First of all, three methods that use cold water, hot channel, and 50% ethanol were used to acquire wheat seed and extract, and as a result of comparing their antioxidative activity, wheat sprout extract had the highest antioxidative activity. Usability as cosmetics material by using 50% ethanol wheat sprout extract, which had the most excellent antioxidative activity in the first experiment result, was confirmed. As a result of investigating the effect of high temperature storage on the antioxidative activity of wheat sprout extract extracted with 50% ethanol, it was confirmed that the antioxidative activity of wheat sprout extract decreased as the period of high temperature storage increased. As a result of conducting cell experiment using wheat sprout extract extracted using 50% ethanol, all cells of RAW 264.7, B16F10, HDF of wheat sprout extract displayed no significant cytotoxicity. In order to observe antiinflammatory effect of RAW 264.7 cell, when wheat sprout extract was treated by concentration, it was possible to confirm that NO formation, which is outstanding even in low concentration, was being restrained compared to LPS treatment group. When expression ratio of COX-2 preprocessed wheat sprout extract, it effectively restrained the manifestation of COX-2 gene, which is the infection spreading factor, within cell compared to control, and as a result of experimenting gene manifestation of inflammatory cytokine of wheat sprout extract, it was confirmed that gene manifestation of iNOS decreased.
