The hydrolyzed rapeseed cake extract(100, 250 and 500 ppm) was added into mayonnaise-based salad dressing, and the effect of hydrolyzed extract on quality characteristics of salad dressing was investigated by assessment of physical, microbial, emulsion and oxidation stabilities during 8 weeks of storage. The antioxidative capacity of hydrolyzed extract was significantly higher than 80% ethanol extract since the hydrolyzed showed 12.4 times higher total phenolic content, and 3 times higher 1,1-diphenyl-2-picryl-hydrazil (DPPH) free radical scavenging capacity than 80% ethanol extract(p< .05). The sinapic acid content was significantly increased by 90.4 times in hydrolyzed extract than 80 % ethanol extract (p< .05), and confirmed highly conversation of sinapine into sinapic acid by HPLC analyzation. The antimicrobial activity of hydrolyzed extract was remarkably higher than 80% ethanol extract against the selected gram positive bacteria (Staphylococcus aureus, Listeria monocytogenes and Bacillus subtilis), gram negative bacteria (Escherichia coli O157:H7 and Escherichia coli), and yeast (Candida albicans) by conducting Disk Agar Diffusion method and Minimum Inhibitory Concentration method. Otherwise, 80 % ethanol extract showed no antimicrobial activity against all the selected microorganisms. The major fatty acids of salad dressings were linoleic acid (53.73 %), oleic acid (21.01 %), palmitic acid (10.55 %), α-linoleic acid (6.97 %) and stearic acid (4.58 %). The quality characteristics of salad dressing was increased by addition of hydrolyzed extract in a concentration-dependent manner during storage. The physical characteristics of dressing added with hydrolyzed extract was better than control by showing the increased viscosity and decreased emulsion separation. The microbial stability was higher in salad dressing added with hydrolyzed extract than control by showing lower CFU, and the stability was increased by higher concentration from 100 ppm to 500 ppm. The hydrolyzed extract increased oxidative stability in salad dressing by delaying formation of hydroperoxide and production of secondary oxidative products, resulting in lowering acid value (AV), peroxide value (POV) and 2-thiobarbituric acid reactive substances (TBARS) value than control, and the oxidative stability increased in a concentration-dependent manner. This study showed that the hydrolyzed extract from the alkaline hydrolysis of 80% ethanol extract increased the antioxidative and antimicrbial activities, and its addition in mayonnaise-based salad dressing increased physical, emulsion and oxidative stability on during 8 weeks of refrigeration storage.
