Dishwasher detergents are increasingly being used for washing or cleaning dishes and utensils. In order to reduce foaming and to decrease the quantity of detergent used in washing process, some toxic alkalis such as sodium hydroxide are commonly used. However, there is a possibility of surface retention of residual detergent and alkali and other residual components of detergents used on utensils following cleaning process.
While using automatic dishwasher detergents, it is difficult to confirm whether the residual detergent remains or not on the surface of dishes and utensils post-washing.
Also, in the case of rinse aid, it does not wash off easily from the surfaces with rinse in tap water after use, but it is removed by hot air and natural drying method in the final rinse process. The residues of detergent and rinse aid can be harmful to the health of people especially children and sick people. Therefore, the toxicity of the residues is considered as a matter of great concern, especially in food service establishments of schools and hospitals.
Therefore, it is necessary to develop a method for determining and reducing the levels of residues of cleaning agent and rinse aid, and to prepare a technical support information applicable in the field to use for automatic dishwashers.
In this project, the methods for evaluating whether or not the residues of cleaning agent and rinse aid were remained on the surfaces have been developed in accordance with the requirements for a automatic dishwasher and reduction plans have been prepared. Contents

- Domestic and overseas guidelines towards the application of dishwasher detergents (9 countries)
- Recent research review related to analysis methods of cleaning agent and rinse aid residues
- Human exposure risk assessment of detergent and rinse aid ingredients (239 compounds)

- Selection of indicator agents for the confirmation of residual amounts of cleaning agent and rinse aid (5 agents)
