This study was carried out to develop a nondestructive measurement system for assessing internal qualities (soluble solids content and acid content) and freshness of tomato fruits using visible and near infra red (VIS/NIR) transmittance spectroscopy technology and sorting the fruits based on the qualities. The transmittance spectroscopy measurement systems consisted of a light source of tungsten-halogen lamps, a light illuminating part, the transmittance spectrum collection part, a spectrometer for measurement of the transmittance spectrum, light guide components, and a computer. The test to determine an optimum power of the light source and a pre-running time required for the light source to be stabilized was conducted. The intensity of the transmittance spectrum was in the level to be measured by the spectrometer as the power of the light source was 100 W. The transmittance spectrum was stable four hours after the light source turned on. The transmittance spectra were measured in three wavelengths ranges: 650~850, 650~950, and 650~1100 nm. To assess soluble solids content (SSC) and acid content of tomatoes, partial least squares (PLS) models were developed with the raw transmittance spectra in the three wavelength ranges and the spectra that were preprocessed by i) normalization by mean value, maximum value, and range, ii) multiplicative scatter correction (MSC), iii) standard normal variate (SNV), iv) 1^(st) and 2^(nd) derivatives by Savitzky-Golay and Norris-Gap methods. In general, the results of the PLS models made with the spectra measured in 650-1100 nm were better than those in shorter wavelength ranges. The best model for assessment of SSC was found as the spectra were preprocessed by mean normalization and the coefficient of determination of validation (R_(v2)²) and the standard error of prediction (SEP) were 0.54 and 0.42°Brix, respectively. The R_(v2)² and SEP of the best model for assessment of acid content were 0.30 and 0.09, respectively, and the best model was obtained by the 1st derivatives of Norris-Gap method. The transmittance spectra were collected on three different tomato cultivars at four different harvest dates and categorized into four groups: data 1 (“super sunload” harvested in March, 2007), data 2 (“super sunload” harvested in April, 2007), data 3 (“hoyong” harvested in May, 2007), and data 4 (“super top” harvested in July, 2007). Each data group was divided into a calibration data set and a validation data set. To examine the effect of cultivar and harvest date on assessment of the internal qualities, a calibration model was made with a single data group and the model was validated with the other three data groups (e.g. a calibration model with data 1 and the validation of the model with data 2, 3, and 4). Total four calibration models were made and validated. The validation results of the models were not good enough to measure SSC and acid content accurately. This indicated that different cultivars and harvest dates could be one of the factors affecting the performance of calibration models for assessment of SSC and acid content. The effect of different harvest dates of the same cultivar on assessment of the internal qualities was examined with a mixed data group of data 1 and 2. The best model for predicting SSC was developed with the spectra preprocessed by MSC. The R_(v)² and SEP of the best model were 0.65 and 0.45°Brix, respectively. For assessment of acid content, the best model was obtained with raw data set without preprocessing. The R_(v)² and SEP of the best model were 0.15 and 0.13, respectively. It was believed that the effect of different harvest dates of the same cultivar on assessment of acid content was more significant than the effect on assessment of SSC. A calibration model was developed with a mixed calibration data set of data 2, 3, and 4 and validated with a validation data set of data 1, which was not involved in the calibration model, and validation data sets of data 2, 3, and 4, which were involved in the calibration model. The performance of the model with data 2, 3, and 4 was better that with data 1. This indicated that the effect of different cultivars and harvest dates on assessment of the internal qualities could be minimized by involving the data collected at various cultivars and harvest dates in the calibration models.
