Comparison of Purchases of Processed Foods, Perception and Satisfaction regarding the Nutrition Labels according to Nutritional Education among High School Boys원문보기

This study was carried out to investigate the influences of nutritional education, which was provided as part of discretionary activities, on the perception of nutrition labels and the uses of processed foods, and to promote the need for and importance of education about nutrition labels. For those purposes, a survey was conducted between two schools, one of which provided nutritional education as part of discretionary activities and the other of which provided no nutritional education. Total 800 tenth graders of the two high schools participated in the study from July 1 to September 3, 2008. Collected data were analyzed using the SAS 8.2 statistical program.
The findings can be summarized as follows:
First, the biggest number of the respondents valued "taste" most as a criterion to choose processed foods, regarded "calories" as the most important nutritional element, bought their processed foods at a "supermarket" and spent "1/2" of their monthly allowances or less on processed foods.
Secondly, as for their perception of nutrition labels, School A that provided nutritional education recorded a higher degree of perception than School B provided no nutritional education. As to whether they received nutritional education or not, more than a half of the students of School A said they "received" nutritional education. The biggest percentage of them said they were "satisfied" with the education they received about nutrition labels. The students of School A felt a greater need for education about nutrition labels as part of discretionary activities than those of B. The reason that such education was in need, according to their responses, was that "It helps them choose healthy foods more easily and thus further with their everyday lives." The reason that such education was not in need was that "The labels are easy to understand." And the biggest number of them said "the seventh grade" would be the most appropriate time to provide education about nutrition labels.
Thirdly, School A had more students that checked nutrition labels than School B. The biggest reason they checked nutrition labels was "in order to check the kinds and contents of nutritions," while the biggest reason they wouldn't check them "having no interest in nutrition labels." Those who felt a need for education about nutrition labels checked nutrition labels more than those who didn't. The reason they checked nutrition labels was "in order to check the kinds and contents of nutritions," and the reason they wouldn't check them was "having no interest in nutrition labels."
And finally, the subjects' perception of and satisfaction with nutrition labels were examined in the two schools. As a result, School A recorded a higher level of perception and satisfaction than School B. The perception level was higher than the satisfaction level according to whether such education was in need or not. In School A that provided education about nutrition labels as part of discretionary activities, the students demonstrated a higher degree of perception of them than satisfaction with them. There was no overall significant difference between them in terms of level of knowledge. And those who were perceptive of a need for education about nutrition labels felt a greater need for such education than those who weren't.
In conclusion, consistent and systematic nutritional education should be provided so that the students can make food choices properly. It's also required to provide national policies and school-level supports so that nutritional education can be provided as part of discretionary activities under the guidance of nutrition teachers and that nutrition teachers can focus on nutrition education. In addition, a systematic standard curriculum needs to be developed in order to help the students take interest in nutritional education and make active use of what they learn through the education in everyday settings.
