우리의 선현들은 자연에 순응하며 생활하였고 절기에 따라 절식을 만들어 즐겼으며 품격 있는 음식문화를 창출하여 오늘날의 식문화에 큰 공헌을 하였다. 그 중 차(茶)와 다식(茶食)은 음(陰).양(陽)의 조화를 이루었다. 신농(神農)씨의 약용으로 시작된 차의 역사만큼이나 다식의 역사도 오래된 것이다. 따라서 차생활이 보편화되고 각광을 받으면서 찻자리에서의 다식 위치는 실과 바늘처럼 더욱 밀접한 관계가 되었다. 완성된 찻자리 공간이란 차회의 목적이나 성격, 주제, 계절, 규모 등에 따라 정해지며 그 날에 사용할 차와 물.불을 선택하고 다식(茶食), 다기(茶器), 다복(茶服), 다화(茶花) 등도 빠짐없이 준비하게 되는데 그 구성요소들이 조화로울 때 비로소 최고의 찻자리라 할 수 있다. 현대에 이르러 우리나라에서는 위의 요소들이 영역별로 왕성하게 연구되고 있으나 아직까지 다식에 대한 전반적인 문제를 다룬 문헌이나 차와 다식과의 관계, 발전, 변화 등을 심도 있게 언급한 부분들이 부족한 실정이다. 그러므로 본 논문에서는 차문화의 성쇠에 따라 변화, 발전 되어온 다식은 당시의 사회상이나 생활상을 반영하여 나름대로의 모습을 갖추고 오늘에 이르렀다. 따라서 다식의 전반적인 이해와 전통다식으로서의 위상을 정립하고자 고려이전부터 근.현대에 이르기까지 다식 관련 문헌에 나타난 다식의 재료와 종류, 문양 등을 살펴보고 찻자리에 어울리는 ...
우리의 선현들은 자연에 순응하며 생활하였고 절기에 따라 절식을 만들어 즐겼으며 품격 있는 음식문화를 창출하여 오늘날의 식문화에 큰 공헌을 하였다. 그 중 차(茶)와 다식(茶食)은 음(陰).양(陽)의 조화를 이루었다. 신농(神農)씨의 약용으로 시작된 차의 역사만큼이나 다식의 역사도 오래된 것이다. 따라서 차생활이 보편화되고 각광을 받으면서 찻자리에서의 다식 위치는 실과 바늘처럼 더욱 밀접한 관계가 되었다. 완성된 찻자리 공간이란 차회의 목적이나 성격, 주제, 계절, 규모 등에 따라 정해지며 그 날에 사용할 차와 물.불을 선택하고 다식(茶食), 다기(茶器), 다복(茶服), 다화(茶花) 등도 빠짐없이 준비하게 되는데 그 구성요소들이 조화로울 때 비로소 최고의 찻자리라 할 수 있다. 현대에 이르러 우리나라에서는 위의 요소들이 영역별로 왕성하게 연구되고 있으나 아직까지 다식에 대한 전반적인 문제를 다룬 문헌이나 차와 다식과의 관계, 발전, 변화 등을 심도 있게 언급한 부분들이 부족한 실정이다. 그러므로 본 논문에서는 차문화의 성쇠에 따라 변화, 발전 되어온 다식은 당시의 사회상이나 생활상을 반영하여 나름대로의 모습을 갖추고 오늘에 이르렀다. 따라서 다식의 전반적인 이해와 전통다식으로서의 위상을 정립하고자 고려이전부터 근.현대에 이르기까지 다식 관련 문헌에 나타난 다식의 재료와 종류, 문양 등을 살펴보고 찻자리에 어울리는 제품개발과 품질향상을 도모하며, 다식교육과 차교육을 통한 뿌리교육, 정신교육, 정서교육, 여가선용 등을 할 수 있고 상품으로 우수한 우리의 다식이 세계적으로의 확대. 보급을 지향하는 관점에서 본 연구를 시도 하였다. 우선 다식의 발달과정을 역사 흐름에 따라 4단계로 나누어서 살펴보았다. 첫째, 고려이전의 다식은 터전을 마련하는 다식형성기(茶食形成期)로 차사(茶事)나 식문화사(食文化史) 등을 통해 과정류 속에서 대부분 의례에 필요한 물품으로 사용됨을 살펴볼 수 있다. 둘째, 고려시대는 다식의 발전기(發展期)로 다식에 관련된 문헌과 역사서, 시문, 역사신문 등에서 제수나 의례물품으로 또는 찻자리의 격을 고조시키는 다식이 등장하였다. 셋째, 조선시대는 다식의 완성기(完成期)로 차와 더불어 생활의례문화 속에 따른 다식의 재료나 제조법 등 많은 변화를 가져오게 되고 곡물 외에 화분, 종실, 견과류, 채근, 동물성 등 주재료에 꿀을 넣어 반죽하여 다식판에 찍어 내는 오늘날의 다식문화를 만드는 기틀을 완성하였다. 넷째, 근.현대는 다식의 재창조기(再創造期)로 상대(上代)의 다식문화에 근본을 두고 현대에 맞게 변형되는 모습을 볼 수 있다. 또한 전통문화와 차문화에 대한 관심고조로 차 관련 모든 분야가 부흥되면서 다식문화도 찻자리에서의 중요한 요소가 되어 세계적인 차음식으로 국제적인 다식으로 본래의제 모습을 찾아가게 되었다. 따라서 1장에서는 다식발달 과정의 연구목적, 방법, 용어정의, 제한점 등을 살펴보고, 2장에서의 다식의 정의, 기원, 관련된 재료, 종류, 문양, 진다식기 등 다식에 관련한 전반적인 문제 등을 다루며, 3장에서는 다식에 관련한 기록물들을 차사와 식품사의 문헌들을 통하여 고려이전부터 현대에 이르기까지 다식을 총괄적으로 살펴보고자 하였다. 문양에 있어서도 우리의 전통다식문양의 종류와 특징들을 고문헌과 옛 다식판 속에 나타난 것을 중심으로 다식판의 재질, 다식의 크기, 포장, 사용처등에 관해 고찰해 보았다. 그 결과 다음과 같다. 다식의 형성 과정은 차문화와 과정류문화, 떡문화의 연계 속에서 상호보완되고 영향을 받으면서 발전하고 변화되어 오늘의 의례다식과 찻자리 다식을 만들어낸 것으로 나타나고 있다. 또한 다식의 개념은 시대적으로 약간의 차이를 보이고 있는데 고려이전은 떡을 포함한 과정류(菓.類) 형태인과정류형 다식으로 살펴 볼 수 있으며, 고려시대에는 유밀과와 다식의 개념이 병합된 유밀다식의 개념으로 나타나고 있다. 조선에 이르러서는 유밀과나 다식과, 다식 등이 세분화되어 나타나 비로소 오늘날의 재료상 다식 개념인 ‘인간이 먹을 수 있는 모든 식물의 뿌리나 열매, 줄기, 잎, 꽃 등과 동물류인 육포, 생치와 어류인 광어.민어.대구.황태.전복.하설 등의 재료를 익히거나 건조하여 수분을 최대한 제거한 뒤 미세하게 분말화시켜 결착감미재를 넣고 반죽하여 다식판에 모양내어 찍어낸 것’으로 나타나고 있다. 재료는 고려이전 문헌에는 뚜렷하게 나타나지 않고 있다. 다만 다식류를 과정류 형태로 포함시켜 쌀가루나 밀가루로 지금의 다식개념과는 다르게 재료를 미리 익혀서 가루 낸 것이 아니라, 날것을 가루내어 형태를 만든 후 익히는 과정을 거친다. 고려시대에는 앞의 재료와 비슷하게 나타나고 있으나 팔관다식에서의 ‘조금씩 맛보니 달콤한 맛이 입안에 감돌아’라는 표현을 볼 때 이전의 생것을 익히는 방법과, 익힌 것을 가루내어 다식으로 만드는 오늘날의 다식개념과 같은 재료가 있을 것으로 사료되지만 그 이상의 재료에 대한 자세한 내용의 기록물은 나타나지 않고 있다. 이어 조선초기부터 임진란 이전까지는 현대의 다식개념은 기술되지 않고 재료 또한 이전과 비슷하게 밀가루.쌀가루를 익히는 방법들이 나타나고 재료구성만 약간 다양해지며 별 특징이 없다. 그러나 1600년 이후를 기점으로 주로 궁궐에서 다식을 많이 사용했음을 볼 수 있었고, 중기 이후 노란색의 꽃가루다식인 분송화다식.흑색의 흑임자다식.백색과 붉은색의 녹말다식.황율다식.신감초다식 등 많은 다식재료가 나타나고 있다. 특히 궁궐에서의 진연(進宴)다식에는 녹말.흑임자.송화.황율.청태.강분 등의 재료가 나타나고 있고, 색의 조화를 이룬 삼색다식(녹말.흑임자.황율말), 각색다식, 오색다식(흰색 계열이나 미색, 붉은색에 녹말, 노란색의 송화, 청.녹색의 청태, 검은색의 흑임자) 등을 한 그릇에 담아 시각적 특성을 살려 고배상에 궤어 올리는데 각색의 다식을 돌려가며 쌓아 일정 형태의 문양이 새겨지도록 하였다. 또한 담을 때의 어상 높이는 1자 8치, 진어 찬안은 1자 5치, 그 외 1자 3치 등 8치, 7치, 6치, 4치 등으로 궁궐내의 서열에 따라 다식의 높이도 영향을 받은것으로 나타나고 있다. 또한 이때부터 다식에 색감을 넣는 여러 부재료와 결착 감미재 등도 다양하게 나타나고 있으며, 1795년의『원행을묘정리의궤(園幸乙卯整理儀軌)』에서부터 주재료가 식물 뿐 아니라 동물성 다식인 대구.전복.광어.하설.생치.황육.육다식.어다식 등이 선을 보이고 있다. 1800년대는 특히 궁궐에서 더 많은 다식을 사용했음을 볼 수 있었고, 의례상에 다식은 차(茶)하고 상관없이 주요 의례물품으로 자리하게 되었다. 1900년대 차문화의 복원 운동과 함께 부흥하면서 다식의 문화도 사찰이나 일부 계층에서 뿐만 아니라 대중이 함께 하는 다식 문화를 만들어 내었고, 오늘의 근.현대에 와서는 하나의 단독 의례물이나 찻자리 문화를 형성하는 중요한 위치를 차지하게 되었다. 또한 재료는 색감을 위한 것뿐만 아니라 분말녹차나 울금(강황)분말 같은 생리활성기능물질을 첨가하여 만든 재료들로 새로운 다식문화를 창출해내고 있다. 다식의 문양도 고려이전은 특별한 형태가 없이 대부분 원형으로 지금의 절편 문양인 둥근 형태만 기술되어 있다. 그리고 고려시대는 다식판이 등장하였다. 조선시대에도 초기『수운잡방(需雲雜方)』에서는 여러 모양의 틀로, 나타나고「영접도감사제청의궤(迎接都監賜祭廳儀軌)」에서는 원형(圓形)으로 그 외 기왓장이나 화솥, 번철, 가마솥을 이용하여 익히는 과정을 거칠 뿐 그 문양은 나타나 있지 않았다. 이 후『성호사설(星湖僿說)』에서 비로소 나무통에 넣어 어(魚).조(鳥).화엽(花葉)의 문양이 나타나고 있다. 그 이후 『아언각비(雅言覺非)』,『임원십육지(林園十六志)』등 많은 문헌에서 다식의 문양이 언급되어 있다. 근.현대에 있어서 다식의 문양은 헤아릴 수 없이 다양하여 종류를 열거하지 않고 다식판의 문양으로 함축하여 나타내고 있다. 따라서 현재 가장 많은 문양은 원형을 바탕으로 한 고기.새.나비.수복강령(壽福康寧)의 문자문양.꽃문양.잎문양.칠보(七寶)문양 등과 같이 동물문, 식물문, 글자문, 기하문들이 변형되어 나타나고 있다. 또한 다식은 제수를 비롯한 의례용이나 사신맞이, 회갑연 등의 물품으로 사용되었으나 1643년의 「영접도감연향색의궤(迎接都監宴享色儀軌)」에서는 좌협상, 다담상, 두목다 담상, 미수행과, 천사별다담상, 별다담상 등과 같이 다담상에 올리는 중요한 찬품으로 나타나고 있다. 또한 다식은 사가(私家)에서의 전물(奠物)로도 사용되었고, 궁궐에서는 1800년대를 전후하여 제수나 의례물로 사용되면서 다담상뿐 만 아니라 외국 사신들에게 선물로 전해 졌던 것을 살펴볼 수 있다. 또한 『태상지(太常誌)』에는 다식 크기가 서술되어 있는데, 지금의 다식보다 2배 정도 큰 지름이 4,5cm인 원형으로 12개의 꽃잎 모양이며, 두께는 약 1,2cm로 나타나고 있다. 다식판의 재료로는『임원십육지(林園十六志)』에서의 회양목이나 대추나무, 박달나무 등으로 단면이 단단하고 결이 치밀한 것으로, 그 무늬 안에는 그 당시의 예술성이나 사회상이 함축되어 나타나고 있다. 다식의 계량단위로는 『조선왕조실록(朝鮮王朝實錄)』에 근(斤), 각(角), 궤(櫃), 통(桶) 등이 나타나있으며, 주로 많이 사용한 단위는 각(角)으로 나타났다. 이와 같이 다식은 우리 전통문화를 담아내는 최고의 상품으로 손색이 없을 것으로 사료된다. 최근 한류열풍과 함께 전통식품의 세계화에 대한 관심을 극대화하여 다양한 전통식품의 연구와 개발이 시도되어야 할 것이다. 즉 다식도 근.현대화에 적절한 구매도와 기호에 따른 맛과 모양의 현대화와 포장의 소량화를 비롯한 다양한 디자인의 개발, 더 나아가 전통식품이나 의례음식의 세트화 및 상품화 등의 개념을 도입 한다면 그 부가 가치가 매우 높을 것으로 사료된다. 그러므로 이를 위해서는 다식류의 품질개선을 위한 다양한 분야에서 더 많은 연구가 되어야 할 것으로 여겨진다. 따라서 앞으로 다식발전에 관련한 여러 방법들이나 문헌들이 체계화되고, 전통다식 재현에 좀 더 적극적으로 다가갈 수 있는 계기마련과 함께 다식을 생활다식으로도 응용, 확대하여 생활화할 뿐만 아니라 찻자리에서 격을 갖추고 생활의례에서도 중요하게 활용할 수 있도록 하는 방법들을 강구되어야 할 것이다.
우리의 선현들은 자연에 순응하며 생활하였고 절기에 따라 절식을 만들어 즐겼으며 품격 있는 음식문화를 창출하여 오늘날의 식문화에 큰 공헌을 하였다. 그 중 차(茶)와 다식(茶食)은 음(陰).양(陽)의 조화를 이루었다. 신농(神農)씨의 약용으로 시작된 차의 역사만큼이나 다식의 역사도 오래된 것이다. 따라서 차생활이 보편화되고 각광을 받으면서 찻자리에서의 다식 위치는 실과 바늘처럼 더욱 밀접한 관계가 되었다. 완성된 찻자리 공간이란 차회의 목적이나 성격, 주제, 계절, 규모 등에 따라 정해지며 그 날에 사용할 차와 물.불을 선택하고 다식(茶食), 다기(茶器), 다복(茶服), 다화(茶花) 등도 빠짐없이 준비하게 되는데 그 구성요소들이 조화로울 때 비로소 최고의 찻자리라 할 수 있다. 현대에 이르러 우리나라에서는 위의 요소들이 영역별로 왕성하게 연구되고 있으나 아직까지 다식에 대한 전반적인 문제를 다룬 문헌이나 차와 다식과의 관계, 발전, 변화 등을 심도 있게 언급한 부분들이 부족한 실정이다. 그러므로 본 논문에서는 차문화의 성쇠에 따라 변화, 발전 되어온 다식은 당시의 사회상이나 생활상을 반영하여 나름대로의 모습을 갖추고 오늘에 이르렀다. 따라서 다식의 전반적인 이해와 전통다식으로서의 위상을 정립하고자 고려이전부터 근.현대에 이르기까지 다식 관련 문헌에 나타난 다식의 재료와 종류, 문양 등을 살펴보고 찻자리에 어울리는 제품개발과 품질향상을 도모하며, 다식교육과 차교육을 통한 뿌리교육, 정신교육, 정서교육, 여가선용 등을 할 수 있고 상품으로 우수한 우리의 다식이 세계적으로의 확대. 보급을 지향하는 관점에서 본 연구를 시도 하였다. 우선 다식의 발달과정을 역사 흐름에 따라 4단계로 나누어서 살펴보았다. 첫째, 고려이전의 다식은 터전을 마련하는 다식형성기(茶食形成期)로 차사(茶事)나 식문화사(食文化史) 등을 통해 과정류 속에서 대부분 의례에 필요한 물품으로 사용됨을 살펴볼 수 있다. 둘째, 고려시대는 다식의 발전기(發展期)로 다식에 관련된 문헌과 역사서, 시문, 역사신문 등에서 제수나 의례물품으로 또는 찻자리의 격을 고조시키는 다식이 등장하였다. 셋째, 조선시대는 다식의 완성기(完成期)로 차와 더불어 생활의례문화 속에 따른 다식의 재료나 제조법 등 많은 변화를 가져오게 되고 곡물 외에 화분, 종실, 견과류, 채근, 동물성 등 주재료에 꿀을 넣어 반죽하여 다식판에 찍어 내는 오늘날의 다식문화를 만드는 기틀을 완성하였다. 넷째, 근.현대는 다식의 재창조기(再創造期)로 상대(上代)의 다식문화에 근본을 두고 현대에 맞게 변형되는 모습을 볼 수 있다. 또한 전통문화와 차문화에 대한 관심고조로 차 관련 모든 분야가 부흥되면서 다식문화도 찻자리에서의 중요한 요소가 되어 세계적인 차음식으로 국제적인 다식으로 본래의제 모습을 찾아가게 되었다. 따라서 1장에서는 다식발달 과정의 연구목적, 방법, 용어정의, 제한점 등을 살펴보고, 2장에서의 다식의 정의, 기원, 관련된 재료, 종류, 문양, 진다식기 등 다식에 관련한 전반적인 문제 등을 다루며, 3장에서는 다식에 관련한 기록물들을 차사와 식품사의 문헌들을 통하여 고려이전부터 현대에 이르기까지 다식을 총괄적으로 살펴보고자 하였다. 문양에 있어서도 우리의 전통다식문양의 종류와 특징들을 고문헌과 옛 다식판 속에 나타난 것을 중심으로 다식판의 재질, 다식의 크기, 포장, 사용처등에 관해 고찰해 보았다. 그 결과 다음과 같다. 다식의 형성 과정은 차문화와 과정류문화, 떡문화의 연계 속에서 상호보완되고 영향을 받으면서 발전하고 변화되어 오늘의 의례다식과 찻자리 다식을 만들어낸 것으로 나타나고 있다. 또한 다식의 개념은 시대적으로 약간의 차이를 보이고 있는데 고려이전은 떡을 포함한 과정류(菓.類) 형태인과정류형 다식으로 살펴 볼 수 있으며, 고려시대에는 유밀과와 다식의 개념이 병합된 유밀다식의 개념으로 나타나고 있다. 조선에 이르러서는 유밀과나 다식과, 다식 등이 세분화되어 나타나 비로소 오늘날의 재료상 다식 개념인 ‘인간이 먹을 수 있는 모든 식물의 뿌리나 열매, 줄기, 잎, 꽃 등과 동물류인 육포, 생치와 어류인 광어.민어.대구.황태.전복.하설 등의 재료를 익히거나 건조하여 수분을 최대한 제거한 뒤 미세하게 분말화시켜 결착감미재를 넣고 반죽하여 다식판에 모양내어 찍어낸 것’으로 나타나고 있다. 재료는 고려이전 문헌에는 뚜렷하게 나타나지 않고 있다. 다만 다식류를 과정류 형태로 포함시켜 쌀가루나 밀가루로 지금의 다식개념과는 다르게 재료를 미리 익혀서 가루 낸 것이 아니라, 날것을 가루내어 형태를 만든 후 익히는 과정을 거친다. 고려시대에는 앞의 재료와 비슷하게 나타나고 있으나 팔관다식에서의 ‘조금씩 맛보니 달콤한 맛이 입안에 감돌아’라는 표현을 볼 때 이전의 생것을 익히는 방법과, 익힌 것을 가루내어 다식으로 만드는 오늘날의 다식개념과 같은 재료가 있을 것으로 사료되지만 그 이상의 재료에 대한 자세한 내용의 기록물은 나타나지 않고 있다. 이어 조선초기부터 임진란 이전까지는 현대의 다식개념은 기술되지 않고 재료 또한 이전과 비슷하게 밀가루.쌀가루를 익히는 방법들이 나타나고 재료구성만 약간 다양해지며 별 특징이 없다. 그러나 1600년 이후를 기점으로 주로 궁궐에서 다식을 많이 사용했음을 볼 수 있었고, 중기 이후 노란색의 꽃가루다식인 분송화다식.흑색의 흑임자다식.백색과 붉은색의 녹말다식.황율다식.신감초다식 등 많은 다식재료가 나타나고 있다. 특히 궁궐에서의 진연(進宴)다식에는 녹말.흑임자.송화.황율.청태.강분 등의 재료가 나타나고 있고, 색의 조화를 이룬 삼색다식(녹말.흑임자.황율말), 각색다식, 오색다식(흰색 계열이나 미색, 붉은색에 녹말, 노란색의 송화, 청.녹색의 청태, 검은색의 흑임자) 등을 한 그릇에 담아 시각적 특성을 살려 고배상에 궤어 올리는데 각색의 다식을 돌려가며 쌓아 일정 형태의 문양이 새겨지도록 하였다. 또한 담을 때의 어상 높이는 1자 8치, 진어 찬안은 1자 5치, 그 외 1자 3치 등 8치, 7치, 6치, 4치 등으로 궁궐내의 서열에 따라 다식의 높이도 영향을 받은것으로 나타나고 있다. 또한 이때부터 다식에 색감을 넣는 여러 부재료와 결착 감미재 등도 다양하게 나타나고 있으며, 1795년의『원행을묘정리의궤(園幸乙卯整理儀軌)』에서부터 주재료가 식물 뿐 아니라 동물성 다식인 대구.전복.광어.하설.생치.황육.육다식.어다식 등이 선을 보이고 있다. 1800년대는 특히 궁궐에서 더 많은 다식을 사용했음을 볼 수 있었고, 의례상에 다식은 차(茶)하고 상관없이 주요 의례물품으로 자리하게 되었다. 1900년대 차문화의 복원 운동과 함께 부흥하면서 다식의 문화도 사찰이나 일부 계층에서 뿐만 아니라 대중이 함께 하는 다식 문화를 만들어 내었고, 오늘의 근.현대에 와서는 하나의 단독 의례물이나 찻자리 문화를 형성하는 중요한 위치를 차지하게 되었다. 또한 재료는 색감을 위한 것뿐만 아니라 분말녹차나 울금(강황)분말 같은 생리활성기능물질을 첨가하여 만든 재료들로 새로운 다식문화를 창출해내고 있다. 다식의 문양도 고려이전은 특별한 형태가 없이 대부분 원형으로 지금의 절편 문양인 둥근 형태만 기술되어 있다. 그리고 고려시대는 다식판이 등장하였다. 조선시대에도 초기『수운잡방(需雲雜方)』에서는 여러 모양의 틀로, 나타나고「영접도감사제청의궤(迎接都監賜祭廳儀軌)」에서는 원형(圓形)으로 그 외 기왓장이나 화솥, 번철, 가마솥을 이용하여 익히는 과정을 거칠 뿐 그 문양은 나타나 있지 않았다. 이 후『성호사설(星湖僿說)』에서 비로소 나무통에 넣어 어(魚).조(鳥).화엽(花葉)의 문양이 나타나고 있다. 그 이후 『아언각비(雅言覺非)』,『임원십육지(林園十六志)』등 많은 문헌에서 다식의 문양이 언급되어 있다. 근.현대에 있어서 다식의 문양은 헤아릴 수 없이 다양하여 종류를 열거하지 않고 다식판의 문양으로 함축하여 나타내고 있다. 따라서 현재 가장 많은 문양은 원형을 바탕으로 한 고기.새.나비.수복강령(壽福康寧)의 문자문양.꽃문양.잎문양.칠보(七寶)문양 등과 같이 동물문, 식물문, 글자문, 기하문들이 변형되어 나타나고 있다. 또한 다식은 제수를 비롯한 의례용이나 사신맞이, 회갑연 등의 물품으로 사용되었으나 1643년의 「영접도감연향색의궤(迎接都監宴享色儀軌)」에서는 좌협상, 다담상, 두목다 담상, 미수행과, 천사별다담상, 별다담상 등과 같이 다담상에 올리는 중요한 찬품으로 나타나고 있다. 또한 다식은 사가(私家)에서의 전물(奠物)로도 사용되었고, 궁궐에서는 1800년대를 전후하여 제수나 의례물로 사용되면서 다담상뿐 만 아니라 외국 사신들에게 선물로 전해 졌던 것을 살펴볼 수 있다. 또한 『태상지(太常誌)』에는 다식 크기가 서술되어 있는데, 지금의 다식보다 2배 정도 큰 지름이 4,5cm인 원형으로 12개의 꽃잎 모양이며, 두께는 약 1,2cm로 나타나고 있다. 다식판의 재료로는『임원십육지(林園十六志)』에서의 회양목이나 대추나무, 박달나무 등으로 단면이 단단하고 결이 치밀한 것으로, 그 무늬 안에는 그 당시의 예술성이나 사회상이 함축되어 나타나고 있다. 다식의 계량단위로는 『조선왕조실록(朝鮮王朝實錄)』에 근(斤), 각(角), 궤(櫃), 통(桶) 등이 나타나있으며, 주로 많이 사용한 단위는 각(角)으로 나타났다. 이와 같이 다식은 우리 전통문화를 담아내는 최고의 상품으로 손색이 없을 것으로 사료된다. 최근 한류열풍과 함께 전통식품의 세계화에 대한 관심을 극대화하여 다양한 전통식품의 연구와 개발이 시도되어야 할 것이다. 즉 다식도 근.현대화에 적절한 구매도와 기호에 따른 맛과 모양의 현대화와 포장의 소량화를 비롯한 다양한 디자인의 개발, 더 나아가 전통식품이나 의례음식의 세트화 및 상품화 등의 개념을 도입 한다면 그 부가 가치가 매우 높을 것으로 사료된다. 그러므로 이를 위해서는 다식류의 품질개선을 위한 다양한 분야에서 더 많은 연구가 되어야 할 것으로 여겨진다. 따라서 앞으로 다식발전에 관련한 여러 방법들이나 문헌들이 체계화되고, 전통다식 재현에 좀 더 적극적으로 다가갈 수 있는 계기마련과 함께 다식을 생활다식으로도 응용, 확대하여 생활화할 뿐만 아니라 찻자리에서 격을 갖추고 생활의례에서도 중요하게 활용할 수 있도록 하는 방법들을 강구되어야 할 것이다.

They created a splendid food culture largely contributing to the food culture of today. Among the foods, tea and 'dasik' accorded like the harmony of 'yin' and 'yang'. The history of dasik was as long as that of tea which started as a drug for God of Tea. As tea life became more common and drew more attention of people, dasik was related with tea more closely like a thread and a needle at tea places. A complete tea place is made according to the purposes, characteristics and topics of a tea meeting, a season and a scale. The tea, water and fire should be chosen well and all of dasik, tea vessels, tea clothes and tea flowers are prepared. When all of the compositions are harmonized together, it becomes one of the best places. Although each component has been studied actively these days, literatures dealing with overall contents of dasik and referring to the correlation between the tea and the dasik are still insufficient. Therefore, this paper reviewed materials, types and shapes of dasik from Goryeo Dynasty to the modern and contemporary time based on the related literatures to understand dasik. Dasik has been changed and developed according to the rise and fall of tea culture, and it has reflected the social and life aspects with a close relation with tea life. Therefore, and discussed dasik to expand and spread the superior dasik around the world by developing the products suitable for the tea places and improving the quality. This paper shows the findings below from the review on development, characteristics and changes of dasik for the periods of before Goryeo Danasty, Goryeo Danasty, Joseon Dynasty and the modern and contemporary time and investigation on the origin, materials and types, changes of recipes, measuring units and shapes of dasik and the materials and size and uses of dasik-pan through dasik-related literatures. The findings are classified into 1. the origin and concept of dasik, showing the process of forming dasik, 2. Before Goryeo Dynasty, 3. Goryeo Dynasty, 4. Joseon Dynasty, 5. Modern and contemporary time, dealing with types and materials of dasik and 6. Shapes and materials of dasik-pan and size and use of dasik. 1. Origin and concept of Dasik Dasik has been developed and changed through the mutual supplementation and impact with tea culture, all kinds of Korean traditional sweets culture and rice cake culture to form a current dasik at tea places. In short, all of the three culture affected the invention of dasik. It was Korean traditional dasik and yu-mil dasik before and for Goryeo Dynasty, respectively and more detailed division of yu-mil-gua, dasik-gua and dasik was shown in Joseon Dynasty. Today, dasik is defined as “a food made by impressing shapes with dasik-pan on a kneading treated with sugary honey and Yut or artifical sweeter after reducing water maximally from all eatable roots, fruits, stalks, leaves and flowers of plants, dried beef, uncooked peasant, flatfish, croaker, codfish, dried pollack, ear shell and shrimp by boiling or drying them and after making their powers". 2. Before Goryeo Dynasty The materials, types and recipes of dasik were affected by culture, economy. There was no specific food which could be said to be dasik before Goryeo Dynasty. However, at that time Korean traditional sweet culture was developed and that it was considered to be the respect of Buddhism idea and drinking tea-custom. Active production of grains and the increased grains were used to make rice cake or oil-and-honey pastry using rice, Korean traditional sweet cooking flour with fruits or animal shapes like Yak-gua(a snack made from wheatflour) and rice or cereal powder, which were materials of dasik. Therefore, it did not show dasik independently and just used Korean traditional sweets dasik, cereals powder dasik and rice-cake dasik indiscriminately, and their materials were rice, oil, honey and cereals powder. 3. Goryeo Dynasty The earliest literature presenting the word, “dasik” was “a religious service foods” of 『Dae-gak-guk-sa's collection of works』 written in Goryeo Dynasty era. In other poems and history books, it referred to “dasik” and “Pal-Guan dasik”, but it did not mention their specific materials. In a paper of Jang Jihyun it was reported that the powder of cereals and the nuts-fruits tree were used for dasik in Goryeo Dynasty. It was assumed that Rice-dasik(米茶食), Noodles-dasik(麵茶食) and Chestnuts-dasik(栗茶食). Over 100 times of ceremonies of the loyal court were recorded in 『Goryeo History』and the dynasty was said to be Drinking Much Tea Dynasty, so Dasik was definitely observed at that time. In other words, foods similar to baked or boiled yu-mil-gua of today and approaching to the modern and contemporary concept of dasik, existed in that time and their materials were fruits, rice, wheat and chestnuts and honey used as a sweetener. They developed significantly compared to those before Goryeo Dynasty. Considering that "dasik" was one of the foods for loyal ceremonies with an independent name, Yu-mil-dasik coexisting dasik of today and yu-mil-gua was considered to prevail although its recipes and materials were not recorded specifically. 4. Joseon Dynasty The materials and types of "dasik" shown in literatures from early Joseon to Japanese Invasion of Korea in 1592 were acorn dasik and pine flower dasik, and An-Dong-dasik which was made of flour had more classified materials - “flour, honey, sesame oil(眞油) and clear strained rice wine". After Japanese Invasion of Korea in 1592 to 1980s the materials of dasik were different according to the periods. In the early 1600s, dasik was not used actively because of an unstable social environment. The types of dasik mainly utilized in the loyal place were Chestnut-dasik, White-dasik and Roasting-dasik with the materials of good wheat-flour(上末)), clean-honey(淸蜜) and sesame-oil(眞油). During the 1600s the types of dasik were Roasting-dasik, White-dasik and Chestnut-dasik and their materials were chestnut, flour, sesame-oil, clear strained rice wine, clean -homey, good wheat-flour and grain syrup. Therefore, there was no big change in the types and the materials of dasik as the complex form of yu-mil-gua and dasik of Goryeo Dynasty to the 1600s. However, according to 『Sung-Ho-Sa-Seol』of the 1700s, modern dasik rather than yu-mil-gua type dasik preceded with the standards of Chestnut-dasik and Rice-dasik. The types of dasik were Songhwa-powder-dasik, Wheat-dasik, White-dasik and Roasting-dasik and the materials were Cereals-dasik, Meat-dasik, Fish-dasik and Multiful Colored-dasik. The accompanying materials were honey, Omija-Juicy, Yeon-Ji, candy or sugar, cinnamon and dried-ginger. From that time, the materials were expanded to oriental medicine, meat, fish and marine products as well as cereals, and a color former was used to make color on dasik. In addition, in the 1800s the materials and types of dasik became more diverse and reached the peak due to many ceremonies performed in the loyal place and general houses. In 1900s, its materials and types were similar with those of the 1800s. Periodically, dasik entered into an stable stage but its frequency of use was lower than the previous period because of the national disturbances such as Japanese imperialism in 1910 and 6.25 war in 1950. 5. Modern and contemporary era After that time, dasik became one of the components of tea life with aspiration for traditional culture associated with the restoration of tea culture in 1970s and the types and materials of dasik also have been changed among advertisement of tea culture and increased attention to health. With a tendency of preferring traditional foods and a purpose of using beneficial components extracted from natural sources as additives, studies on natural materials in medicinal plants, fruits and vegetables have been conducted actively. New components, which are expected to have various bioactivities such as prevention of adult diseases and antioxidant capacity, have been used as major or accompanying materials, color formers and additives of dasik. This tendency is based on the thought that dasik is valuable as a health food which has nutritionally high-level materials, and it is relatively easy to use the materials and to make a food and it can maximize the value of products with various shapes and colors. Therefore, for the materials and types of dasik of the modern and contemporary era, their colors, function and shapes are modernized based on the tradition by harmonizing traditional materials and modern taste and beauty, so it approaches more closely to our life. 6. Patterns and materials of dasik-pan and size and use of dasik Dasik had no specific pattern and most of it was round before and for Goryeo Dynasty ear and only the round shape like rice cake with a flower pattern imprinted of today, was described in the literatures. In that time, it was used as a thing for a ceremony and Goryeo Dynasty gave subjects dasik as a present. For Joseon-dynasty, in its early stage various frames and a round shape were presented and dasik was baked with a tile, fire-pot, griddle and caldron but its pattern was not existed. According to『Sung-Ho-Sa-Seol』fish(魚)·birds(鳥)·flowers and leaves(花葉) patterns were eventually observed with using a wood bucket. Many literatures after it referred to its patterns and the patterns of the modern and contemporary era are innumerable, so they are not enumerated and are said implicitly as the patterns of dasik-pan. Major patterns were transformed from meat, birds, butterfly, Well-being Life(壽福康寧), flower shape, leaf shape, animal shape such as seven jewel(七寶), plant shape, Letter shape and traditional shape based on the round shape. Moreover, although dasik was used for ceremonies, Envoy invitation and the 60th birthday event, 「Dynasty ceremonial records」in 1643 reported that dasik was a major food on tea greeting table. In addition, its was used as a ritual food(奠物) in general houses and as an epigraph food, a ceremonial food and a food on tea greeting table in the loyal place. According to 『Tae-Sang-Gi(太常誌)』, the size of dasik was 4,5cm in diameter, two times larger than that of today and was 1.2cm in width with the round shape and 12 petals. As the materials of dasik-pan 『Im-won 16Gi)』recorded boxwood tree, jujube tree and birch, which section was hard and the texture was fine, and the patterns presented art and social aspects of that time implicitly. For measuring units of dasik, 『The True Record of Joseon-Dynasty』showed that the units were Gun(斤), Gak(角), Gue(櫃) and Tong(桶)(the grade of Number and Weight) and "Gak" was mainly used. Today Korea faces increased frequencies of adult diseases and various diseases and a serious ill-balanceed health following a rapid economic growth and industrialization and a more westernized diet than a traditional one. Attention to traditional foods leads to active researches on natural components in medicinal plants, fruits and vegetables to use the beneficial materials from the natural sources as additives, and new components which are expected to have high bioactivity including antioxidant action have been utilized as accompanying materials, color formers and additives of dasik. This tendency is considered because the materials of dasik are nutritional, its recipe is relatively easy, various shapes and colors of dasik can be developed, it can be available for many aspects of daily life and it is a traditional food with high possibility of industrialization. In addition, if dasik is introduced and practiced in the educational field to develop our traditional culture and tea culture educationally, the tea education can contribute to the education for mental health, culture, emotional stability and leisure. Companies and organizations can develop a world-level dasik by industrializing it with its characteristically traditional image of Korea and an economic gain also can be obtained by exaggerating the beauty of dasik which is excellent in the nutritional and scientific aspects and by forming added value. In short, dasik is turned out to be one of the best products. As a current Korean wave is followed by an increasing attention to globalization of Korean traditional foods and active researches and development on traditional foods, dasik also has a high value of development by modernizing its tastes and shapes according to consumers' demand and preference, reducing the unit of packaging, inventing the packaging designs and introducing the concept of making sets of traditional foods and ceremonial foods and their commercialization, and more studies to improve quality of dasik from various viewpoints are considered to necessary. Therefore, to approach easily and to vary types, sizes, colors, shapes, recipes and packaging of dasik to spread it to daily life as well as a composition of formal tea places, appropriate measures should be made. Moreover, there were many books which referred to types, materials and recipes of dasik but were not dealt with by this paper, so many efforts are needed to supplement them in the future.

Therefore, and discussed dasik to expand and spread the superior dasik around the world by developing the products suitable for the tea places and improving the quality. This paper shows the findings below from the review on development, characteristics and changes of dasik for the periods of before Goryeo Danasty, Goryeo Danasty, Joseon Dynasty and the modern and contemporary time and investigation on the origin, materials and types, changes of recipes, measuring units and shapes of dasik and the materials and size and uses of dasik-pan through dasik-related literatures. The findings are classified into 1. the origin and concept of dasik, showing the process of forming dasik, 2. Before Goryeo Dynasty, 3. Goryeo Dynasty, 4. Joseon Dynasty, 5. Modern and contemporary time, dealing with types and materials of dasik and 6. Shapes and materials of dasik-pan and size and use of dasik. 1. Origin and concept of Dasik Dasik has been developed and changed through the mutual supplementation and impact with tea culture, all kinds of Korean traditional sweets culture and rice cake culture to form a current dasik at tea places. In short, all of the three culture affected the invention of dasik. It was Korean traditional dasik and yu-mil dasik before and for Goryeo Dynasty, respectively and more detailed division of yu-mil-gua, dasik-gua and dasik was shown in Joseon Dynasty. Today, dasik is defined as “a food made by impressing shapes with dasik-pan on a kneading treated with sugary honey and Yut or artifical sweeter after reducing water maximally from all eatable roots, fruits, stalks, leaves and flowers of plants, dried beef, uncooked peasant, flatfish, croaker, codfish, dried pollack, ear shell and shrimp by boiling or drying them and after making their powers". 2. Before Goryeo Dynasty The materials, types and recipes of dasik were affected by culture, economy. There was no specific food which could be said to be dasik before Goryeo Dynasty. However, at that time Korean traditional sweet culture was developed and that it was considered to be the respect of Buddhism idea and drinking tea-custom. Active production of grains and the increased grains were used to make rice cake or oil-and-honey pastry using rice, Korean traditional sweet cooking flour with fruits or animal shapes like Yak-gua(a snack made from wheatflour) and rice or cereal powder, which were materials of dasik. With a tendency of preferring traditional foods and a purpose of using beneficial components extracted from natural sources as additives, studies on natural materials in medicinal plants, fruits and vegetables have been conducted actively. New components, which are expected to have various bioactivities such as prevention of adult diseases and antioxidant capacity, have been used as major or accompanying materials, color formers and additives of dasik. This tendency is based on the thought that dasik is valuable as a health food which has nutritionally high-level materials, and it is relatively easy to use the materials and to make a food and it can maximize the value of products with various shapes and colors. Therefore, for the materials and types of dasik of the modern and contemporary era, their colors, function and shapes are modernized based on the tradition by harmonizing traditional materials and modern taste and beauty, so it approaches more closely to our life. 6. Patterns and materials of dasik-pan and size and use of dasik Dasik had no specific pattern and most of it was round before and for Goryeo Dynasty ear and only the round shape like rice cake with a flower pattern imprinted of today, was described in the literatures. In that time, it was used as a thing for a ceremony and Goryeo Dynasty gave subjects dasik as a present. For Joseon-dynasty, in its early stage various frames and a round shape were presented and dasik was baked with a tile, fire-pot, griddle and caldron but its pattern was not existed. According to『Sung-Ho-Sa-Seol』fish(魚)·birds(鳥)·flowers and leaves(花葉) patterns were eventually observed with using a wood bucket. Many literatures after it referred to its patterns and the patterns of the modern and contemporary era are innumerable, so they are not enumerated and are said implicitly as the patterns of dasik-pan. Major patterns were transformed from meat, birds, butterfly, Well-being Life(壽福康寧), flower shape, leaf shape, animal shape such as seven jewel(七寶), plant shape, Letter shape and traditional shape based on the round shape. Moreover, although dasik was used for ceremonies, Envoy invitation and the 60th birthday event, 「Dynasty ceremonial records」in 1643 reported that dasik was a major food on tea greeting table. In addition, its was used as a ritual food(奠物) in general houses and as an epigraph food, a ceremonial food and a food on tea greeting table in the loyal place. According to 『Tae-Sang-Gi(太常誌)』, the size of dasik was 4,5cm in diameter, two times larger than that of today and was 1.2cm in width with the round shape and 12 petals. As the materials of dasik-pan 『Im-won 16Gi)』recorded boxwood tree, jujube tree and birch, which section was hard and the texture was fine, and the patterns presented art and social aspects of that time implicitly. For measuring units of dasik, 『The True Record of Joseon-Dynasty』showed that the units were Gun(斤), Gak(角), Gue(櫃) and Tong(桶)(the grade of Number and Weight) and "Gak" was mainly used. This tendency is considered because the materials of dasik are nutritional, its recipe is relatively easy, various shapes and colors of dasik can be developed, it can be available for many aspects of daily life and it is a traditional food with high possibility of industrialization. In addition, if dasik is introduced and practiced in the educational field to develop our traditional culture and tea culture educationally, the tea education can contribute to the education for mental health, culture, emotional stability and leisure. Companies and organizations can develop a world-level dasik by industrializing it with its characteristically traditional image of Korea and an economic gain also can be obtained by exaggerating the beauty of dasik which is excellent in the nutritional and scientific aspects and by forming added value. In short, dasik is turned out to be one of the best products. As a current Korean wave is followed by an increasing attention to globalization of Korean traditional foods and active researches and development on traditional foods, dasik also has a high value of development by modernizing its tastes and shapes according to consumers' demand and preference, reducing the unit of packaging, inventing the packaging designs and introducing the concept of making sets of traditional foods and ceremonial foods and their commercialization, and more studies to improve quality of dasik from various viewpoints are considered to necessary. Therefore, to approach easily and to vary types, sizes, colors, shapes, recipes and packaging of dasik to spread it to daily life as well as a composition of formal tea places, appropriate measures should be made. Moreover, there were many books which referred to types, materials and recipes of dasik but were not dealt with by this paper, so many efforts are needed to supplement them in the future.
