This study attempts to provide basic data to establish systematic nutrition education centered on the users by studying the understanding of nutritional education of elementary students residing in Gwangju/Jeonnam Province. In December, 2006, surveys regarding general characteristics and understanding of school lunch and nutritional education were given to 883 4th-6th graders in this province. Collected data were analyzed using SPSS 12.0 statistics package and the results are explained below. Average satisfaction rate of school lunch was 3.2 which were above average. Frequently mentioned reason for dissatisfaction was "Unsanitary" which obtained 27.9%. Items regarded as important for school lunch include sanitation, nutrition, taste, menu, and preference in sequence. Menu board received 39.1% for "Read Daily" which showed that it was not used frequently. Impact of school lunch showed that 21% thought it formed "healthy eating habits." In addition, 88.1% of participants were aware of the need for guidance in eating healthy. Many recognized school lunch to have positive effect on changing their eating habits. Although the correlation between school lunch satisfaction rate and the effects on eating habits was low, the participants felt that higher satisfaction rate will increase positive impact on them. According to the survey on understanding nutritional education, interest rate of the participants was 2.9 which were on the average but the rate decreased with increasinggrade level. Participants reportedly received nutritious information from school (35.8%), TV/radio (18.5%), and internet (17.9%). Meta-cognition regarding nutritional information/knowledge was 3.3 which wereabove average and the rate for the practice of their knowledge showed 4.8% of "Always" and 71.0% for "Sometimes" which showed high overall rate of applying theirknowledge. For reasons why they were not practicing their knowledge, "Lack of Interest" wasthe highest with 68.8%. Understanding the need for nutritional education was 3.5 which was above average and the reason for this need was "in order to live a healthy life" (27.8%). Reason for not wanting such education was "because the participants do not feel the need for nutrition education" (28.5%).
