EU Commission(EUC)의 내성기준에 의해서, 모든 균주가 ampicillin, penicillin G, tetracycline, chloramphenicol, erythromycin에 대해서 내성을 나타내지 않았으며, streptomycin과 ciprofloxacin에 대해서는 모든 균주가 내성을 나타내었다. 관능 평가에서는 A46가 가장 높은 점수를, 그 뒤로 C11-1, 균주가 높은 평가를 받았다.

The objective of this study were to isolate and identify lactic acid bacteria (LAB) from Mongolian fermented milk products, screen potential probiotic strains, and verify their safety. Also some LAB were evaluated the technical properties as starters for yogurt. For the study, Airag, Tarag, Byaslag, and Aaruul were used, and their average pH was 4.355. The dominant flora of Mongolian fermented milk products was Lactic acid bacteria. Fifty-eight strains were isolated using MRS selective media which were all gram positive and catalase negative. In addition, 9 yeast isolates were detected. Gram negative bacteria were not detected. Fifty-eight LAB strains were identified to the level of genera level based on phenotypic characteristics: Thirty seven strains produced CO2. 18 strains were heterofermentative rods, 22 were heterofermentative cocci, 2 were homo-fermentative rods, 15 strains homofermentative cocci. Lactobacillus plantarum was not detected. Fifty four strains had potential cholesterol lowering effects based on bile salt hydrolase (BSH) activity, 21 strains produced hydrogen peroxide, and 18 strains produced dextran. Twenty-one strains made yoghurt like solid by skim milk, however, only 8 strains out of 21 made yoghurt like solid by raw cow milk. For safety evaluation, we determined antibiotics resistance of 21 LAB strains which showed possibilities as probiotics; All strains tested were susceptible to ampicillin, penicillin G, tetracycline, chloramphenicol, erythromycin but not to streptomycin and ciprofloxacin according to the EU Commission (EUC) breakpoint values. In sensory evaluation, A46 got the highest score, A60, C11-1 strain had high scored by panels. Taken together, 58 LAB strains were isolated and identified from Mongolian fermented milk products. Twenty-one LAB were revealed to have probiotics potential. A46, A60, and C11-1 strains had highest potential as probiotics on the basis of cholesterol-lowering effect, antibiotics susceptibility and sensory evaluation.
