Soybean (Glycine max L.) is one of major crops that people can easily access among legumes. Soybean have been used as an important source of protein and lipid, and other nutraceuticals. People have used soybean in a variety of forms including soymilk, paste, soybean flour as well as raw materials for bakery. Among various soy products, only 0.008% were being used in the form of flour in 2015. Soybean flour is in the form of powder by finely pulverizing dehulled soybean with full-fat or defatted. Consumers can be easily accessible soybean flour, but there are some problems including rancidity. The quality changes or nutritional loss can occur due to oxidation and browning during the distribution process, resulting in poor storage stability. In this study, the soybean flour was made of soybean cultivar “Saedanbaek”. The soybean flour was manufactured from two forms of powdered raw and roasted soybean flour. After packaged in polyethylene and polypropylene film bags, the raw and roasted soybean flour were stored at three different storage temperatures (4, 20, and 45℃) for 48 weeks. The acid value, conjugated diene value, peroxide value, p-anisidine value, thiobarbituric acid (TBA) value, and lipoxygenase activity were measured at the point of starting storing, and after 1, 2, 4, 8, 12, 24, 36, and 48 weeks. Comparing the oxidation stability depending on the storage conditions, raw soybean flour stored at high temperature rapidly increased in early acid value, then decreased. After increases in acid value, conjugated diene value gradually started to increase during 48 weeks and p-anisidine value was also increased from 12 to 36 weeks. In contrast, peroxide value was not significantly changed. In case of conjugated diene value, raw soybean flour stored at refrigeration and room temperature tended to be less than stored at high temperature. On the other hand, in case of roasted soybean flour stored at refrigeration and room temperature, acid value increased initially and conjugated diene value increased from 24 weeks gradually. Also unlike raw soybean flour, peroxide value tended to increase from 24 weeks. p-Anisidine value also increased from 12 to 36 weeks, but was much lower than when stored at high temperature. However, initial acid value of roasted soybean flour stored at high temperature condition increased rapidly as in other storage conditions. After then, the conjugated diene, peroxide, and p-anisidine value tend to increase greatly in order. The conjugated diene value and peroxide value started to increase rapidly. The conjugated diene value was maintained at a constant level after the increase, but peroxide value decreased rapidly after the increase. As the peroxide value began to decrease, the p-anisidine value began to increase. Especially, p-anisidine value increased much more when compared to raw and roasted soybean in other storage conditions. This is consistent with the oxidation mechanism of lipid. Lipoxygenase activity of raw soybean flour was further decreased when stored at high temperature than refrigeration or room temperature condition. Lipoxygenase activity of roasted soybean flour in all storage conditions was lower than raw soybean flour. This is due to the heat treatment of the grinding and roasting process in the flour production process. Soybean flour is a food product that can be widely used for various purposes, but to the best of our knowledge, there have been few studies on manufacturing conditions and packaging materials of soybean flour had been conducted. Therefore, the purpose of this research was to investigate how the quality of raw and roasted soybean flour changes during storage and the storage stability when the packaging materials and storage temperatures are different. Furthermore, this study could provide useful information for industrial use of soybean flour and be used as a basis for the development of prevention and delayed technology of rancidity.
