By examining the quality characteristics including the yield, total phenol compound content, electron donating ability, nitrite scavenging ability, reducing sugar content and browning index, optimal extraction conditions with 20 mL/g solvent ratio, 90°C extraction temperature and 150 min extraction time were determined and verified via actual experiments. The fig extract extracted under the optimal extraction condition was used as a sample for manufacturing the fig drink. The sensory properties of the fig drink according to the fruit sugar content, citric acid content and apple concentration were examined. The optimal content ratios were 6.84% fruit content, 0.35% citric acid content and 4.90% apple concentration content. The sensory score of the overall palatability was 4.47 under the optimal mixing condition, which seems to facilitate the development of sensorily excellent cosmetically functional drink. Physiochemical and sensory characteristics of the fig drink manufactured under the optimal condition were examined during 24 weeks storage to determine the circulation period. The sugar content, pH and titration acidity hardly changed during the storage and no bacteria and coliform group were detected, which indicates that it is also stable in terms of microbiology. The regression analysis of the physiochemical quality measurements during storage along with the sensory inspection results showed that the b(yellowness) value has the highest correlation (R2=-0.9730), and was selected as the quality index for the fig drink. The b value complied with the 0th reaction formula.
