Analyzed these by experimenting with time, temperature and pH, using the materials of urea, SDS and 2-mercaptoethanol, acting mutually between molcules. These searched out th insolubilization mechanism of okara protein by measuring the materials of inhibitory activity, Angiotensin-ⅠConverting Enzyme(ACE), which improves functions with enzyme modification and developed food materials that can prevent adult diseases The results, protein content of okara and soybean were 37.3% and 42.5%. contents of lipid and carbohydrate on okara and soybean were 17.2%, 23.2% and 40.6%, 29.5% ,respectively. The main fatty acids of total lipid were linoleic, oleic and palmitic acids, which comprised over 80% total fatty acids. The content of lipid types of total lipid in okara showed amounts of neutral lipid, glycolipid and phospholipid. Lipids content of soybean was neutral lipid, phospholipid and glycolipid. Except cysteine, 16 kinds of amino acids were examined in okara. Total content of amino acids in okara were glumatic acid and aspartic acid, which were higher and methionine acid and histidine, which were comparatively low. Content of lysine was 70.9 mg/ g protein in the okara, which was higher then the 56.6 mg/ g protein found in soybean. While examining the extraction rates of protein by time, temperature and pH.
