OC/TSP 비는 고기구이 51%, 생선구이 34%의 수치를 보였으며, OC/EC 비는 고기구이에서 16.7~43.2로 탄소성분 중 대부분이 유기탄소로 배출되었다. 또한 고기구이의 경우 PM10보다는 PM2.5에서의 높은 농도를 보였다. With the growing interest in particulate matters due to recent smog from China, interest in the major emission sources of particulate matters is also increasing. The main sources of particulate matters are vehicle emissions, biomass burning and fuel combustion, and the risk of particulate matters from meat grilling also has been identified in recent prior studies. In this study, broiling that produces the largest amount of particulate matters among meat cooking methods was selected, and an investigation was conducted on under-fired yeontan broiling, which has been only little studied to date despite the increase in its use due to a recent rise in oil prices. Pork belly that accounted for the majority of responses and grilled Spanish mackerel that came second in consumption in our self-survey were selected as the samples of grilling. Experiments were conducted in a simulated combustion apparatus in order to analyze particulate matters, carbon components and polycyclic aromatic hydrocarbons. In order to determine the emission characteristics of yeontan broiling, the characteristics and control status of particulate matters were investigated, and also the characteristics of carbon components that accounted for a large portion of particulate matters were also examined. Polycyclic aromatic hydrocarbons were considered important since they were carcinogenic and toxic, and subsequently, their characteristics and control status were investigated. Furthermore, risk assessments of these chemicals were carried out using toxic equivalency factors. Results showed that particulate matters were not generated from only the yeontan themselves used as fuel, and grilled meat displayed higher emission concentration of particulate matters than grilled fish in all particle diameters. The ratios of PM2.5/PM10 were 0.95 and 0.57 for grilled meat and grilled fish, respectively, and therefore most of the particulate matters produced during under-fired broiling appeared to be PM2.5. Subsequently, it is considered that the control of PM2.5 would be needed in controlling under-fired broiling restaurants. Carbon components were mostly present as organic carbon in all particle diameters and items, and elemental carbon was not detected in grilled fish. The ratios of OC/TSP were shown to be 51% and 34% for grilled meat and grilled fish, respectively, and the ratio of OC/EC was 16.7 to 43.2 in grilled meat, which indicated that most of carbon components emitted as organic carbon. In addition, grilled meat showed higher concentrations of PM2.5 than PM10. The analysis of polycyclic aromatic hydrocarbons showed that the concentration was much higher in grilled meat than in grilled fish, and in both samples, the substance with 3-4 benzene rings showed the highest concentration. The concentration of benzo(a)pyrene that is well known as a carcinogenic and toxic substance was shown to be higher at 2.65 ug/㎥ in grilled meat compared to 0.55 ug/㎥ in grilled fish, and subsequently, its control is considered to be necessary. In addition, TEQs were calculated using TEFs and emission concentrations, and showed the highest value with benzo(a)pyrene in grilled meat and grilled fish.
