ABSTRACT* Study on Nutritional Properties of Sprouting Brown Rice Yong-Seok Oh Department of Food Science Technlolgy Graduate School, Kongju National University Kongju, Korea (Supervised by Professor : Hee-Yong Park) This experiment is for the natural sprouting way of brown rice and it tested the changes in the temperature of the waiting room for sprouting and changes in waiting time for sprouting, compared the sprouting. the sprouting rate, progressing time for sprouting and their ingredients according to the types of water being used. The results were as follows : 1. The inquiry into the waiting time for sprouting according to the temperature were 24hours at 24℃, 20 hours at 26℃, 18 hours at 28℃, 14 hours at 30℃, 12 hours at 32℃, 11 hours at 34℃ and 11 hours at 36℃, respectively. 2. When tap water is used, the sprouting late was low and it took much longer to sprout than it did when the underground water, spring water, yellow muddy water & extracted water from rice-straw were used, but there were no differences in time when the temperature was over 32℃ in each test. 3. The test of sprouting rates in different types of water show that tap water has the lowest rate of 55%, underground water, spring water and yellow muddy water respectively has 70% of sprouting rates and in case of using extracted water from rice straw, the sprouting rate is 95%. 4. The inquiry into the number of sprouting when tap water, underground water, spring water, yellow muddy water & extracted water from rice-straw were used showed that the extracted water from rice-straw has the lowest non sprouting rate of 5% and the experimental group in extracted water from rice-straw has the highest rate of 70% in sprouts over 4 ㎜, which contains the most dietly fibers. 5. The inquiry into the time for sprouting and progressing time for sprouting when tap water, underground water, spring water, yellow muddy water & extracted water from rice-straw were used showed that extracted water from rice-straw had the shortest time of 7 hours of sprouting time, 48 hours of sprouting processing time and 55 hours of total time. 6. Nutrients content in sprouted brown rice is 346kcal in calorie, 4.224% of dietly fiber, 33.36mg of calcium, 0.51mg of vitamin B1, 296.67mg of phosphorus, 31.93mg of β-sitosterol and respectively, on which sprouted brown rice exceeds polished rice and brown rice. * A thesis submitted to the committee of Graduate School, Kongju National University in partial fulfillment of the requirements for the degree of Master of Food Science and Technology Conferred in February 2003.
