피조개는 타우린(taurine), 메티오닌(methionine), 시스테인(cysteine), 페닐알라닌(phenylalanine), 타이로신(tyrosine) 등과 같은 아미노산, 철, 마그네슘, 구리 등과 같은 무기질, 비타민 A, 비타민 B1, 나이아신과 같은 비타민 등이 다량 함유되어 있으면서 콜레스테롤이 거의 함유되어 있지 않아 건강식품 또는 이의 소재이다. 이와 같은 피조개는 최근 양식 기술의 발달로 인하여 생산량이 2012년에 2,432 톤이었지만, 2016년에 3,637 톤에 이르러 150%에 달할 정도로 급상승되고 있으나, 생산금액은 2012년에 25,216 백만원이었지만 2016년에 13,611 백만원으로 아주 급감하고 있다. 이로 인하여 피조개는 주로 회, 초밥요리, 식초요리, 샐러드요리 등과 같이 생식 소재로 한정되어 이용되고 있어, 피조개의 조미가공품, 연제품, 냉동식품 등과 같은 고부가 수산가공품의 소재로 이용을 하기 위한 시도가 절실하다.
이러한 일면에서 본 연구에서는 과잉 생산되어 피조개의 고부가 가치화 방안의 하나로 반응표면분석법(response surface methodology, RSM)을 활용한 소비자 니즈(needs) 부응 피조개 통조림용 소스를 개발하여, 피조개 통조림과 같은 신제품 개발 및 품질 특성은 물론이고, 이의 소비자 선호도에 대하여도 살펴보고자 한다. 아울러 시제 피조개 조미 통조림의 위생 안전성 확보 및 표준화를 목적으로 국내외 기준 규격에 대하여 다양하게 살펴봄과 동시에 원료, 가공공정을 통한 산물, 최종 제품뿐만이 아니라 작업환경 및 용수 등에 대하여 모니터링을 실시하고, 이를 토대로 한 자가품질 가이드라인을 설정하고자 한다.
피조개 통조림용 소스(마늘 액상 소스 및 고추장 페이스트 소스)를 제조할 목적으로 반응표면분석법(RSM)을 활용하여 최적 배합 비율(마늘 액상 소스의 경우 올리브유, 다진마늘 및 폰즈, 고추장 페이스트 소스의 경우 다진 파 및 고추장)을 설정하고자 하였고, 아울러 피조개 통조림용 소스의 최적 멸균조건을 무선 로거 시스템(logger system)으로 살펴보았다. 표면반응분석법으로 살펴본 마늘 액상 소스의 제조를 위한 올리브유, 다진 마늘 및 폰즈의 최적 첨가비율은 각각 3.5% (w/v), 13.5 % (w/v) 및 2.8% (w/v), 고추장 페이스트 소스의 제조를 위한 다진 파 및 고추장 첨가량의 최적 첨가 비율은 각각 23.3% (w/v) 및 고추장 50.3% (w/v)이었다. 피조개 조미 통조림의 전체 내용물에 대한 적정 소스 첨가비율은 피조개 마늘 액상 소스의 경우 40%, 피조개 고추장 페이스트 소스의 경우 50%이었다. 일반세균수, 혐기적 세균수, 열분포도 곡선, 경제성 등으로 미루어 보아 피조개 조미 통조림의 제조를 위한 최적 멸균조건은 F0 value 6 min이었다. 이상의 피조개 조미 통조림을 제조를 위한 최적공정은 다음과 같다.
원료 피조개를 해동(10℃ 이하에서 8시간 이상)한 후 수세하여 선별한 것과 최적의 배합비율로 제조한 마늘 액상 소스 및 고추장 페이스트 소스를 검사 및 세척한 공관에 내용물에 대하여 각각 60% 및 50%가 되게 살쟁임하고, 탈기, 밀봉한 다음 F0 value 6 min의 열처리 효과를 가질 수 있도록 멸균한 후 냉각하여 제조하였다.
피조개 조미 통조림의 효율적 이용을 목적으로 소비자 선호도에 대하여 살펴보았다. 국내에서는 시제 피조개 조미 통조림 모두가 소비자들의 만족도에 대하여 고르게 좋은 평가를 받아 국내 시장에 상품화가 되었을 때 긍정적인 결과가 나타날 것으로 예측되었다. 이들 피조개 조미 통조림의 용도는 캠핑용, 간식용, 술안주용, 식사용 등으로 다양하게 이용될 수 있을 것으로 판단되었다. 미국 소비자들은 피조개 통조림에 대한 인지도 및 구매・시식경험이 매우 낮았지만 시식 만족도가 비교적 높았고, 마늘소스의 풍미와 맛에 대해 높은 만족도를 보였으며, 판매가격(캔당 2,700원)에 대한 만족도가 매우 높았다. 중국 소비자들은 피조개 통조림이 건강・영양에 좋고, 먹기에 편리하다는 인식이 크지만, 쉽게 구매하기 어렵다는 점 등의 단점이 있다. 피조개 마늘 액상 소스 통조림은 풍미가 좋았고, 주원료의 원산지에 대한 만족도 및 제품의 구매의향도 높았으나 판매가격에 민감하였다. 일본 소비자들은 피조개 조미 통조림에 대해 유통기한이 길고 먹기에 편리하다는 통조림 자체의 장점만을 중요하게 인식하고 있고, 피조개의 맛, 식감, 풍미 등에 대한 특징은 높게 평가하지는 않았으며, 시식 만족도나 향후 구매 의향이 미국, 중국에 비해 낮았다.
피조개 조미 통조림의 효율적 이용을 목적으로 식품성분 특성에 대하여 살펴보았다. 피조개 마늘 액상 소스 통조림 및 피조개 고추장 페이스트 소스 통조림의 일반성분 함량은 수분이 각각 80.5% 및 69.2%, 조단백질이 각각 8.5% 및 8.1%, 조지방이 각각 2.1% 및 3.4%, 회분이 각각 2.0% 및 2.8%이었고, 염도는 각각 1.43% 및 1.60%, 에너지는 각각 84.0 kcal 및 134.0 kcal이었다. 따라서, 피조개 조미 통조림 2종은 모두 저염, 저칼로리 식품이었다. 시제 피조개 조미 통조림이 시판 보일드 통조림에 비하여 전자혀에 의한 맛 강도는 피조개 마늘 액상 소스 통조림의 경우 쓴맛이 강하였으나 짠맛이 약하였고, 피조개 고추장 페이스트 소스 통조림의 경우 신맛이 강하였으나 짠맛이 약하였고, 냄새강도는 시제 2종의 제품이 모두 냄새강도 및 휘발성염기질소 함량의 경우 낮아 패류 특유의 비린내가 마스킹 되었으리라 추정되었으며, 경도는 높았다, 관능적으로 차이가 있었다. 시제 피조개 조미 통조림이 시판 보일드 통조림에 비하여 패널에 의한 외형, 맛, 향, 조직감을 포함한 종합기호도에 대한 관능평점은 모두 높았다. 따라서, 시제 피조개 조미 통조림은 주로 보일드 통조림만이 유통되고 있는 현재 시장에서 충분히 시장성이 있으리라 추정되었다. 피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 주요 아미노산은 aspartic acid (모두 12.1%), glutamic acid (각각 8.0% 및 13.5), isoleucine (모두 약 8%), lysine (모두 약 8%7.8% 및 7.7%) 등이었고, 곡류 제한아미노산인 lysine과 threonine이 적절히 함유되어 있었다. 피조개 마늘 액상 소스 통조림 및 피조개 고추장 페이스트 소스 통조림을 100 g을 섭취하였을 때 인, 철 및 아연에 의한 건강 기능이 기대되었고, 칼슘도 무시할 정도의 수준은 아니었으며, 트랜스 지방, 포화지방, 콜레스테롤 함량 면에서는 시제품 2종이 모두 건강에 문제가 없으리라 추정되었다. 한편, 피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 산업화를 위한 관당 기초 원가는 각각 609.7원 및 581.5원이었고, 제조원가는 각각 1,043.1원 및 1,014.9원이었으며, 판매단가는 각각 1,360원 및 1,332원이었다. 이는 시판 피조개 통조림 제품(100 g)의 가격이 국내의 경우 2,880-3,200원 및 해외의 경우 2,060–3,160원(환율 1,100원 기준)으로, 본 과제에서 제조한 2종의 시제 통조림의 가격 예상가와 비교하였을 때 국내외 모두 가격 경쟁력이 충분히 있다고 판단되었다.
피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 HACCP system 적용을 위하여 HACCP 7원칙 12절차에 따라 피조개 제조·가공공장의 생물학적, 화학적 및 물리적 위해요소에 대한 분석과 이들 자료를 활용한 위해 평가 결과는 다음과 같다. 피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 원료 피조개 및 유사 시판품의 중금속(납, 카드뮴, 총수은, 메틸수은, 무기비소), 휘발성염기질소 함량, 방사능, 벤조피렌, 패류독소는 국내외 기준규격과 비교하였을 때 모두 초과하는 것이 없었으나, 카드뮴의 경우 유사 시판품에서 2건이 EU의 기준 규격을 초과하였다. 따라서, 피조개 조미 통조림을 제조할 때 원료의 입고 시 식품의약품안전처 인증기관에 의하여 분석된 시험성적서 또는 자가품질관리에 의하여 이화학적 위해요인을 잘 제어한다면 최종 제품에서 이화학적 위해요소에 대한 문제는 없을 것으로 판단되었다. 피조개 조미 통조림의 제조 시에 사용하는 가공용수는 환경부의 먹는 물 수질기준이 제시되어 있는 59항목에 대하여 검토하였으나 모두 기준 범위 내에 있었다. 피조개 조미 통조림의 물리적 위해요소 중 제조설비의 부품(금속조각), 칼조각, 플라스틱, 흙·돌·사분, 조개껍질, 머리카락, 종이 조각, 비닐조각, 실, 곤충 사체 및 기생충 사체 등의 검출 건수는 없었다. 피조개 조미 통조림의 주원료인 피조개와 주입액인 마늘 액상 소스, 고추장 페이스트 소스의 생물학적 위해요소는 일반세균수의 경우 각각 6.8×103 CFU/g, 5.8×104 CFU/g 및 2.8×102 CFU/g, 6종의 식중독균의 경우 모두 불검출되었고, 가공 공정 중 일반세균수의 경우 해동 후가 각각 2.6×104 CFU/g 이었으나, 공정 중 멸균공정 이후의 경우 생균수를 포함한 모든 미생물학적 위해요인이 제어되었다. 피조개 조미 통조림의 각 작업환경의 공중낙하균, 작업대, 작업자 손 및 앞치마(청결구역)의 생물학적 위해요소를 분석한 결과 일반구역 및 청결구역 별로 일반세균수의 경우 공중낙하균이 각각 4.4×10 CFU/plate/15 min 및 1.6×10 CFU/plate/15 min, 작업자 손이 각각 4.8×10 CFU/100 cm2 및 2.9×10 CFU/100 cm2, 작업대가 각각 4.5×10 CFU/100 cm2 및 4.2×10 CFU/100 cm2, 앞치마가 4.8×10 CFU/100 cm2 (청결구역)이었다. 또한, 일반구역과 청결구역과 같이 구역별 생물학적 위해요소 중 대장균군 및 Staphylococcus aureus는 구역별에 관계없이 공중낙하균, 작업대, 작업자의 손 및 앞치마 등과 같이 위해요인 채취원의 종류에 관계없이 모두 불검출되었다. 화학적 위해요소는 청정한 원료를 적절하게 선택하여 가공공정이나 유통공정 등에서 특별히 오염되지 않는 경우 오염 우려는 거의 없었으며, 물리적 위해요소인 제조·가공공정 및 최종 완제품의 검출 건수는 없었다.
이상의 결과로부터 피조개 조미 통조림의 중요관리점은 멸균공정 및 X-Ray 검출공정으로 결정되었고, 멸균공정에 대한 한계기준은 품질 및 생산성을 고려한 범위 내에서 최대한 안전한 기준으로 관리하고자 멸균온도 115±0.5℃, 멸균시간 48분, 멸균압력 0.7±0.1 kgf/cm2 및 냉각시간 11분으로 각각 설정하였고, X-Ray 이물 검출 공정에 대한 한계기준은 금속성 이물질의 경우 Fe 직경 1.5 mm Ø 이상, 비금속 이물질의 경우 STS 직경 2.0 mm Ø 이상으로 설정하였다. 피조개 조미 통조림 제조·가공공정의 HACCP 설정을 위한 한계기준(Critical Limit) 모니터링(Monitoring) 체계를 효과적으로 관리하기 위하여 HACCP 관리계획표를 작성하여 관리하였고, 모니터링 결과 중요관리점의 한계기준을 이탈할 경우 개선조치 방법은 중요관리점(CCP) 점검일지를 통하여 관리하였으며, 선행요건 및 중요관리점(CCP) 검증점검표를 통하여 검증 체계를 수립하고 문서화 및 기록유지를 위하여 일일체크리스트 및 주기별체크리스트 등의 점검기록 문서를 수립하였다.
피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 안전한 제품의 생산을 위한 자가품질관리용 기준 규격은 원료 피조개의 경우 미생물학적 기준 규격 7종(일반세균수, Salmonella spp., Staphylococcus aureus, Vibrio parahaemolyticus, Clostridium botulinum, Clostridium perfringens), 화학적 기준 9종(총수은, 납, 카드뮴, 벤조피렌, 134Cs+137Cs, 131I, 마비성 패류독소, 설사성 패류독소, 관능적 기준 규격 1종(성상), 물리학적 기준 규격 1종(냉동품에 한하여 보관온도)로 제시하였고, 마늘 베이스 액상소스 원료의 경우 총 36종[올리브유의 경우 산가, 요오드가 2종, 가쓰오부시의 경우 이산화황, 대장균, 보존료 3종, 레드페퍼/생강분말의 경우 곰팡이수, 타르색소, 대장균군 3종, 소스류의 경우 대장균군, Bacillus cereus, 일반세균수, 타르색소, 보존료(파라옥시안식향산) 5종, 백설탕의 경우 성상, 납, 당도, 사카린나트륨, 이산화황 5종, 다진마늘의 경우 대장균, 타르색소 2종, 파슬리가루의 경우 성상, 이물질, 타르색소 3종을, 정제염의 경우 염화나트륨, 수분, 불용분, 총염소, 황산이온, 비소, 납, 카드뮴, 총수은, 페로시안화이온 10종, 전분의 경우 수분, 회분, 산도 3종]을 제시하였고, 고추장 베이스 페이스트 소스 원료의 경우 총 41종[고춧가루의 경우 수분, 회분, 산불용성회분, 곰팡이수, 타르색소, 대장균 6종, 전분의 경우 수분, 회분, 산도 3종, 고추장의 경우 타르색소, 보존료 2종, 다진 파의 경우 납, 카드뮴 2종, 참기름의 경우 산가, 요오드가, 리놀렌산, 에루스산 4종, 대두유의 경우 산가, 요오드가 2종, 백설탕의 경우 성상, 납, 당도, 사카린나트륨, 이산화황 5종, 볶음참깨의 경우 인공감미료, 납, 카드뮴 3종, 간장의 경우 총질소, 타르색소, 대장균군, 보존료 4종, 굴엑스분의 경우 대장균군, 일반세균수, 타르색소, 보존료, Bacillus cereus 5종, 다진마늘의 경우 대장균, 타르색소 2종, 불맛베이스의 경우 수분, 대장균, 타르색소 3종]을 제시하였다. 또한, 통조림 제조용 공관은 중금속 용출 등과 같은 화학적 기준 규격 11종을 제시하였다.
한편, 위생성을 갖춘 피조개 조미 통조림의 제조를 위한 자가품질관리 기준 규격은 CP(탈기 및 밀봉 공정)와 CCP(멸균공정)의 경우 일반세균수(음성), Clostridium botulinum(음성), come up time(20분 이내), 멸균온도(115-118℃), 멸균시간(45분 이상), 멸균압력(0.7-1.0 kgf/cm2) 및 냉각시간(20분 이내) 등과 멸균할 때 마다 모니터링을 실시하는 것으로 제시하였다. X-ray 검출 공정의 경우 Fe(1.5 mmΦ 이상), STS(2.0 mmΦ 이상)과 같은 이물질 검출 조건 등에 대하여 제시하였으며, 작업 시작 전(07:50), 오전 작업 중(10:20), 중식 시작 전(12:20), 중식 이후 시작(13:20), 오후 작업 중(15:20), 작업 종료 후(18:30)에 모니터링을 실시하는 것으로 제시하였다. 또한, 작업 환경은 살쟁임 공정에 한하여 공중낙하균(100 CFU/plate/15min), 작업자(손)의 위생상태(100 CFU/100 cm2), 작업도구(테이블)의 위생상태(100 CFU/100 cm2)와 같은 환경관리 3종에 대하여 기준 규격을 제시하였다.
피조개 마늘 액상 소스 통조림 및 고추장 페이스트 소스 통조림의 최종 제품에 대한 자가품질관리 기준은 미생물학적 기준 규격의 경우 일반세균수(음성), Clostridium botulinum(음성) 등의 2종, 화학적 기준 규격의 경우 총수은(0.4 mg/kg), 납(1.5 mg/kg), 카드뮴(2.0 mg/kg), 주석(150 mg/kg), 벤조피렌(10.0 ㎍/kg), 134Cs+137Cs (100 Bq/kg), 131I (100 Bq/kg), 마비성 패류독소(0.8 mg/kg), 설사성 패류독소(0.16 mg/kg) 등의 9종, 관능적 기준 규격의 경우 성상(관의 상태, 밀봉부 및 가온보존 검사에서 이상 없어야 함) 등의 1종으로 제시하였다.
이상의 일상 품질관리를 위하여 일상 체크리스트를 통해 관리하였고, 이를 토대로 현장에 적용하여 시제품을 생산한 결과, 본 연구에서 제안한 제품 기준규격(안) 및 일상적용 가이드라인(안)이 적용 되는 것이 확인되었다.

Broughton’s ribbed ark is rich in amino acids such as taurine, methionine, cysteine, phenylalanine, and tyrosine; minerals such as iron, magnesium, and copper; and vitamins such as vitamins A and B1 and niacin. In addition, they contain almost no cholesterol, and thus they are considered health food or an ingredient of health food. With recent advances in aquaculture, annual production has increased by 150% from 2,432 M/T in 2012 to 3,637 M/T in 2016, but production in monetary terms decreased sharply from 25,216 million won in 2012 to 13,611 million won in 2016. As a result, broughton’s ribbed ark are limited to the use as an ingredient of raw foods, such as sashimi, sushi, vinegar dishes, and salads. Therefore, there is a dire need for efforts to include broughton’s ribbed ark as ingredients in high-value added processed seafoods, such as seasoned products, dried products, and frozen foods.
From this perspective, the present study was aimed to apply response surface methodology (RSM) to develop sauce for canned broughton’s ribbed ark in seasoning sauce that meet the needs of consumers as a measure for creating high-value added products from broughton’s ribbed ark. In the study, we also examined the development of new products like canned broughton’s ribbed ark in seasoning sauce as well as product quality characteristics and consumer preferences. Furthermore, for standardization and to ensure hygienic safety of canned broughton’s ribbed ark in seasoning sauce, the study was also aimed to establish self-quality control guidelines not only by examining various domestic and foreign standards and guidelines but also by monitoring ingredients, intermediate product, and the final product as well as the operating environment and drinking water.
For preparing garlic-based liquid sauce (CB-GS) and gochujang–based paste sauce (CB-GPS) for canned broughton’s ribbed ark in seasoning sauce, the present study employed RSM to optimize the mixture ratio (olive oil, crushed garlic, and ponzu for CB-GS and crushed green onion and gochujang for CB-GPS) and a logger system to examine the optimal sterilization conditions for canned broughton’s ribbed ark in seasoning sauce. The optimal ratio for preparation of CB-GS, as determined by RSM, was 3.5% olive oil (v/v), 13.5% crushed garlic (w/v) and 2.8% ponzu (v/v), respectively, where as the optimal ratio of crushed green onion (w/v) and gochujang for preparation of CB-GPS was 23.3% and 50.3% (w/v), respectively. The optimal sauce rate (%) of canned broughton’s ribbed ark in seasoning sauce was 40% for CB-GS and 50% for GPS. The results of viable cell count (VCC), an aerobic bacterial count, a heat distribution curve, and economic feasibility, the optimal sterilization condition for preparation of canned broughton’s ribbed ark in seasoning sauce suggest that optimal F0 value was 6 min. The optimal process for preparing canned broughton’s ribbed ark in seasoning sauce involved filling containers with broughton’s ribbed ark selected during washing them after thawing (at ≤10°C for at least 8 hr), together with either 60% CB-GS or 50% CB-GPS. And than the containers were exhausted and seamed, followed by sterilization (via the heat treatment effect corresponding to the F0 value of 6 min) and rapid cooling.
The study also analyzed consumer preferences for effective use of the canned broughton’s ribbed ark in seasoning sauce. In Korea, because samples of canned broughton’s ribbed ark in seasoning sauce received good evaluations regarding consumer satisfaction, positive results were expected when this product was introduced into the domestic market. It is believed that these canned broughton’s ribbed ark in seasoning sauce may have a variety of used as food for camping, snacks, accompaniment to a drinks, and meals. American consumers had very low awareness of canned broughton’s ribbed ark in seasoning sauce and little experience with purchasing or taste testing them, but their taste test satisfaction levels were relatively high. They showed a high level of satisfaction with the taste and flavor of CB-GS, while also showing very high satisfaction for its retail price (2,700 won per can). Chinese consumers had high awareness of canned broughton’s ribbed ark in seasoning sauce, having health and nutritional benefits and being easy to eat, but these consumers indicated that not being easily purchasable is a disadvantage. They also indicated that canned broughton’s ribbed ark in CB-GS had good flavor and showed high satisfaction with the origin of the main ingredient and a strong intention to purchase. Nonetheless, they were sensitive to the retail price. Japanese consumers recognized the advantages of all canned foods, including long shelf-life and ease of eating. They did not give high marks on the taste, texture, and flavor of broughton’s ribbed ark, while also showing lower satisfaction after a taste test or a weaker intent to purchase than did American or Chinese consumers.
The present study examined the characteristics of food components for effective use of canned broughton’s ribbed ark in seasoning sauce. Canned broughton’s ribbed ark in CB-GS or CB-GPS contained 80.5% and 69.2% moisture, respectively, 8.5% and 8.1% crude protein, respectively, 2.1% and 3.4% crude fat, respectively, 2.0% and 2.8% ash, respectively, and 1.43% and 1.60% salt, respectively, while their calorie was 84.0 and 134.0 kcal/100 g, respectively. Therefore, both types of canned broughton’s ribbed ark in seasoning sauce are low salt and calorie foods. With respect to taste intensity of canned broughton’s ribbed ark in seasoning sauce versus a commercially available boiled canned product, as determined by an electronic tongue, canned broughton’s ribbed ark in CB-GS had a stronger bitter taste and a weaker salty taste, whereas canned broughton’s ribbed ark in CB-GPS had a stronger sour taste and a weaker salty taste. Because both types of sample products had lower odor intensity and volatile basic nitrogen (VBN) content, the fishy odor characteristic of shellfish was suspected to have been masked. The sample products also showed higher hardness. Accordingly, these products showed differences in sensory characteristics. The canned broughton’s ribbed ark in seasoning sauce had higher sensory evaluation scores than a commercially available boiled canned product when a panel evaluated them for comprehensive characteristics, including appearance, taste, aroma, and texture. Therefore, the sample canned broughton’s ribbed ark in seasoning sauce were expected to have sufficient marketability in the current market with mostly boiled canned products. The major amino acids of canned broughton’s ribbed ark in CB-GS or CB-GPS contained amino acids were aspartic acid (both 12.1%), glutamic acid (8.0% and 13.5%, respectively), isoleucine (both ca 8%), and lysine (ca 7.8% and 7.7%, respectively), Nonetheless, they also contained adequate levels of essential amino acids lysine and threonine. When 100 g of canned broughton’s ribbed ark in CB-GS or CB-GPS were consumed, health benefits from phosphorus, iron, and zinc were expected, whereas benefits from calcium were not negligible as well. Moreover, it was assumed that trans-fat, saturated fat, and cholesterol contents in both sample products would not pose any health risks. Meanwhile, the base cost per container for commercialization of the canned broughton’s ribbed ark in CB-GS or CB-GPS was 609.7 and 581.5 won, respectively, while the manufacturing cost was 1,043.1 and 1,014.9 won, respectively, and the selling price was 1,360 and 1,332 won, respectively. The prices of commercially available canned broughton’s ribbed ark in seasoning sauce products (100 g) have a price range of 2,880–3,200 won in Korea and 2,060–3,160 won abroad (exchange rate: 1,100 won = $1). Therefore, compared to these prices, the two types of canned products were expected to have sufficient price competitiveness in domestic and in foreign markets.
The following are the results of analysis of biological, chemical, and physical hazards associated with processing of broughton’s ribbed ark for manufacture of canned broughton’s ribbed ark in CB-GS or CB-GPS according to the 7 principles and 12 procedures of the Hazard Analysis Critical Control Point (HACCP) system. When the canned broughton’s ribbed ark in CB-GS or CB-GPS were compared with similar commercially available products with the same broughton’s ribbed ark as their ingredient, levels of heavy metals (lead, cadmium, total mercury, methyl mercury, inorganic arsenic), of VBN, radiation, benzo(a)pyrene, and of shellfish toxins did not exceed domestic and foreign standards. Nevertheless, similar products showed a cadmium level that exceeded EU standards in 2 cases. Therefore, during manufacture of canned broughton’s ribbed ark in seasoning sauce, careful control over any physicochemical hazards via self-quality control of ingredients being received (or test reports analyzed by the certifying agency within the Ministry of Food and Drug Safety) should eliminate any problems with physicochemical hazards in the final product. Drinking water used in the manufacture of canned broughton’s ribbed ark in seasoning sauce was tested for 59 parameters of drinking water as stipulated by the Ministry of Environment, and the results were all within the acceptable ranges. With respect to physical hazards of the canned broughton’s ribbed ark in seasoning sauce, there were no cases of manufacture equipment parts (metal debris), pieces of knife, plastic, dirt, rock, quartz, clam shell, human hair, pieces of paper or vinyl, thread, and dead insects or parasites being detected. With respect to biological hazards of broughton’s ribbed ark (the main ingredient in canned broughton’s ribbed ark in seasoning sauce) and CB-GS and CB-GPS (the liquid added), their biological hazard factor at VCC was 6.8 × 103 CFU/g, 5.8 × 104 CFU/g, and 2.8 × 102 CFU/g, respectively, while all 6 types of food borne pathogens were undetectable. Although viable cell counts during food processing was 2.6 × 104 CFU/g each after thawing, all the microbial hazards, including viable cell counts, were eliminated after sterilization. Analysis of biological hazards involving airborne pathogens, operating stations, operator’s hands, and aprons (clean area) showed that the airborne pathogen count in the general area and clean area was 4.4 × 10 and 1.6 × 10 CFU/plate/15 min, respectively, while VCC on the operator’s hands was 4.8 × 10 and 2.9 × 10 CFU/100 cm2 and VCC at operating stations was 4.5 × 10 and 4.2 × 10 CFU/100 cm2 in the general area and clean area, respectively. Meanwhile, VCC of an apron in the clean area was 4.8 × 10 CFU/100 cm2. Moreover, among biological hazards by areas, such as general and clean areas, coliforms and Staphylococcus aureus were undetectable regardless of the source of hazard, such as airborne pathogens, operating stations, operator’s hands, and aprons. With respect to chemical hazards, there are virtually no concerns about contamination unless clean ingredients were contaminated somehow during the processing or distribution procedures, and there were no cases of physical hazard being detected in the final product or during the manufacturing and processing.
Based on the results described above, the critical control points (CCPs) of the canned broughton’s ribbed ark in seasoning sauce were found to be sterilization and X-Ray detection processes. The critical limit of the sterilization process was set to the sterilization temperature of 115±0.5 °C, sterilization time of 48 min, sterilization pressure of 0.7±0.1 kgf/cm2, and cooling time of 11 min to ensure the maximum safety level within the range that took into account product quality and productivity. The critical limit of the X-Ray detection process was set to Fe diameter of ≥1.5 mm Ø for metallic objects and STS diameter of ≥2.0 mm Ø for nonmetallic alien substance. In the present study, we devised and implemented an HACCP management plan for effective management of a critical-limit–monitoring system for HACCP settings of manufacturing of canned broughton’s ribbed ark in seasoning sauce and its processing. The measures for improvement when the monitored results exceeded the critical limit of CCPs were managed through a CCP inspection log. A verification system was established based on prerequisites and a CCP verification testing chart, while inspection records, such as a daily checklist and periodic checklist were established for documentation and record-keeping.
With respect to self-quality control standards for production of safe canned Broughton’s ribbed ark in CB-GS or CB-GPS, 7 microbial standards (VCC, Salmonella spp., S. aureus, Vibrio parahaemolyticus, Clostridium botulinum, and Clostridium perfringens), 9 chemical standards (total mercury, lead, cadmium, benzo(a)pyran, 134Cs + 137Cs, 131I, paralytic shellfish toxin, and diarrhetic shellfish toxin), 1 sensory standard (appearance), and 1 physical standard (storage temperature limited to frozen food) were applied to raw broughton’s ribbed ark. A total of 36 standards were applied to the ingredients of the CB-GS, including 2 for olive oil (acid value and iodine); 3 for katsuobushi (sulfur oxide, coliforms, and preservatives); 3 for red pepper/ginger powder (fungal count, tar color additive, and coliforms); 5 for sauce (coliforms, Bacillus cereus, VCC, tar color additive, and preservative [paraoxybenzoic acid]); 5 for white sugar (appearance, sweetness, sodium saccharine, lead, and sulfur oxide); 2 for crushed garlic (coliforms and tar color additive); 3 for parsley powder (appearance, foreign substances, and tar color additive); 10 for refined salt (sodium chloride, moisture, insoluble residue, total chlorine, sulfate ion, arsenic, lead, cadmium, total mercury, and ferrocyanide ion); and 3 for starch (moisture, ash, and acidity). A total of 41 standards were applied to the ingredients of the CB-GPS, including 6 for red pepper powder (moisture, ash, acid-insoluble ash, fungal count, tar color additive, and coliforms); 3 for starch (moisture, ash, and acidity); 2 for gochujang (tar color additive and preservative); 2 for crushed green onion (lead and cadmium); 4 for sesame oil (acid value, iodine value, linolenic acid, and erucic acid); 2 for soybean oil (acid value and iodine value); 5 for white sugar (appearance, lead, sweetness, sodium saccharine, and sulfur oxide); 3 for roasting sesame seeds (artificial sweeteners, lead, and cadmium); 4 for soy sauce (total nitrogen, tar color additive, coliforms, and preservative); 5 for oyster extract (coliforms, VCC, tar color additive, preservative, and Bacillus cereus); 2 for crushed garlic (coliforms and tar color additive); and 3 for fiery-taste base (moisture, coliforms, and tar color additive). Moreover, a total of 11 chemical standards, such as heavy metal release, were applied to the container used.
Meanwhile, regarding self-quality control standards for manufacturing hygienic canned broughton’s ribbed ark in seasoning sauce, CP (degassing and sealing processes) and CCP (sterilization process) included VCC (negative), C. botulinum (negative), come up time (within 20 min), sterilization temperature (115–118 °C), sterilization time (≥45 min), sterilization pressure (0.7–1.0 kgf/cm2), and cooling time (within 20 min), in addition to monitoring each time sterilization was performed. For X-ray detection, conditions were set for detecting foreign substances, such as Fe (≥1.5 mm Ø) and STS (≥2.0 mm Ø), and the monitoring requirements were set as before operation (07:50), during morning operation (10:20), before lunch (12:20), start of operation after lunch (13:20), during afternoon operation (15:20), and after completion of operation (18:30). Moreover, for the operating environment, 3 standards for environmental control were applied only to the filling process, which included airborne pathogens (100 CFU/plate/15 min), hygiene of operator’s hands (100 CFU/100 cm2), and hygiene of the table for handling (100 CFU/100 cm2).
Self-quality control standards for the final products (canned broughton’s ribbed ark in CB-GS or CB-GPS) included 2 microbial standards [VCC (negative) and C. botulinum (negative)]; 9 chemical standards [total mercury (0.4 mg/kg), lead (1.5 mg/kg), cadmium (2.0 mg/kg), tin (150 mg/kg), benzo(a)pyran (10.0 ㎍/kg), 134Cs + 137Cs (100 Bq/kg), 131I (100 Bq/kg), paralytic shellfish toxin (0.8 mg/kg), and diarrhetic shellfish toxin (0.16 mg/kg)]; and 1 sensory standard [appearance (no anomalies in the condition of the container, sealed area, and heat preservation test)].
For daily quality control based on standards described above, a daily checklist was followed. When sample products were manufactured by applying this process on-site, it was confirmed that the product standards (suggested) and daily applicable guidelines (suggested) could be applied.
