This study was intended to develop chutney that has recently been thrust into limelight as fresh sauce by using figs with excellent nutritional functionality and disadvantage of low storability. Through that, we intended to increase usability of figs and determine optimal conditions for production of chutney with excellent preference. For that, we derived optimal ratio of figs based on mechanical test and sensory test after production of chutney by varying the ratio of dried fig and frozen fig in the first test. Then, we added 0%, 1%, 2%, 3%, and 4% mustard to chutney to increase preference in the second test for production of specimens, followed by mechanical test and sensory test. The results of this test can be summarized as below: We performed measurement of moisture in chutney produced by varying the ratio of dried fig and frozen fig. The results showed that the moisture content in the control was 62.34% and that the moisture content decreased when addition of dried fig increased. The results of chromaticity measurement showed that L, a, and b values altogether were the highest in the control. By contrast, pH and sugar content were the highest in FC4 added with the highest amount of dried fig. Viscosity was the highest in FC4 with 1849.00 cp. Conversely, spreadability was the highest in the control, which would be attributable to moisture content. The results of texture measurement showed that hardness, cohesiveness, and chewiness were the highest in FC4. However, adhesiveness exhibited the opposite tendency. The results of sensory test, performed to determine difference in properties, suggested that intensity of brownness, fig fragrance, smell of freshly cut grass, and fig taste were the most conspicuous in FC4 added with the highest amount of dried fig. No significant difference was observed among specimens in terms of gloss, sweetness, softness, moistness, and after-swallow. The result of preference test suggested that outward appearance, taste, texture, and overall preference of chutney were the most excellent in FC2 added with frozen fig and dried fig at a mixing ratio of 7:3. Aforesaid results suggested that the preference was the highest in chutney added with frozen fig and dried fig at a mixing ratio of 7:3. Although addition of 2% mustard was optimal in the production of fig chutney, it was found that addition of 3% mustard was optimal when presenting such chutney as sauce with meat. Thus, cooking usability of fig, which originally has the disadvantage of low storability, was increased. With the development of fresh sauce using the chutney, the market for sauce using the roux could become more diversified. However, succeeding studies would need to research into various sauces using the chutney, given that there is a lack of preceding studies on chutney.
