(Abstract) This study evaluated a change of understanding and attitude on breakfast after education by the nutrition education program developed for prevention of breakfast skip of elementary school students. The subjects of education included 102 of Gumi G elementary school 5th-year student (51 of boy students, 51 of girl students) and non-education group included 200 of Yeongcheon S elementary school students and Daegu D elementary school students (102 of boy students, 98 of girl students). The nutrition education program was provided in the form of 4 times of lesson covering the period of 8 weeks by making use of the discretionary time, and teaching materials, flash animation, panel, power point materials, die and bingo game, tree to swear practice, and declaration of breakfast king, etc. were developed to be used for education, and home correspondence was distributed at each lesson. There was no significant difference between the education group and the non-education group before nutrition education. The situation of non-education group remained unchanged but the education group showed a change as follows. For the education group before and after nutrition education, the percentage of the student who eats breakfast everyday was significantly improved from 35.3% to 78.4% for boy students and from 35.3% to 70.6% for girl students. And the percentage of the student who understands that breakfast has a great effect on health significantly rose from 66.7% to 84.3% for boy students and from 51.0% to 88.2% for girl students. For parents' attitude toward preparation of breakfast everyday before and after nutrition education, the percentage of such attitude was significantly improved from 52.9% to 98.0% for boy students' parents and from 58.8% to 100.0% for girl students' parents. And the percentage of parents that have their children eat breakfast everyday was significantly improved from 47.1% to 82.4% for boy students' parents and from 51.0% to 86.3% for girl students' parents. As the result of survey of the relation between family income, parents' age, occupation or inoccupation and attitude change of breakfast, the parents in their thirties among the middle class showed a positive change to eat breakfast everyday and no relation with mother's occupation or inoccupation. For the situation of the education group before and after nutrition education, the attitude change toward balanced diet and recognition of health were significantly improved. When evaluating operation of nutrition education, the students of the education group gave the positive answers to the questions of usefulness and importance of nutrition education. For evaluation of the flash animation, high marks exceeding 3.50 were obtained in the items generally, especially in the items of comprehensibleness & clearness of the contents, emphasis of the core contents, delivery of necessary knowledge, practicability and adequacy of color construction. This study proves that effectiveness of nutrition education was so great to induce change in recognition of importance of breakfast and change in attitude toward practice of breakfast even if nutrition education for prevention of breakfast skip was accomplished just by 4 times of lesson in a short time. To maximize effectiveness of nutrition education, the subjects of which are the elementary school students in a growth period, development and application of systematic and effective nutrition education program focused on learner's property shall be accomplished so the learner can maintain continuous interest in nutrition and practice the correct eating patterns actually.
