The effect of salt reduction education program combined with DASH(Dietary Approaches to Stop Hypertension) on blood pressure and salt intake of adults This study was conducted to investigate the effect of salt reduction education program combined with DASH. Program consisted to a 8 week nutrition education and a 8 week follow-up. Evaluation of nutrition education program was performed, by assessing changes in nutrition knowledge related to sodium intake and blood pressure, dietary behavior related to sodium intake, general dietary habit(regular and well-balanced dietary habits), self-efficacy, nutrient intake, and food consumption frequency after program completion. The subjects of a 8week nutrition education were comprised of 53 adults(male : N=8, female: N=45) aged 46-80yr. Forty two subjects completed the whole nutrition education program. The subjects received nutrition education two hours per week during 8 week period. During the follow-up period, 6 session of exercise, individual nutrition counseling and dietary checking were provided. 1. The effect of salt reduction education program combined with DASH for 8 weeks Fifty three participants significantly reduced weight, BMI, systolic blood pressure, and sodium compared to the baseline. Intakes of noodle, kimchi, fish and shellfish were significantly reduced at the end education compared to the baseline, and sodium intake estimated with food consumption frequency was decreased from 5876.49±3551.30mg to 3795.98±1889.47mg. After implementing nutrition education, total scores of nutrition knowledge and well-balanced dietary habits were significantly increased and total score of dietary behavior related to sodium intake was decreased. 2. The effect of salt reduction education program combined with DASH according to the number of attendance for 8 weeks All the subjects were divided into Less Educated group(LE, N=19) and More Educated group(ME, N=34) according to attendance number. ME were participated in nutrition education more than 4 times, LE were attended less than 4 times. After education, ME showed significant decreases in SBP and DBP, whereas LE did not show any change in blood pressure. ME reduced carbohydrate, iron, zinc, vitamin B6, niacin, and sodium intake estimated with 24-hr recall method and FFQ compared to the baseline. PUFA, carbohydrate intake per 1000kcal were increased. Niacin and recalled na intake were decreased in ME. ME also showed that consumption frequencies of soup, kimchi, fish and shellfish, seasoned vegetable, salted and fermented fish and vegetable were significantly decreased at the end of nutrition education compared to the baseline. LE were observed with decreased intakes of noodle and thick soup. After nutrition education, both groups showed that total score of nutrition knowledge was increased. Total score of dietary behavior related to sodium intake was significantly reduced in both groups. Total score of well-balanced dietary habit was increased in ME. However in LE had not changed significantly. Self-efficacy was not significantly changed in both groups. 3. The effect of salt reducation education program combined with DASH for 16 weeks Forty two participants reduced weight, BMI, SBP after education. these participants significantly deceased their SBP, DBP during follow-up. At 16 weeks, BMI, SBP was significantly lower compared to the baseline. Intakes of energy, carbohydrate, β-carotene and sodium intakes estimated with 24-hr recall method and FFQ were significantly decreased at the end education compared to the baseline. During follow-up period, intakes of FFQ na, vitamin B1, vitamin B2 were increased. At 16 weeks, participants showed significant reduction in intakes of vitamin A, β-carotene, vitamin C, sodium intakes estimated with 24-hr recall method and FFQ. Consumption frequency of noodle, soup, kimchi, fish and shellfish, seasoned vegetable were significantly decreased at the end education compared with baseline. During follow-up, food group intakes were not significantly changed. At 16weeks, participants showed significant reduction in food group intakes of rice, noodle, soup and thick soup, kimchi, fish and shellfish, meat, eggs or beans and seasoned vegetable. Total score of nutrition knowledge related to sodium intake and hypertension was increased at the end of follow-up compared to the baseline. Total score of dietary behavior associated with high sodium intakes and well-balanced dietary habit were decreased during 16 weeks. Total score of self-efficacy was showed tendency of increased during education and follow-up. At 16weeks, self efficacy score was significantly increased. 4. The effect of low sodium intake education program combined with DASH according to the attendance number for 16 weeks After education and follow-up, ME and LE showed significantly decreased SBP. DBP compared with baseline. ME showed that intakes of iron, vitamin A, β-carotene, niacin, vitamin C, folic acid, recalled na, FFQ na were decreased at the end follow-up compared with baseline. LE showed significant reduction of β-carotene intakes and increase of vitamin B2, and cholesterol intake. ME had significantly lower consumption frequency in soup and thick soup, kimchi, seasoned vegetable at the end follow-up compared to the baseline. Total score of nutrition knowledge related to sodium intake and hypertension was increased both groups during 16 weeks. Also, both groups showed that total score of dietary behavior was decreased at the end follow-up compared to the baseline. At 16 weeks total score of well-balanced dietary habit was increased compared with baseline, only ME. ME showed significantly increase in self-efficacy total score during 16 weeks. But LE had not significant change in self- efficacy total score. 5-1. Factors associated with the change sodium intake after salt reduction education program.
