ABSTRACT Quality Characteristics of Bechamel Sauce with Doeanjang(Soybean-paste) Tak In-hwan Dept. of Hotel Management, The Graduate School of Tourism, Sejong University The purpose of this study was to examine the optimal recipe in bechamel sauce with addition of the processed bean paste and in bechamel sauce with addition of traditional bean paste. The preference test was carried out in physicochemical characteristics(water, salinity and sugar content, pH, viscosity, chromaticity) and sensory test of bechamel sauce, which was made by differentiating the added amount of thickening agent that the processed bean paste and the traditional bean paste were put in bechamel sauce. Based on the results of the above experiment, the physicochemical and sensory characteristics were researched in order to elicit the optimal recipe of the bechamel sauce with addition of processed bean paste and the bechamel sauce with addition of traditional bean paste. As for the analysis of general ingredients in the thickening agent with addition of bean paste, the thickening agent with addition of the processed bean paste was 30.1 in crude fat, thereby having been aittle higher than 27.6 in the thickening agent with addition of traditional bean paste. The thickening agent with addition of traditional bean paste was 7.7 in crude protein, thereby having been measured to be a little higher than the thickening agent with addition of the processed bean paste. In the physicochemical ingredient of bechamel sauce with addition of the thickening agent of bean paste, the water content showed the result that the more rise in the added amount of bean paste leads to the gradual reduction in water. The water content in bechamel sauce with addition of traditional bean paste was indicated to be less than the water content in bechamel sauce with addition of the processed bean paste. As for the results of measuring salinity and sugar content, the more rise in the added amount led to the significant(p<0.001) rise in salinity. This experiment was measured the salinity in bechamel sauce with addition of the processed bean paste to be more lower than the salinity in bechamel sauce with addition of the traditional bean paste. Even as for sugar content, the more added amount in thickening agent led to the more rise even in sugar content. Especially, the sugar content in bechamel sauce with addition of the traditional bean paste was measured to be a little higher than the sugar content in bechamel sauce with addition of the processed bean paste. As for the result of measuring pH, the more reduction in the amount of the thickening agent in bean paste led to the more rise in pH.pH in bechamel sauce with addition of the processed bean paste was indicated to be higher than pH in bechamel sauce with addition of the traditional bean paste.As for viscosity, the more rise in the added amount of bean paste led to being shown the significant(p<0.001) low figure between samples in each for viscosity. The viscosity in bechamel sauce with addition of the processed bean paste was indicated to be a little higher than the viscosity in bechamel sauce with addition of the traditional bean paste. In measurement of chromaticity, the lightness(L value) in bechamel sauce with addition of the processed bean paste could be known to get lower significantly(p<0.001) in the more added amount in the thickening agent. In bechamel sauce with addition of the processed bean paste, the red color tone showed the rising tendency due to addition of thickening agent. L value in bechamel sauce with addition of the processed bean paste gradually reduced in the more added amount of thickening agent. L value in bechamel sauce with addition of the traditional bean paste was slightly irregular depending on thickening agent. Seeing generally, the lightness and yellow-ness got lower due to a rise in thickening agent. Redness showed the slightly rising tendency. As to whole preference for bechamel sauce with addition of thickening agent in bean paste, the group with addition of 9% of bechamel sauce with traditional bean paste was 6.7, thereby having indicated the best preference. The group with addition of 0% was 2.2, thereby having indicated the lowest preference. Thus, the whole preference gradually increased and then slightly reduced in the more added amount of bean paste.Through the above findings, the proper addition of bean paste has positive influence upon the whole preference. It is thought to be the most proper addition level available for improvement in sensory and quality characteristics of bechamel sauce given adding 9% of thickening agent in bean paste.
