식품산업 현장이나 단체급식소에서 사용되는 다양한 기구나 장비에 오염된 미생물은 교차오염을 일으킬 수 있으므로 이를 예방하는 것이 중요하다. 본 연구는 식품산업 현장이나 단체급식소에서 사용되는 주요 기구표면 재질에 오염되어 있는 E. coli를 제어하기 위해 주로 사용되는 살균소독제인 에탄올, 염소, 4급 암모늄, 과산화수소를 농도와 시간별로 처리하여 살균소독제의 유효성을 알아보고 사멸예측모델을 구하고자 하였다. 에탄올의 경우 최대농도 (70%)와 최대시간 (5분)으로 처리한 결과 스테인리스 스틸, 플라스틱, 나무, 고무, 유리, 사기에서 각각 6.73, 5.49, 4.68, 6.36, 5.40, 6.30 log10 CFU/㎠의 감소값을 나타내었다. 염소계의 경우 최대농도 (200 ppm)와 최대시간 (5분)에서 각 재질당 5.30, 5.18, 3.34, 4.69, 5.05, 5.53 log10 CFU/㎠의 감소값을 나타내었고 4급 암모늄의 감소값은 재질당 각각 5.13, 5.46, 1.62, 4.76, 4.98, 4.68 log10 CFU/㎠로 나타났다. 과산화수소는 최대농도 (91 ppm)와 최대시간 (5분)에서 각 재질별로 1.34, 1.16, 1.49, 0.59, 1.24, 1.17 log10 CFU/㎠의 감소값을 나타내었다. 각각의 소독제와 재질별로 나타낸 사멸예측모델은 과산화수소를 제외하고 모두 유의성(p <0.05)을 지니는 것으로 판단되었다. 또한 Lack of Fit과 표준화 잔차의 확률분포를 통해 모델의 적합성을 나타내었다. 따라서 본 연구에서 제시한 모델은 다양한 재질에 오염되어 있는 E. coli를 제어하기 위해 최소 농도의 살균소독제를 최소 시간으로 사용하는데 활용될 수 있을 것이다.

The reduction value of E. coli on stainless steel, plastic, wood, rubber, glass and ceramic at various concentration of ethanol (0-70%), Chlorine (0-200 ppm), quaternary ammonium compound (0-200 ppm) and hydrogen peroxide (0-91 ppm) during 0-5 min was evaluated.
