연구의 목적 및 내용
전통식품 식이 동물모델의 혈액, 소변, 대변, 조직들로부터 특이적으로 변화되어 나타나는 체내 steroid 호르몬과 대사물질 분석 및 장내균총 변화 분석을 통한 관련 대사경로를 도출하고 분자생물학적 생화학적 방법을 이용하여 도출된 대사경로 검증을 통해 전통식품식이에 따른 장내균총, 호르몬, 대사물질의 변화와 전통식품의 건강 기능성의 상관관계를 규명함으로써 호르몬 대사 기반 기능성 식품 연구의 기반 기술을 확립하고자 함.

연구결과
● 홍삼식이가 생체대사 및 장내균총에 미치는 영향
- 홍삼식이가 비만, 간기능, 장내균총을 개선하였으며 홍삼분해산물이 장관면역을 증강에 효과가 있음
- 대사체분석을 통해 홍삼식이가 에너지대사 증가, 신장보호효과, 혈관확장 증가에 관계된 것을 확인하였음. 특히 혈관확장 효능을 검증한 결과, 홍삼이 혈관수축에 관여하는 AngiotensinII 및 LPCs 생성을 억제하는 대사기전을 확인함.
- 홍삼(인삼)식이 특이 스테로이드와 장내균총, 대사물질들의 상관성을 밝힘.
● 김치식이가 생체대사 및 장내균총에 미치는 영향
- 고지방식이에 의해 증가/감소되었던 대사물질들, 장내균총, 스테로이드, 담즙산이 김치식이에 의해 회복하는 것을 확인함.
- 고지방식이 지표물질 발굴: tartaric acid 소변에서 40배 이상 증가
- 김치 및 소금식이에 영향을 받는 소변 스테로이드 호르몬 지도를 완성하였으며 이들과 대사물질, 장내균총과의 상관성을 밝힘.
● 다시마식이 생체대사에 미치는 영향
- 다시마의 fucoidan을 비롯한 당류가 면역력 증강 및 지방간 개선 효능을 확인함
● 녹차식이 생체대사에 미치는 영향
- 차양막을 이용하여 재배한 녹차에 많이 들어있는 카페인과 테아닌의 항비만 효능을 검증함. 녹차의 기능물질인 카테킨보다는 카페인과 테아닌의 항비만능이 뛰어남.
연구결과의 활용계획
● 전통 식품 섭취가 생체에 미치는 전반적인 기초적인 과학적 data를 확보함으로써 전통식품 관련 산업의 경쟁력을 제고

The aim of this research project is to newly establish the foundation technology for the functional study models of traditional Korean foods on the basis of the analysis study on hormone, metabolites, and gut microbiota from normal animal models. The functionality of the traditional foods will be investigated using disease models on the basis of their correlation study and the diet-altered hormone map will be constructed.
Result
● red ginseng intake study
- RG intake improves liver function, anti-obesity,and gut microbiota population and its by-productions produced by digestive system increases GI immunity.
- RG intake metabolomic studies released that RG intake are positively correlated with energy production, kidney function, and vasodilation. In particular, AngiotensinII system and LPCs mechanism associated with blood pressure are established.
- The relationship among steroid hormones, metabolites, and gut microbiota changed by RG intake is released.

- Tartaric acid in urine can be used as a potential biomarker for diagnosis of obesity.
