀가루에 국산밀을 블랜딩 시, 조경밀이 다소 우수한 가공적성이 있을 것으로 사료된다. 이상의 결과에서, 수입밀 빵용 밀가루에 국산밀을 블랜딩 시, 조경밀이 다소 우수한 가공적성이 있을 것으로 사료된다. 한편, 국수용 수입밀 HRW에 백중밀을 5~30% 블랜딩한 혼합밀가루의 단백질 함량은 10.39~11.70%로서, HRW 및 시판중력분과 유사한 수준이었다. 백중밀은 단백질인 다소 낮아 박력분 특성이 많은 반면에 색택이 밝아 국수 면대의 색이 전체적으로 밝은경향을 나타내었다. 백중밀을 20~30% 블랜딩 시, 삶은 국수의 응집성이 HRW 및 시판중력분 수준으로 국수에는 적합한 것으로 관찰되어서, 수입밀과 블랜딩 시 국수용 혼합밀가루는 백중밀을 5~30% 까지 혼합하면 국수 가공에 활용도가 높을 것으로 사료된다.

This study was composed with two sessions. The first session was conducted to characterize the physico-chemical properties of wheat flour blends(WFB) from Koran wheat cultivar, and to optimize the blending ratios to enhance the end-use qualities of breads and noodle. Seven Korean wheat cultivar were used to prepared the wheat blends. The WFB for breads-making was prepared by two different procedures. First, seven WFBs were prepared with ‘Jokyung’, ‘Keumkang’ and ‘Jopoom’ using a simplex-mixture experimental design, resulting in 7 formulations. The protein contents ranged 11~13%, which was sligthly lower than strong wheat flour. Mixing time from mixograph analysis was about 3.10~4.40 min, which was similar to strong wheat flour. The brad loaf volume of strong wheat flour was 887 ㎤, whereas those Keumkang(33)+Jopoom(66), and Keumkang+Jokyung+Jopoom(33% each) was 812.5 ㎤, which showed superior to other formulations. On the other hand, ‘Jokyung’ wheat with lower protein contents(11~12%) was blended with ‘Keumkang’ with higher proteins(13~15%). Bread loaf volume from the Jokyung(11%)+Keumkang(15%) WFB was 850 ㎤, which was the highest and comparable to strong wheat flour(830 ㎤). Bread volume from Jokyung(12%)+Keumkang(14, 15%) was 825 ㎤ and 840 ㎤, respectively. The WFB for noodle-making was prepared by blending 5 Korean wheat cultivar with ‘Keumkang’ as base flour. The results showed that wheat flour blends from Korean wheat cultivar could improve noodle quality, thus using blending system could contribute to increase the consumption of Korean wheat grain.
The second session was to characterize the physico-chemical properties of wheat flour blends(WFB) with imported wheat and Korean wheat cultivar, and to optimize the blending ratios to enhance the end-use qualities of breads and noodle. Seven Korean wheat cultivar were used to prepared the blends, and imported wheat were hard red spring(HRS), hard red winter(HRW) and Dark Northern Spring(DNS). For Breads, the WFB was prepared by replacing Korean wheat cultivar of ‘Keumkang’ and ‘Chokyung’ to HRS and DNS at the 4~20% level. For noodle, Korean wheat cultivar was blended with HRW at 5~30% levels. The bread volume from WFB with HRS and Chokyung ranged 837~925 ㎤, which was comparable to HRS(900 ㎤) and strong wheat flour(875 ㎤). On the other hand, the bread volume of WFB from DNS and Chokyung and Keumkang ranged in 825~863 ㎤ and 800~838 ㎤, respectively. The results showed that ‘Chokyung’ cultivar has better quality for blending with imported wheat for bread-making. For noodle properties, the protein content of WFB with HRW and ‘Baekjoong’ ranged 10.39~ 11.70%, which is similar to HRW and all-purpose wheat flour. The protein content of ‘Baekjoong’ was about 9.0%, which is slightly lower than all-purpose wheat flour, but the lightness of grain was so higher than other cultivar as to make the noodle color much brighter white. Cooked noodle made from WFB with Baekjoong at 5~ 30% level was resulted in higher cohesiveness, which was preferred to noodle properties.
