This study was performed to identify consumer-based sensory and emotional descriptors for commercial instant coffee products using a CATA method. In chapter 1, a total of 106, 16, and 22 attributes were identified by untrained consumers (n=75), coffee professionals (n=5), and trained panelists (n=8), respectively. A total of 21 consumer-based attributes were finalized for a CATA ballot. The 6 instant coffee products were hedonically evaluated by a group of 96 untrained consumers using a CATA method and their sensory intensities were also quantified by 8 trained panelists. The PLS regression showed that ‘clear’, ‘proper color’, ‘soft aroma’, ‘clean aroma’, ‘fresh’, ‘refresh’, ‘relax’ and ‘feel good’ were found to be positive drivers for consumer liking by a CATA method, while ‘smooth’ was a positive factor by descriptive analysis. Descriptors elicited by the CATA method were highly and spontaneously associated with consumers’ feeling and emotion. This indicates that feeling or emotions of consumers may play more important roles than sensory descriptors in determining the quality of instant coffee products. In chapter 2, commercial 6 coffee products added with milk were evaluated by 63 consumers using an original CATA method and two different types of CATA in conjunction with JAR (Just-About-Right) scales (3 and 5 pts). Seven trained panelists evaluated sensory attributes for the same products. The mean of overall liking scores were stable over the 3 different types of CATA methods. Total CATA counts tended to increase when using CATA methods with JAR scales compared to an original CATA method. Based on the MFA, sensory attributes generated by CATA methods with JAR scales were more similar to descriptive analysis than an original CATA method. The correspondence analysis showed that product configurations and their sensory attributes seemed to be better characterized by the two modified CATA methods. Mean drops by a penalty analysis were more pronounced for the attributes related to consumers’ emotion in comparison with sensory characteristics. As the mean drops for the attributes related to consumers’ emotion were low, overall liking scores of the products were also decreased. In conclusion, consumers’ emotion were identified to be more important factors in dictating quality of commercial coffee products. It would be recommended that emotion terms be directly generated by consumers and used for consumer testings. Using CATA methods along with JAR scale could be more consumers-friendly methods in that there is no requirement for intensity scaling as well as consumers’ familiarity and convenience for the JAR-based scale.
