본 연구는 사무직종사자를 대상으로 아침식사 실태 조사를 통하여 아침결식에 관한 환경적 요인을 파악하고 아침식사 식습관, 식행동과 아침결식이 직장생활에 미치는 영향 및 직무만족도와의 관련성, 아침결식 예방을 위한 아침급식 요구도를 조사·분석하여 사무직 종사자의 정신적·신체적 건강 유지를 통한 일의 생산성 및 효율성을 향상시키기 위한 방안을 제시하고자 하였다. 본 연구의 결과를 요약하면 다음과 같다. 첫째, 조사대상자의 인구통계학적 특징에서는 남성이 55.6%, 여성이 44.4%로 나타났고, 연령대로는 20대가 29.6%로 가장 많았으며, 학력은 대졸이 46.7%로 가장 많은 것으로 조사되었다. 근무경력은 2-5년 미만대가 24.2%로 가장 많았고, 거주지 형태로는 아파트가 51.4%, 거주지에서 직장까지의 출근 소요시간으로는 1시간 이내가 43.1%로 가장 많았다, 월 소득 부문에서는 200만원 미만이 34.3%, 직급은 사원이 49.7%로 가장 많은 비율로 나타났다. 결혼여부는 기혼이 56.9%로 조사되었다. 사내 아침식사가 제공되지 않는 것으로 응답한 비율은 92.5%로 분석되었다. 둘째, 사무직 종사자의 아침식사 섭취행동 관련 사회·심리적 요인으로서 태도, 주관적 규범, 지각된 행동통제를 분석하였다. 각각의 요인들에 대한 측정결과 ‘태도’는 Likert 5점 척도로 측정된 5개 문항의 평균값이 3.59로 아침식사 섭취에 대해 매우 긍정적으로 인식하고 있는 것으로 나타났으며, 특히 아침식사의 중요성에 대한 인식도는 매우 높게 나타났다. ‘주관적 규범(가족)’은 평균값이 3.82로 아침결식에 대한 가족과의 관련성이 큰 것으로 나타났고, 반면‘주관적 규범(타인)’은 평균값이 2.92로 상대적으로 낮아 동료들과 관련된 사회·심리적 요인은 낮은 것으로 나타났다. 또한 ‘지각된 행동 통제’는 평균값이 2.64 로 다른 요인과 비교 시 상대적으로 낮았다. 셋째, 아침결식 식행동에서는 주중 아침식사 섭취 횟수 조사 결과, 주 3회 이상이 54.4%, 주 2회 이하가 45.5%로 나타나 사무직 종사자의 아침결식률이 높은 것으로 조사되었고, 아침식사 준비자로는 본인이 43.5%로 가장 많았다. 아침결식원인으로는 ‘시간이 없어서’ 56.4%, ‘입맛이 없어서’ 35.0%, ‘귀찮아서’ 33.2%, ‘습관적으로’ 27.2%, ‘아침을 챙겨주는 사람이 없어서’ 15.4% 순으로 조사되었다. 아침결식에 대해서는 78.1%가 본인 책임이라 자각하는 것으로 나타났으며, 아침결식시 점심식사에서는 평소보다 많이 먹거나 폭식(56.7%)하는 경향이 있는 것으로 나타났다. 또한 아침결식후 점심 식사 시에는 ‘피로 및 권태감으로 인한 수면 및 휴식욕구’41.8%, ‘업무의욕 저하’ 23.4%로 나타나 업무에 지장을 초래함을 보여주고 있으며, 스트레스에 대한 지각수준도 높음(70.0%)으로 나타났고, 저혈당 유발 가능성에 대한 인식도도 높아(75.8%) 아침결식은 사무직 종사자 심신의 건강과 업무에 부정적인 영향을 끼치는 것으로 나타났다. 넷째, 사내 아침급식에 대한 중요도와 수행도 분석에서는 '아침결식 해결을 위한 회사의 경제적 지원' 항목의 경우, 중요도(3.63)는 높은 반면, 수행도(1.73)는 매우 낮게 평가되어 유의한 차이를 나타냈다(p<0.001). 사내 아침급식 요구도 분석에서는 아침급식을 실시할 경우 85.9%가 이용할 의사가 있는 것으로 조사되었고, 비용부분에서는 92.5%가 회사가 어떠한 형태로든 경제적 지원을 해주기를 기대하는 것으로 나타났다. 제공방식에 있어서는 ‘사내급식시설 설치 제공’ (41.2%)을 가장 선호하였으며, 선호하는 메뉴로는 ‘밥과 국’(62.9%)을 가장 선호하였다. 아침급식 시 기대되는 효과에서는 ‘종사자의 건강증진’(67.5%), ‘개개인의 업무효율성 증대’(55.2%), ‘회사의 생산성 증대 및 경쟁력 강화’(50.5%), ‘사기앙양 및 자긍심 고취’(49.4%), ‘스트레스 감소’(33.9%) 순으로 나타났다. 다섯째, 사무직종사자의 아침 결식군과 비결식군의 일반사항 차이를 분석결과, 남성의 결식군은 41.4%, 여성의 결식군은 51.4%로 나타나 여성의 결식률이 10.0%이상 유의적으로 높은 것으로 나타났다(p<0.05). 연령에 있어서는 30대 사무직종사자의 61.5%가 결식군으로 나타나 연령대별 가장 높은 결식률을 보였고, 20대 결식률이 51.7%, 40대 42.7%, 50대 26.0%로 나타나 연령대별 유의한 차이를 나타냈다(p<0.001). 학력에 있어서는 전문대졸 결식률이 57.4%로 가장 높았고, 대학원 이상은 7.1%의 결식률을 보여 학력별 유의한 차이를 나타냈다(p<0.001). 거주지 형태별로도 유의한 차이를 보였는데(p<0.001), 오피스텔 거주 사무직종사의 75.6%가 아침을 결식하는 것으로 나타났다. 소득별 아침결식률은 월 소득 200만원 미만의 결식률은 59.8%, 500만 원 이상은 9.8%로 나타나 소득별로도 결식률에 유의한 차이를 보였다(p<0.001). 출근 소요시간에 있어서도 시간대별로 유의한 차이(p<0.001)를 나타냈다. 사내직급에 있어서도 사원급은 56.6%의 높은 결식률을 보였고, 임원급은 15.3%의 낮은 결식률을 보여 직급 간에도 유의한 차이를 나타냈다(p<0.001). 근무경력에 있어서도 2-5년 미만대가 60.2%의 높은 결식률을 보였고, 경력이 늘어날수록 결식률이 낮은 유의한 차이를 보였다(p<0.001). 사내 종사자 수에 있어서도 50인 미만의 사내의 아침결실률은 50.0%, 50-100인 미만 54.2%, 300인 이상은 35.3%로 그룹간 유의한 차이를 나타냈다(p<0.05). 여섯째, 아침식사 결식군과 비결식군의 아침식사 섭취 행동 관련 사회·심리적 요인의 차이를 분석한 결과, 태도에 있어 결식군 평균값 3.13, 비결식군 평균값 3.97로 유의한 차이(p<0.001)를 나타내, 비결식군이 결식군에 비해 아침식사에 대한 태도면에서 훨씬 더 긍정적인 태도를 보였다. 주관적 규범에서도 유의한 차이를 나타내고 있는데(p<0.001), 비결식군의 가족이 아침식사에 대한 기대가 결식군 가족 보다 더 큰 것으로 나타났고, 비결식군의 동료 또한 좋은 식행동을 보이고 있음을 나타냈다. 지각된 행동통제에 있어서는 결식군 평균값 3.05, 비결식군 평균값 2.30으로 유의미한 차이가 나타났다(p<0.001). 결식군과 비결식군에 대한 개별 독립변수들의 통계적 유의성을 로지스틱 회귀분석으로 분석한 결과 ‘태도’, ‘주관적 규범(가족)’, ‘지각된 행동 통제’는 결식군과 비결식군 분류에 유의적으로 영향을 미치는 것으로 조사되었다. 일곱째, 아침식사 결식군과 비결식군의 아침결식 식행동의 차이를 분석한 결과, 아침식사 준비자가 본인인 경우 결식률이 58.1%, 배우자인 경우 22.6%, 부모님인 경우 45.8%로 결식률이 나타나 준비자에 따라 결식률에 유의한 차이가 있음을 나타냈다(p<0.001). 그러나 아침결식원인으로서 ‘습관적으로’으로 응답한 응답자는 총 136명 중 결식군에서 89명(65.4%)으로 나타나 비결식군과 유의한 차이를 보였다(p<0.001). 여덟째, 아침식사 결식군과 비결식군의 아침결식과 직장생활과의 관련성 인식의 차이를 분석한 결과, ‘피로 및 권태감으로 인한 수면 및 휴식 욕구’, ‘업무의욕 저하’, ‘스트레스 가중’의 항목에서 결식군보다 비결식군에서 자각증세가 더 많이 나타나 아침결식시 점심식사후의 자각증세에 있어 두 그룹 간에 유의한 차이를 나타냈다(p<0.05). 스트레스 지각수준에 있어서도 비결식군의 스트레스가 결식군에 비해 더 큰 것으로 나타나 유의한 차이를 보였고(p<0.01), 업무 지장 유발 가능성에 있어서도 비결식군이 훨씬 더 많은 업무지장의 영향을 받는 것으로 나타나 유의한 차이를 보였으며(p<0.001), 저혈당과의 관련성에 있어서도 비결식군이 결식군보다 더 높게 인식하였다(p<0.001). 아홉째, 아침급식에 대한 결식군과 비결식군간의 중요도 평가를 비교한 결과, 직장 내에서 아침식사의 중요성에 대한 교육에 있어서는 결식군에 비해 비결식군이 교육을 더 중시하는 것으로 유의한 차이를 나타냈다(p<0.001). 아침급식에 대한 결식군과 비결식군과의 수행도 평가를 비교한 결과, '직장 내 아침식사와 장소 제공’항목에서는 결식군과 비결식군간 수행도에 의미 있는 차이를 나타냈다(p<0.05). 또한 직장 내 아침식사와 장소 제공에 있어서도 결식군의 평균값은 3.38, 비결식군의 평균값은 3.88로 결식군과 비결식군간에 유의한 차이를 나타냈으며(p<0.001), 아침결식 해결을 위한 회사의 경제적 지원에 대해서도 결식군보다 비결식군의 회사의 경제적 지원에 대한 요구가 더 큰 것으로 분석되었다(p<0.01). 사내 아침급식제공 시 이용의사에 대해 결식군에 비해 비결식군이 거의 두 배에 가까운 이용의사를 보여, 유의한 차이를 나타냈다(p<0.001). 선호메뉴에 있어서는‘밥과 국’ 메뉴에서 결식군 38.3%, 비결식군 61.7%로 비결식군이 ‘밥과 국’ 메뉴를 훨씬 더 선호하는 유의한 차이를 나타냈으며(p<0.001), ‘도시락류’에서는 결식군이 비결식군보다 선호도가 높아 유의한 차이를 나타냈다(p<0.05).

This study investigates office workers’ breakfast habits and environmental factors that relate to their breakfast meal skipping. It also examines the impacts of breakfast habits and breakfast skip on work efficiency, job satisfaction, and the need for breakfast support programs at corporate workplaces. In doing so, this study aims to suggest solutions to increase work efficiency and productivity based on maintaining office workers’ physical and mental health. The results summarized as follows: First, the demographic information of the participants indicates 55.6% male and 44.4% female ratio; 29.6% are in their twenties and 46.7% are college graduates. A majority of them (24.2%) has work experience of between 2 and 5 years; 34.3% of their income was less than 2,000,000KW (around 2,000 US dollar) per month; 49.7% hold a position of office staff; and 78.2% of them are married. Second, the social-psychological elements related to office workers’ breakfast habits are analyzed in terms of attitudes, subjective norms, and perceived behavioral control. The average value of “attitudes” is 3.59, and this indicates the participants’ positive perception of breakfast. The average value of “subjective norms (family)” is 3.82 and it presents the strong relationship between the participants’ breakfast skip and their families. In the meantime, the average of “subjective norms (others)” is 2.92, relatively lower than that of family. In other words, the socio-psychological elements are lower with their coworkers. Third, the frequency of having breakfast per week has been investigated. The results showed a high percentage of breakfast skipping among office workers. The reasons include lack of time (56.4%), lack of appetite (35.0%), and no interest (33.2%). In the meantime, workers with longer work experience tend to show lower percentages (p<0.001) and it is statistically significant. Commute times are also significant factors that affect breakfast skip (p<0.001). Sixth, workers who regularly have breakfast displayed more positive attitude toward breakfast than those who skipped breakfast. A significant difference is observed in subjective norms (p<0.001). Seventh, the person who prepares the breakfast meal for him/herself also significantly affects the percentage of breakfast skip (p<0.001). For example, if a worker herself or himself has to prepare breakfast, 58.1% of them skipped breakfast. Data showed that meal skipping occurs 22.6% in those whose spouses prepare the meal and 45.8% when parents prepare the meal. Eighth, the relationship between breakfast meal skipping and perceptions on work life was analyzed. This study investigates office workers’ breakfast habits and environmental factors that relate to their breakfast meal skipping. It also examines the impacts of breakfast habits and breakfast skip on work efficiency, job satisfaction, and the need for breakfast support programs at corporate workplaces. In doing so, this study aims to suggest solutions to increase work efficiency and productivity based on maintaining office workers’ physical and mental health. The results summarized as follows: First, the demographic information of the participants indicates 55.6% male and 44.4% female ratio; 29.6% are in their twenties and 46.7% are college graduates. A majority of them (24.2%) has work experience of between 2 and 5 years; 34.3% of their income was less than 2,000,000KW (around 2,000 US dollar) per month; 49.7% hold a position of office staff; and 78.2% of them are married. Second, the social-psychological elements related to office workers’ breakfast habits are analyzed in terms of attitudes, subjective norms, and perceived behavioral control. The average value of “attitudes” is 3.59, and this indicates the participants’ positive perception of breakfast. The average value of “subjective norms (family)” is 3.82 and it presents the strong relationship between the participants’ breakfast skip and their families. In the meantime, the average of “subjective norms (others)” is 2.92, relatively lower than that of family. In other words, the socio-psychological elements are lower with their coworkers. Third, the frequency of having breakfast per week has been investigated. The results showed a high percentage of breakfast skipping among office workers. The reasons include lack of time (56.4%), lack of appetite (35.0%), and no interest (33.2%).
