In this research the changes in the chemical components of coffee beans under different storage conditions was studied. Two widely known coffee varieties used for the study was Guatemala L. arabica and India C. canephora (Robusta) which were purchased from M.I. Coffee Crop (Seoul, South Korea). Roasted coffee beans under medium light, medium and medium dark roasting conditions were subjected to room temperature and refrigerator storage conditions at 25 oC and 4 oC respectively. The length of storage was 0, 10 and 20 days. After storage, the coffee samples were analyzed through HPLC analysis for total amino acid content, chlorogenic acid content and caffeine. The total amino acid content of the coffee samples was greatly reduced after 10 days of storage however the quantity was augmented after 20 days of storage. Storage under refrigerator condition slightly reduced the loss in total amino acids in both varieties more than storage under room temperature. Room temperature storage however promoted the buildup of the total amino acids after 20 days. The amino acids which were observed to cause a significantly large increment in the total amino acid were aspartic acid, glutamic acid, alanine, valine, isoleucine, leucine, phenylalanine, and proline. Caffeine and chlorogenic acid content were not greatly affected by storage. The disparity was largely due to roasting degrees and to some extent variety differences. Robusta emerged superior to arabica in all of the parameters analysed. Since coffee is widely used, extended research work is required to understand and fully utilize how the beneficial compounds in it can be maintained. Additionally, extended research is required to fully utilize the potentials of maillard reaction which is largely responsible for the chemical changes in coffee after roasting and storage.
