This study aims to provide the adequate information of instant noodles on human healthy by suggesting analysis data of the potentially hazardous nutrients such as fats and sodium in instant noodles. Herein, 50 products from 4 domestic manufacturers were bought from local grocery and analyzed using standard methods. The hazardous nutrients, crude fat, saturated fatty acid, trans fatty acid and sodium were analyzed, and the potential risk according the intake of instant noodles was assessed by estimating the amount and number of products that could be consumed daily on the basis of recommended daily intake of nutrients. The results showed that crude fat and saturated fatty acid were 14.8 g/100 g and 7.2 g/100 g on average in instant noodles. It was demonstrated that the recommended daily dietary standards for crude fat and saturated fatty acid were exceeded if 3.2 units and 1.9 units of products would consume intake a day. The content of trans fatty acid was shown to be 0.03 g/100 g on average and the dietary standard was exceeded when the average of 13.1 units were consumed in average per day. Also, it was shown that the content of sodium was 1557.3 mg/100 g on average and the recommended daily dietary standard was exceeded when 1.3 units were intake. So, it could conclude that the potential risk of fat including fatty acids and sodium through the intake of instant noodles is generally low and over consumption is harmful for human health. However, we should be cautious to 3 times or more intake of instant noodles everyday because of nutritional unbalance. The contents of crude fat including saturated fatty acid and sodium accounted for 68% and 80% in soup relative to their contents in a whole unit of instant noodles. Therefore, it is considered that the amounts of actual intake of crude fat and sodium would be different depending on individual intake preferences of soup. Also, once blanch noodle before cooking reduce for crude fat 56%, saturated fatty acid 60% and sodium 40%. Therefore, if we control the intake of soup and once blanch noodle before cooking, consumer could reduce the amount of crude fat including saturated fatty acid and sodium intake through instant noodle uptake.
