Physical properties of the Sujebi, white pan bread, yellow layer cake containing acorn powder were tested by RVA, Farinogram, Alveogram and changing characteristics during storage, which were tested by Rheometer, Water activity, Colorimeter and sensory evaluation etc. The results were like these. Water content was 11.28%, crude protein 8.21%, crude ash 3.22% and crude fat 2.31% in the acorn powder. On the Farinogram data, the consistency, development time, stability, time to break down and Farinogram quality number of all purpose flour were the highest but adding acorn powder decreased those values. Water absorption and mixing tolerance index showed opposite tendency. Adding acorn powder on the all purpose flour showed higher peak viscosity, break down, final viscosity and set back than each control. But initial pasting temperature and holding strength did not show homeostasis. L and G values of the Alveogram were decreased with increment of per cent of acorn powder. The all purpose flour containing 5% acorn powder had the highest P and W value. Cooking properties of the Sujebi containing different quantity of acorn powder showed that weight, volume, water absorption were increased with increment per cent of acorn powder, but turbidity of soup were decreased. On the colour of the Sujebi dough containing acorn powder (0, 5, 10, 15%), control had the highest L value but a and b value were reversed. Cooked Sujebi showed same tendency. Textural properties of the Sujebi dough containing different quantity of acorn powder showed that hardness were sharply increased by the addition of acorn powder and cooked Sujebis were same tendency. The results of the consumer acception test showed that the Sujebi (10% acorn flour) had the best results. The bread flour containing acorn powder (15%) showed the highest peak viscosity, holding strength, break down, final viscosity and set back value. Initial pasting temperature had no consistency with each other and also did not show any significant difference.
