Chlorine dioxide (ClO2) is a potent oxidant that has been known as broad antimicrobial effects, including effectiveness over wide pH range and in the presence of organic matters. Chlorine dioxide gas is a relatively new sanitizer in food industry and has more accessibility than its aqueous form, thus it is easy to contact microorganisms on food that have irregular surfaces such as livestock products and food processing equipment with mechanical complexity, such as holes and niches. Depending on the gas generating method of ClO2, there can be byproducts like chlorite and chlorate ions which can decrease disinfectant effect and purity of ClO2. Recently, there is new technology which generates chlorine dioxide without using chlorine gas to remove those defects. This new electrochemical method generates gaseous chlorine dioxide from aqueous sodium chlorite (NaClO2). Different from previous methods, it does not use any Cl2, HOCl, and HCl. Therefore, there is less amount of byproducts including chlorite and chlorate by the new ClO2 gas generator using electrochemical method. Also, the purity of ClO2 can be attained as high as 98%. The aim of this study is to evaluate the effect of ClO2 gas generated by electrochemical method against for foodborne microorganisms, food processing surfaces and meat. For foodborne pathogens, ClO2 gas at different concentrations (1, 5, 10 and 20 ppm) and different exposure times (1, 5, 10, 15 and 20 min) were evaluated including E. coli, S. Typhimurium, P. aeruginosa, S. aureus and L. monocytogenes under room condition at 5 log cycles in the most conditions. E. coli and S. Typhimurium with 2.5% animal fecal materials reduced > 5 log cycle in all treatment conditions. S. Typhimurium with organic materials was more resistant than E. coli with those to ClO2 gas treatment. ClO2 gas treatment also significantly decreased population of E. coli and S. Typhimurium in beef, pork skin and chicken wing, compared with the control (p<0.05). After ClO2 treatment, the populations of E. coli were reduced 0.45-1.91 log cycle and the populations of S. Typhimurium were 0.02-1.96 log cycle in 20, 50 and 100 ppm. In conclusion, ClO2 gas treatment is highly applicable to control of foodborne pathogens as well as food processing equipments and nariety of meat.
