Lignan 함량 측정 결과 sesamin의 함량은 유의적이지 않았고(p>0.05),213,230,247°C 볶음 참기름의 초기 sesamol 함량은 각각 0.18, 0.18, 0.25 mM 이었다. TAG 분석 결과 LLO의 비율은 26.68%로 가장 높았고, 다음으로는 OOL>PLO>LLL>POO>OOO>PLL>SOO 순이었다. 이 결과는 지방산 분석 결과와 유사하였다. 247°C 볶음 참기름의 초기 CDA 값은 높게 나타났지만, 가열 산화가 시간이 지날수록 213°C 볶음 참기름 보다 낮아 산화 안정성이 높았다. L, a, and b of 213, 230, and 247°C for 21min roasted SO was different significantly (p<0.05). AV of each SO was not significantly. As roasting temperature increased, CDA increased significantly (p<0.05). SO roasted at 247°C for 21min had the highest oxidative stability according to CDA and DHO results. DPPH results show that 247°C roasted SO had different pattern compared to 213 and 230°C roasted SO. Distributions of fatty acids and TAGs among 213, 230, and 247°C roasted SO were similar each other. Major fatty acids in SO were 18:2 (46.02%), 18:1 (39.40%), and 16:0 (8.51%), and major TAGs were LLO (26.68%), OOL (21.09%), and PLO (13.25%). Lignan analysis showed that sesamol was generated continuously in 247°C SO during thermal oxidation while 213°C SO did not produce sesamol. Roasted SO at 247°C for 21 min had higher oxidative stability than SO at 213°C for 21 min due to the continuous generation of sesamol from sesamolin. Effects of FFA, glycerol, MAG, DAG, sesamol, and aqueous extract of sesame seed meal (ASM) on the changes of lignans were tested in 213°C SO during 180°C thermal treatment. Lignan contents including sesamol, sesamolin, and sesamin in SO were analyzed by high performance liquid chromatography (HPLC). As addition of MAG and FFA increased up to 5% (w/w) in SO, sesamol increased by 411 and 386%, respectively and sesamolin decreased by 15 and 18%, respectively for 90 min. Addition of ASM increased sesamol contents while sesamolin was not decreased. Sesamolin in SO with additional 5% glycerol, DAG, and sesamol was not changed for 90 min. Generation of sesamol in 247°C roasted SO during thermal treatment may be influence by a combination of MAG, FFA and ASM.
