The objective of this study was to investigate the quality change of beef muscle, which was frozen and thawed at different freezing and thawing rate in order to utilize as fundamental data for establishing optimal freezing and thawing condition. Chilled beef round meat which was purchased at a market was used as samples. The samples were frozen for 30min, 90min, 150min and 270min(the time required to pass through the maximal ice forming zone, -1℃~-7℃) and thawing condition was 3.gcm/hr, 0.21cm/hr, 0.13cm/hr(that is the distance from meat surfiice to meat core by the required time until the meat core tenlperature is -1℃ ). pH, color(lightness; L*, redness; a* and yellowness; b*), water holding capacity(WHC), drip loss, cooking loss, thawing loss, total loss, rheology and sensory evaluation were measured. The results were summarized as follows; 1. pH values on the freezing time were no significant difference(p<0.05) among freezing times. The thawing loss and WHC of fast frozen meat(30min) were indicated a little higher than those of chilled meat, but the thawing loss of fast frozen meat was very low(4.13%) among frozen meats. WHC was very high (42.2%) when compared to the other frozpn meats. There was no significant difference(p<0.05) in cooking loss at various freezing times. Total loss(cooking loss + thawing loss + drip loss) of fast frozen meat was much less(49.9%) than that of frozen meat on the freezing time. As freezing time was delayed, total loss was increased. 2. L^(*)-, a^(*)- and b^(*)-values were not significant difference(p<0.05) in color among frozen meats at each freezing time. L^(*)- and b^(*)-values were increased, but a^(*)-values were decreased after storage for 7 days. 3. Hardness of slowly frozen meat on the freezing tiirle in rheology were lower than that of fast frozen meat and chilled meat, and tenderness was increased because of signifirantly decreasing(p<0.05) in hardness after storage for 7 days. Frozen meat samples on the freezing time subjected to sensory evaluation after thawing and 7 days storage showed almost similar sensory score between chilled and fast frozen meat in taste, flavor, texture, juiciness and overall quality. But fast frozen meat showed a little sensory characteristics when compared to the other frozen meats. 4. Slowly thawed meat(0.13cm/hr) on the thawing rate ill pH values was significantly(p<0.05) higher as 5.65 than that of the other thawed meats, and a slight increase in pH values was obseued during storage for 24hrs. Thawing loss on the thawing rate of fast thawed meat(3.9cm/hr) were significantly(p<0.05) the lowest(6.10%). Cooking and total loss were the highest as 48.17%, 56.44% respectively, but there was no significance(p<0.05). 5.
