This study was conducted to provide basic information for the scientific evaluation quality of velvet antlers by investigating the physical properties and chemical composition of velvet antler of elk and sika deer in Korea. 1. Study on the physical properties of velvet antler in elk (Cervus elaphus canadensis) farmed in Korea In order to investigate the physical properties of velvet antler in farmed Korean elk (Cervus elaphus canadensis), antlers (n=378) were collected from elk in 8 provinces. The mean weight of antler was positively correlated with the mean length of main beam and upper section. Mean girth of the top, middle and base of the main beam were indicating a slight narrowing in the middle of the antler. In each of the tines, the girth at the base was markedly thicker compared to the top. Although not significantly different, mean specific gravity of main beam tended to increase from top to base of the antler with decreasing capacity. Additionally, the inner diameter of the base of the antler was significantly reduced compared to that of the top, indicating a greater integumental thickening due to mineralization. Therefore, these results may be useful in providing basic information for the physical properties of antler. 2. Effect of antler development stage on the structural properties and chemical composition of velvet antler in sika deer (Cervus nippon) This study was conducted to provide basic information by investigating the change of structural and chemical properties during different antler growth stage (40 days (DG40), 50 days (DG50) and 60 days (DG60) after casting) in sika deer. The antler production was significantly affected by antler growth period. Specific gravity tended to be the highest in base section of the main beam in all groups. The crude protein and ether extract were the highest in the upper section, but the ash was the highest in the base section (p<0.05). The sulfated-GAGs content of the middle and base sections were the highest in the DG60. The uronic acid and sialic acid increased markedly from the base to the upper section (p<0.05). The collagen content increased markedly on moving down from the upper to the base section in all groups (p<0.05). The structural factors such as length, girth, depth of crown and number of tines were positively and negatively correlated with the chemical composition such as ether extract, ash, sulfated-GAGs, uronic acid, sialic acid and collagen content. This study was provided useful basic information and identifies biomarkers for the association between structural properties and chemical composition during antler growth period, which should facilitate efficient production of high quality antlers for food consumption and as pharmaceutical agents. 3. Effect of antler development stage on the chemical composition of velvet antler in elk (Cervus elaphus canadensis) This study was conducted to provide basic information by investigating the change of chemical composition during different antler growth stages (65 days (DG65), 80 days (DG80) and 95 days (DG95) after casting) in elk. The proportion of linoleic acid, 11,14,17-eicosatrienoic acid, total ω-3 and ω-6 fatty acids and polyunsaturated fatty acids (PUFAs) for all sections in the DG65 group was higher than in the DG95 group (p<0.05). These results suggested that the quality of velvet antler is strongly influenced by antler development stage. Overall it was concluded that velvet antlers production was affected by growth period and it is possible of the shorter the antler development stage, the higher the contents of bioactive components as velvet antler quality for oriental medicine
