When packaged in flexible pouches, oxygen may be permeated through the heat-seal layer oxidizing the product, even though the product is packed with nitrogen flushing. Thus, the oxygen permeability of the packaging is an important variable to protect the product quality against oxidation. Oxygen scavenging or antioxidant packaging may also be applied for protection against oxidation. This study examined how the oxygen permeation control or antioxidant packaging conditions affect the quality change of the formula product which could lead to development of antioxidant packaging system. O2 barrier of the package is thus an important variable to protect the product from oxidative deterioration. O2 barrier property was investigated for aluminum-laminated small pillow packs of 3.5 17.5 cm by using empty pouches flushed with nitrogen. Storage temperature and combination of primary and secondary packages were evaluated as variables affecting the barrier. The gas flushed packages were exposed to normal atmospheric condition of 21% oxygen and measured in their oxygen concentration by using a gas analyzer to determine apparent oxygen transmission rate (OTR). The additional secondary package layer with oxygen scavenger was tested in modulating package O2 transmission and suppressing the oxidation of the product. OTR of the primary package was 1.04 10-7 mol atm-1 d-1 at 30 °C and its temperature dependence could be explained by activation energy of 36.1 kJ mol-1 in Arrhenius relationship. The secondary nylon/PE package included with O2 scavenger reduced marginally the exposure to O2 and thus oxidation of the product observed in peroxide value. Antioxidant Al-laminated films were fabricated with incorporation of ascorbic acid or tocopherol into the food-contact polyethylene layer, examined in the gas barrier properties of prepared model pouches and used for packaging 100 g of powdered infant formula under modified atmosphere of N2 or CO2 gas. The addition of ascorbic acid or tocopherol in the film reduced apparent O2 transmission rate of sealed pouch probably due to O2 scavenging activity, but increased water vapor transmission rate through the sealing. Tocopherol-incorporated film allowed the highest ingress of oxygen into the infant formula package resulting in the highest increase of peroxide value, an indicator of product lipid oxidation, particularly under CO2-flushed condition, during the storage at 30 C. Adverse effect of tocopherol-added film pouch is thought to have been caused by weakened sealing during the extended storage. Packaging the powdered infant formula in ascorbic acid-added film pouch under CO2 flushing could suppress lipid oxidation marginally with another beneficial effect of keeping high bifidobacteria count in the extended storage.
