Thus, curing pork hams, a non-preferred part of pork the most distributed meat in Korea with soybean paste with the verified antioxidative effect on fatty food, an experimental study applying the Sous-Vide cooking method was conducted. Producing the pork ham cooked by Sous-Vide method under 75℃ & 60℃ for nine hours, and also another pork ham boiled by using the wet cooking method, the general component test, free-amino acid test, physiochemical test(pH, chromaticity, texture) and total number of microorganism, test for the number of colon bacillus, and sensory test were conducted, and then they were comparatively analyzed. In the results of general component analysis, the water content of Sous-Vide cooking was higher than the one of control group. In the results of analyzing free-amino acid, the total content of free-amino acid was higher in Sous-Vide cooking. Among free-amino acids, the Glutamic acid for savory taste was also higher in Sous-Vide than the control group. Regarding pH, there were no significant differences between samples in accordance with cooking method while they were mostly acidulous. In case of texture, the control group showed significantly higher maximum stress, elasticity, chewiness, and fracturability than Sous-Vide cooking. In case of Sous-Vide cooking, the meat was tenderer. Among them, the sample cooked under 60℃ showed the lowest maximum stress, elasticity, chewiness, and fracturability. The brightness and redness were the highest in the Sous-Vide sample cooked under 60℃ while the control group showed the lowest.
