Minced beef (10g) was mixed with MTGase (50U/mg) and filled into plastic cases (35mm diameter, 10mm height). MTGase treated samples were stored at 4℃ or 25℃ for 30-360 min for the enzyme reaction. MTGase and HHP treated samples were pressurized at 150 and 300MPa at 25℃ for 30min. MTGase-treated samples stored at 25℃ showed higher binding force and required shorter enzyme reaction time than the samples stored at 4℃. MTGase and HHP-treated (300MPa for 30min at 25℃) samples showed 9-12% higher water holding capacity than unpressurized samples. However, color deterioration of the restructured beef was observed with HHP-treated samples.
