The column PL Hi-Plex H, 300 x 7.7 mm was used, and mobile phase was 0.1m Refractive Index Detector(RI, model 410), at a flow rates of 0.6 ml/min. 4 kinds of organic acids were analyzed from the coffee samples from Colombia and Vietnam. From Colombian arabica coffee, citric acid was found about 797.328㎎, which is above 55% of its total organic acids' contents. The next following organic acids were quinic acid, malic acid, and acetic acid, which were about 515.088㎎, 276.948㎎, and 208.152㎎. The Vietnamese robusta coffee was similar with the Colombian arabica coffee in its organic acids' contents, and citric acid was the highest as 53% of all organic acids contents, which was about 867.888㎎. The following organic acids were quinic acid, malic acid, and acetic acid that were found as 620.928㎎, 227.556㎎, and 128.772㎎. The given temperature during storage affected the organic acids that were shown as the differences in contents between 0°C and 25°C.
