The objective of this study was to evaluate the functional properties of lactic acid bacteria (LAB) from jeotgal, a traditional Korean fermented food, purchased at Gang-gyeong. Ninety-two strains were isolated using MRS agar medium from eighteen different batches of Jeotgal. The isolates were tested for phenotypic characteristics (cell morphologies, gram-staining, catalase activity, carbohydrate fermentation, gas production, hydrolysis of arginine, determination of lactic acid enantiomers produced, and detection of meso-diaminopimelicacid) and fifty-five strains were sorted out according to their phenotypic classifications. The fifty-five strains were incubated at high and low temperatures, low pH and high salt concentrations for the tolerance activity. To observe probiotic activity we tested for bacteriocin, bile salt tolerance, hydrogen oxidase production and bile salt hydrolase (BSH) activity. We found that fifteen strains had bacteriocin activity, forty-seven strains had bile salt tolerance, seventeen of them had hydrogen oxidase and forty-seven of them had BSH activity. Moreover we detected thirty-one strains that were able to produce gamma-aminobutyric acid (GABA). Eight genera were detected by 16S rRNA sequencing. The strains were identified as follows; Lactobacillusbrevis, Pediococcuspentosaceus, Leuconostocmesenteroides, Weissellaparamesenteroides, Weissellahellenica, Kocuriamarina, Micrococcussp., Staphylococcusepidermidis, Staphylococcussaprophyticus.
