Lac.acidophilus와 Lac.delbrueckii sub-sp. bulgaricus를 혼합한 시료(24.1-156.1mg/100g, 531.1-1894.2mg/100g)는 Lac.casei sub-sp. casei와 Str.salivarius sub-sp.thermophius를 첨가한 시료(14.4-131.6mg/100g, 323.0-1752.7mg/100g)보다 D(-)-및 L(+)-젖산함량이 더 높았다. 8. 전체적인 인상면에서는 비발효 인삼 유청음료(3.13-9.23)가 가장 좋은 평가를 받았고 Lac.casei sub sp.casei와 Str.salivarius sub-sp.thermophulus를 첨가한 시료는 Lac.acidophilus와 Lac.delbrueckii sub-sp.bulgaricus를 첨가한 시료보다 단맛이 더 강하여 전체적인 인상면에서 조금 더 좋은 평가를 받았다.

In order to develop a new health and nutrition beverage and to obtain the basic data, various manufactured ginseng-whey beverages were examined in terms of physicochemical, microbial properties and preference investigation according to the sensory test. The results obtained were summarized as follows: 1. The yield of whey made from added coagulant enzyme(rennet) was 78.8%. 2. At the storage (1^(st)-week), the pH-values of ginseng-whey beverages by lactic acid fermentation and by non-lactic acid fermentation (storage in cold and room temp.) were 3.91-4.78, 6.10(4℃), 5.13-5.17(30:±1℃), respectively. At the storage (3^(rd)-week), the pH-values of all ginseng-whey beverages except ginseng-whey beverages by non-lactic acid fermentation were reduced. The pH results of storage (5^(th)-week) showed a similar pattern to that of storage (3^(rd)-week). 3. At the storage (1^(st)-week), the titratable acidities of fermented ginseng-whey beverages and unfermented ginseng-whey beverages (storage in cold and room temp.) were 0.24-0.47, 0.09-0.11 and 0.14-0.15, respectively. The titratable acidities changes according to the storage period were the same as the pH changes. 4. The contents of solid-substances, ash and lipid in ginseng-whey beverages were 0.29-8.20 %, 0.62-0.66 %, 0.16 %, respectively. 5. The protein contents of ginseng-whey beverages were 0.42-0.56 % and there were not many changes according to the storage period. 6. According to the storage period, the lactose contents of unfermented ginseng-whey beverages(5.24-7.76 %) except the unfermented drink with sweetener and Jap. apricot (during storage 5^(th) at 30:±1℃) were higher than those of fermented ginseng-whey beverages(4.57-6.81 %). According to the species of lactic acid bacteria, there was no definite difference. 7. During the storage period (1-5 weeks), the ranges of D(-)-and L(+)-lactic acid contents in fermented ginseng-whey beverages (14.4-156.1 mg/100g, 323.0-1894.2 mg/100g) were higher than those of unfermented ginseng-whey beverages (6.2-115.9 mg/100g, 7.1-1697.0 mg/ 100g). According to the storage period, the ranges of D(-)-and L(+)-lactic acid contents of the sample during storage at 4℃ were reduced, while those of the sample during storage at 30:±1℃ increased. The ranges of D(-)-and L(+)-lactic acid contents in mixtured [Lac. acidophil us + Lac.delbrueckii sub-sp. bulgaricus] samples (24.1-156.1 mg/100g, 531.1-1894.2 mg/100g) were higher than those of mixtured [Lac. casei sub-sp. casei + Str. salivarius sub-sp. thermophilus] samples(14.4-131.6 mg/100g, 323.0-1752.7 mg/100g). 8. At the storage (1^(st)-week), the ginsenoside contents of Rb₁, Rc, Rb₂, Rd, total saponin in ginseng-whey beverages were 0.03-0.67 mg, 0.07-3.06 mg, 0.03-0.75 mg, 0.00-0.16 mg, and 0.07-3.33 mg (per sample 100 g), respectively. According to the addi tives, the difference between fermentation and nonfermentation and storage period, the contents of ginsenoside fractions and the total saponin produced different results and did not show consistently. Therefore, further studies on this are required. 9. By electrophoretic results of ginseng-whey beverage, an α-lactalbumin and a β-lactoglobulin band were shown apparently and there were no changes on the storage period. In addi tion, the fermented ginseng-whey beverages (Lac.casei sub-sp.casei + Str. salivarius sub-sp. thermophilus) showed definitively an unknown thick band and studies on this are required. 10. According to the storage period (1-5 weeks), the fermented ginseng-whey beverage compared to the unfermented beverage had less sweetness, more sourness, astringent taste, bitterness and aftertaste, harder off-flavor and stimulating flavor. The sample stored at room temperature had the same resul ts as the fermented ginseng-whey beverage. The storage condition(temp.) in sensory evaluation was considered an important affecting factor. The unfermented ginseng-whey beverage in overall eating-quality obtained the best score and the fermented ginseng-whey beverage(Lac.casei sub-sp. casei + Str. salivarius sub-sp. thermophilus) had stronger sweetness than other fermented ginseng-whey beverages (Lac.acidophilus + Lac.delbrueckii sub-sp. bulgaricus), There fore. in overa 11 eating-quality the former received a better evaluation than the latter.
