The purpose of this study was to find out the status of sanitary conditions for equipment and facilities related to sanitation, the degree of perception, attitude and practices to food sanitation among restaurant workers at various type of restaurants in Busan, so that the results could provide basic information necessary for preventing consumers from exposing to risks of food-born infections and improving sanitary conditions of restaurants to secure the safety of consumers. The data were collected from 300 restaurants in Dongnae-gu in Busan Metropolitan City, by using a self-administered questionnaire from March 1 to 30 in 2002, replied from 265 restaurants(88.3%), and were analyzed with SPSS(7.5.2k-version)program for frequencies, x^2-test, t-test and ANOVA. The results were as follows: The workers in charge of handling of food and cooking were characterized as females for 68.7%, age of 40s' for 49.4% and education level of high school graduate for 40.0%. The portion of small restaurants with space size of less than 20 pyung was 66.1% with average 39.5 years in business, and the most common type of ownership for the restaurants was the rent with key money combined with monthly rent for 64.5%. Regarding individual hygiene, hand-washing facility only for restaurant workers was provided in 50.2% of the restaurants surveyed, and the rates of practicing hand-washing after handling eggs(41.1%), touching money(41.9%) and using telephones(21.5%) were not high although hand-washing before working at kitchens was practiced by 90.9% of the restaurant workers. The most common method of hand-washing was to flush hands through water for 40.0% of workers and to let hands drying with individual towels for 56.7%, and 48.1% responded to work after taking medicines when occurring suppurative wounds in their hands. Although more than 90% of the workers responded not to wear any accessaries such as hand watches, bracelets, rings and nail-manicuring during cooking, some protective wears such as wearing masks(16.2%) and wearing shoes for cooking rooms(34.7%) were not practiced commonly. Among some sanitary equipment and facilities, refrigerators and freezers for food storage was provided for 97.0% of the restaurants, followed by venting systems at cooking rooms for 92.5%, and, however, sterilizer for cooking wares was equipped for 62.3%, followed by insect/pest control equipment for 64.9% and flush toilets for 76.2%. Sterilization of chopping boards and kitchen towels used in cooking rooms was carried out everyday for 55.1% and 70,9% of the restaurants, respectively, while frying oil was reused at 37.0% and kitchen garbage was disposed everyday for 44.9%. Related to food handling, most of the restaurants practiced to selecting food items produced by licensed manufacturers for 93.2% and identifying expiration dates on foods for 94,7% when purchasing food materials and ingredients. However, some restaurants practiced to refreezing after using frozen food items for 64.5% and to reusing some clean food items left over for 36.2%. While drinking water treated with water purifier was used in 72.2% of the restaurants, tap water was used for cooking in 78,l%, and filters in water purifier was changed regularly for 72.6%. However, only 33.3% of the restaurants practiced to .washing drinking water container on a daily basis. The average score for measuring the levels of perception, attitude and practice to food sanitation was 23,87 out of 33 points in full scale, showing the highest score for japanese style or raw fish restaurants, followed by western food restaurants, korean food restaurants, chinese food restaurants and the lowest for flour food restaurants. In conclusion, the results of this study suggested that some parts of sanitary conditions in restaurants and perception, attitude and knowledge to food sanitation for restaurant workers should be improved, and various education program for food sanitation should he developed in order to provide more continuous and systematic training or education programs for restaurant workers.
