The Evaluation of Dietary Behavior Improvement-Effect by Nutrition·Dietary Behavior Diagnosis and Counseling for Adults원문보기

As infants spend an increasing amount of time in childcare center, teachers' role of dietary models as well as diet education for the infants has become important. However, reports show that childcare center teachers have unhealthy dietary habits such as skipping breakfast and having irregular meal timings. This study aimed to evaluate the effectiveness of dietary life improvement by tailored nutrition counseling through nutrition·dietary life diagnosis of all childcare center staff. Participants were 61 childcare center staff members registered in Iksan city's Center for Children's Foodservice Management. The study conducted three nutrition·dietary life surveys and individualized nutrition counseling for a total of 51 of the 61 staff members; 10 staff excluded participation. The checklist from the nutrition·dietary life diagnosis program developed by the Ministry of Food and Drugs Safety was used to survey the participants' nutritional and dietary life status. Dietary life was classified into 5 categories: High fat·High calorie, skipping meals, Overeating·Binge, Emotional eating, and Salty taste preference based on the 41 questions on dietary habits and behavior. The survey on dietary intake conditions followed the 24-hour recall method. After the survey was analyzed using CAN-Pro 4.0, diet quality was evaluated using Nutrient Adequacy Ratio (NAR), Mean Adequacy Ratio (MAR), Index of Nutritional Quality (INQ), and Diet Quality Index-International (DQI-I). Results showed that 19 participants skipping meals (44.2%), 6 consumed High fat·High calories group (14.0%), 11 were in the Overeating·Binge group (25.6%), 4 in the Salty taste preference group (9.3%), and 3 in the Emotional eating group (7.0%). The dietary behavior of the cooks showed that 5 skipping meals (62.5%) and 3 were in the Overeating·Binge group (37.5%). Teacher's risk dietary behavior score (p < 0.001) and total dietary behavior score (p < 0.01) were significantly decreased after nutrition counseling. Out of the four categories that compose the DQI-I score pertaining to diet quality, the adequacy score increased significantly after nutrition counseling (p < 0.001). The total score of the DQI-I also increased significantly after the counseling (p < 0.01). While the cook's dietary life and diet quality scores before and after the nutritional counseling did not have any statistical significance, the dietary life score showed a decreasing tendency after the education. Results show that the dietary life and diet quality improved after conducting the dietary life diagnosis and nutrition counseling for childcare center staffs. This implies that childcare center staffs need continuous education to increase awareness of the concerns in dietary life for establishing healthy dietary habits.
