In this research, novel antioxidative polysaccharides were prepared by chemical conjugation with four kinds of polyphenolic antioxidants, catechin, quercetin, rutin and hesperidin. It is expected that this functional group can provide adhesive property to our products. To connect pectin and antioxidant, epichlorohydrin was used as a coupling agent. The derivatives were purified through repeated precipitation, followed by dialysis against water and freeze drying. 1H-NMR, FT-IR and UV-vis characterizations confirmed that the polyphenols were covalently bonded to the pectin backbone. Furthermore, its 2,2-diphenyl-1-picrylhydrazyl scavenging assay confirmed the polyphenols had antioxidant activity. The 3,4-dihydroxypheny group presented in the antioxidants was found to improve the adhesion property of neat pectin in shear direction. During the reaction, significant degradation was occurred.
