The chemical compositions of propolis extracts, which were extracted with water and alcohol, were investigated. Six domestic and two oversea propolis extracts were selected, and investigated the effects of DPPH radical scavenging and the antibiotic effect on food-spoilage microbes. The yields of extracts from propolis varied with the composition of extraction medium. The yields of water extract slightly increased with increasing extraction temperature. Whereas, for the extraction medium containg over decreased 50% of alcohol, the yield as the temperature increased from 25℃ to 75℃. The highest extraction rate % obtained was observed with 75% alcohol solution at 25℃. However the extraction temperature did not affect the contents of phenolic compounds and the contents of flavonoid in the extract. Coumaric acid content was high, 27~54mg/mL, in the extract but cinnamic acid contents varied significantly from 1mg/mL ~ 38mg/mL according to the extraction condition. In case of antioxidant effect, those of both 50% and 75% alcohol extract were superior to that of water extracts. Especially, over 90% free radicals were scavenged by 75% alcohol extract. The antimicrobiotic effect of propolis extracts varied with the test strains. Both water and alcohol extracts inhibited the growth of L. monocytogenes, 50% and 75% alcohol extracts decreased that of S. aureus and only water extracts deactivated E. coli. On S. typhimurium, none of domestic propolis extracts showed an antimicrobiotic effect. The content of coumaric acid and cinnamic acid of domestic extract reached an equivalent level of those of Brazilian and Australian products, but the antioxidant effect of domestic extrats was lower than those of the imported products.
