TL 측정 결과, 비조사 시료는 250℃ 이후에서, 조사 시료는 150~250℃ 범위에서 glow curve가 나타났다. TL ratio는 비조사 시료는 0.1 이하, 조사시료는 0.1 이상으로 나타났으며, 조사선량이 증가할수록 TL ratio 값 역시 증가하였다. ESR 측정 결과, 비조사 시료에서는 특이한 radical이 발견되지 않았으며, 조사시료에서는 cellulose 유래의 radical이 나타나 조사여부 확인이 가능하였다. DEFT/APC 측정 결과 고춧가루는 log 1.7, 계피가루는 log 1.9를 기준으로 조사여부의 판별이 가능하였다. 유통기한 산출을 위해 가속실험 조건에서 시료의 품질 변화를 측정한 결과, 고춧가루와 계피가루 모두 전반적인 색의 변화인 ΔE 값의 변화가 유의적으로 나타나 이를 품질지표로 선정하여 유통기한을 예측하였다. 그 결과 고춧가루의 경우 저장온도가 높을수록 유통기한이 감소하였지만, 조사구가 비조사구에 비해 유통기한이 짧은 것으로 확인되었다. 계피가루의 경우 선량 및 온도에 따른 유통기한의 차이가 유의적으로 확인되지 않았다. 하지만 비조사구에서는 미생물의 관리가 이루어지지 않았으므로 미생물을 저감화하면서 유통기한을 유지할 수 있도록 5 kGy 이하의 조사는 필요한 것으로 판단되었다. 이에 따라 5 kGy로 조사된 고춧가루는 25℃에서 27.17주, 35℃에서 8.65주 및 45℃에서 7.18주로, 5 kGy로 조사된 계피가루는 25℃에서 13.90주, 35℃에서 18.35주, 45℃에서 18.31주로 유통기한을 예측할 수 있었다.

This study examined the irradiation status, microbiological quality, and physicochemical characteristics and of locally available red pepper and cinnamon powders (10 each). In addition, red pepper and cinnamon powder were also irradiated using electron-beam and gamma-ray sources at different applied doses (0, 1, 5, 10 kGy) and their identification properties and quality characteristics were investigated. The samples were monitored during accelerated shelf-life study for different key quality parameters to establish electron-beam technology as a viable commercial technology. PSL analysis screened out one cinnamon sample as an intermediate (700~5000 PCs) while all others were negative. Upon TL analysis, two cinnamon samples yielded weak but clear peaks in the temperature range of 150~250oC, showing the possibility of irradiation. In red pepper powders, 4 samples gave complex TL glow curves with maximum peaks in the range of 185~260oC(radiation-specific), which could be the effect of an irradiated component in low concentration as the TL ratios of all samples were<0.1. The ESR analysis showed limited sensitivity for all the commercial samples with the absence of radiation-specific features. The applicability of these techniques was confirmed by analyzing the radiation-induced detection markers in the in-house irradiated samples. The determination of microbial quality and physicochemical properties (moisture content, pH, Hunter's color and particle size) showed greatly variable results. In case of red pepper powders, the microbial analysis resulted in 103~106CFU/g of total aerobic count and same of yeasts & molds, where 2 samples were positive(103CFU/g) for coliforms.
