SFP의 Glucose 함량이 NSFP군보다 유의적으로 증가했으며, 진공 포장 후 냉장 저장기간 동안에도 유의적으로 높은 값을 나타냈다. 또한 pH와 수분함량도 SFP군이 유의적으로 높은 값을 나타냈다. 유리아미노산은 저장기간에 따라 두군 모두 유의적으로 증가했지만 (P < 0.01), 군간의 유의적인 차이는 나타나지 않았다. Cys가 H2O2 scavenging activity 및 Fe2+ chelating activity를 제외한 나머지 실험들에서 Met과 Tau에 비해서 유의적으로 높은 효과를 나타냈다 (P < 0.05). 또한 Met 및 Tau는 DPPH 및 ABTS radical scavenging activity에서 항산화 효과를 나타내지 않았다. 이상의 결과를 종합하여 본다면, 법제유황급여돈육은 수용성전구체물질들의 증가로 인한 돈육자체의 감칠맛이 전자혀를 통하여 증가하는 것을 증명했으며. 함황아미노산들의 다양한 항산화 기작을 증명하였다. 이에 따른 법제유황돈육을 이용한 건염육제품 (장기 건염햄/ 단기 건염등심)은 가공단계에서의 단백질분해를 통한 유리아미노산 증가 및 지방산조성 변화로 인한 영양학적 가치 상승, 물성적 품질 상승, 육 자체의 항산화력 증가로 인한 저장성 증가와 관능학적인 측면에서 긍정적인 효과를 나타내었다.

The aim of this study was to investigate the effects of processed sulfur (PS) supplementation on water-soluble precursors, free amino acids (FAA) of meat and relation on meat taste by using an electronic tongue during refrigerated storage and quality of dry-cured meat products (Ham and loin). The pigs were divided into two groups at the fattening phase: non-sulfur-fed pigs (NSFP) and 0.3% PS-fed pigs (SFP) in fattening phase. Glucose of SFP was higher than that of NSFP Glycogen content was decreased but glucose content was increased in both groups during storage. The pH value and moisture content in SFP group were higher than those in NSFP group. Inosine of SFP group was higher than that of NSFP group. Umami and richness taste of SFP group were higher than those of NSFP group. Both tastes were increased during storage. The umami taste of water-soluble precursors was improved in meat from processed sulfur fed pigs during refrigerated storage. PS supplementation and processing condition affected changes in physicochemical, microbial and sensory properties of dry-cured loin. The crude fat content of SFP was lower than that of NSFP in raw meat and dry-cured loin. Lipid and pigment oxidation were suppressed in SFP compared with NSFP during whole process. Lightness of SFP was significantly higher than that of NSFP during storage. SFP showed higher colour stability than did NSFP during storage. Moreover, microbial spoilage of dry-cured loin was greatly prevented in SFP compared with NSFP. Free amino acids related to taste in SFP were significantly higher than those in NSFP. Polyunsaturated fatty acid of dry-cured loin from SFP group was higher than that of NSFP, while saturated fatty acid of NSFP was significantly higher than that of SFP. In terms of dry-cured ham made from PS fed pigs (CON, non-sulfur fed pigs; T1, 0.1% PS fed pigs and T2, 0.3% PS fed pigs), dry-cured ham from T2 pigs had higher moisture and lower fat content in comparison with the control pigs. Dry-cured ham T1 and T2 samples showed excellent lipid oxidation stability during storage and showed positive aroma scores in comparison with CON samples. Total free amino acid content and sulfur-containing-amino-acid content of ham T1 or T2 samples were significantly higher than those of control samples. PUFA content of ham T1 and T2 samples was significantly higher than that in CON samples, whereas SFA content of CON samples was significantly higher. In conclusion, PS supplementation can improve taste characteristics of meat and functional characteristics such as oxidative stability and nutrient quality of meat products.
